Ingredients

1 tablespoon olive oil
1 teaspoon cider vinegar
1 teaspoon dry mustard
1 egg, well beaten
3/4 cup flour
1 teaspoon sea salt
Freshly ground black pepper, to taste
1/4 cup milk
2 cups cooked and diced string beans
1/2 cup vegetable oil

Steps:

In a medium-size bowl, mix the 1 tablespoon of olive oil, vinegar and mustard. In another bowl combine the egg, flour, salt and pepper. Add the vinaigrette. While beating, add the milk, a little at a time. Add the string beans. Heat the oil in a medium-size skillet, over a medium heat. Place the tortitas de ejotes, in patties 2 inches in diameter, in the skillet. Cook them until golden brown on both sides. Serve at once.

1 cucharadita de aceite
1/2 libra de champiñones (hongos) frescos en rebanadas
1 cebolla, en rebanadas finas
1/2 libra de ejotes (habichuelas verdes) frescos, con sus puntas recortadas, cortados en pedazos de 3 pulgs.
1 cucharadita de chiles chipotles en adobo de lata bien picaditos
6 tortillas de maíz (6 pulgs.), calientitas
1-1/4 taza de queso estilo mexicano desmenuzado fino de cuatro variedades KRAFT Mexican Style Finely Shredded Four Cheese

Steps:

Calienta el aceite en una sartén grande a fuego medio-alto. Agrega los champiñones y la cebolla, cocínalos revolviéndolos con frecuencia 10 min. o hasta que la cebolla se caramelice.
Incorpora los ejotes y los chiles; pon la tapa. Cocínalos 5 min.
Cubre las tortillas de forma pareja con 1 taza de queso, la mezcla de champiñones y con el resto del queso.
