COFFEE FUDGE
Delicious, easy 3-ingredient coffee fudge recipe with white chocolate.

Steps:
- In a small dish, stir the tablespoon of instant coffee into the hot water and mix to dissolve. Set aside.
- Stir together the white chocolate with sweetened condensed milk in a large microwave-safe mixing bowl. Add a pinch of salt, if desired.
- Heat at 70% power for 90 seconds. Then remove and stir. Heat for an additional 45 seconds at 70% power then let the bowl sit in the microwave for about 3 minutes. Remove the bowl and stir until all of the chocolate melts.
- Mix in the dissolved coffee.
- Pour the fudge into the prepared baking pan, spreading evenly.
- Refrigerate about 3 hours until firm. Cut into 25 squares.

THE ORIGINAL FANTASY FUDGE
This recipe used to be found on the back of a well known brand of marshmallow cream. Many were surprised when it was changed. This is the original! You may find that most packages of chocolate chips are 10 ounces now; 12 ounces of chocolate chips is roughly 2 cups.

- Grease a 9x13-inch pan.
- Mix sugar, margarine, and evaporated milk in a large, heavy saucepan over medium heat, stirring to dissolve sugar. Bring mixture to a full boil for 5 minutes, stirring constantly.
- Remove from heat and stir in chocolate chips until melted and thoroughly combined. Beat in marshmallow creme, walnuts, and vanilla extract. Transfer fudge to the prepared pan and let cool before cutting into squares.

This coffee fudge recipe is one that my son, Jackson, and I worked on together. After several efforts, we decided this version was a winner. - Line an 8-in. square pan with foil and butter the foil; set aside. Place pecans in a microwave-safe pie plate. Microwave, uncovered, on high for 3 minutes, stirring after each minute; set aside. , In a 2-qt. microwave-safe bowl, combine the chocolate chips, milk, coffee, cinnamon and salt. Microwave, uncovered, on high for 1 minute. Stir until smooth. Stir in vanilla and pecans. Immediately spread into the prepared pan. , Cover and refrigerate until firm, about 2 hours. Remove from pan; cut into 1-in. squares. Cover and store at room temperature (70°-80°).

MOCHA FUDGE
This is an easy traditional fudge that is best made using a candy thermometer. It is a creamy coffee flavored fudge with a hint of chocolate and pecans swirled in. If you like fudge without nuts, simply leave them out.

- In a medium saucepan, stir together the instant coffee, white sugar and salt. Stir in the milk and corn syrup, and add the butter. Heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Remove from heat, and stir in vanilla. Let cool to room temperature, or about 110 degrees F (45 degrees C).
- When the mixture is cool, beat with a wooden spoon until it loses its gloss. Add nuts and chocolate chips and stir slightly to create a marbled effect. Pour into a buttered 8 inch square baking dish. Arrange pecan halves on the top if desired. Cool completely before cutting into pieces.

This was made with International Coffee Creamer but have also used Nestles brand..there are so many different kinds and combinations to use you can add your favorite add ins ..such as nuts, coconut, peanut butter chips, butterscotch chips, mint...

- 1. In an 8 inch square dish or pan insert a piece of foil that hangs over ends of pan for easy lifting out of pan, and butter or spray foil well. --- Combine the butter, sugar and coffee creamer in a medium heavy bottomed saucepan. Cook over medium heat, stirring occasionally to 248^ on a candy thermometer.
- 2. Remove from heat; stir in the chocolate chips, marshmallow fluff, salt and vanilla. Mix well and pour into prepared pan (8x8-inch). Let cool completely before cutting. I let mine set overnight..only because it was late when I made it!
- 3. Note: Remember if you change up the flavor of the creamer you need to add flavor to compliment it..such as mocha creamer, add a bit of instant coffee powder(1/2 to 1 teaspoon) etc...
