A breakfast of cottage cheese with ketchup and pepper might seem scandalous to some, but to President Nixon it was standard morning fare. The cottage cheese in these flapjacks adds nice texture and an old-fashioned flavor reminiscent of blintzes. If you want to top them with something red, I suggest strawberry syrup.

Steps:

  • Combine all ingredients in the following order - cheese, eggs, vanilla extract, sugar, baking powder and flour. Mix in each time you add an ingredient.
  • Preheat a skillet with canola oil on a medium heat. Fry the cottage cheese pancakes on each side until golden brown.

1 cup plain cottage cheese
2 tablespoons vegetable oil
3 large free range eggs
1 cup all-purpose flour
1 teaspoon baking soda
2 to 3 tablespoons unsalted butter

Steps:

  • Gather the ingredients.
  • In a large mixing bowl, whisk together the cottage cheese, oil, and eggs to create a batter. The batter will be lumpy from the cottage cheese, but that's the texture that's needed.
  • In a separate bowl, add the baking soda to the flour.
  • Sift the flour mixture over the cheese and egg batter and whisk thoroughly until there are no flour lumps. The batter is ready when it is light and frothy with bubbles on the surface. Set aside.
  • Heat a large non-stick skillet over medium heat. Add some butter to sufficiently grease the pan and drop 1/4 cup of the batter into the pan.
  • Cook on one side for 2 to 3 minutes until bubbles are forming on the surface.
  • Flip over and cook for a further 3 minutes. If the skillet is large enough, you can make two or three at the same time. Remove from the pan and wrap in a tea cloth to keep warm while you repeat the process with the remaining butter and pancake batter.
  • Serve your pancakes warm with your favorite sides.

1 egg
1/4 cup cottage cheese
2 tablespoons flour
1 teaspoon oil
1 pinch salt

Steps:

  • Separate egg into 2 small bowls. Beat egg white until it forms soft peaks. Set aside.
  • Add remaining ingredints to egg yolk. Beat with an electric mixer until smooth.
  • Stir about 1/2 of the beaten egg white into yolk mixture to soften batter. Fold in remaing egg white until blended.
  • Heat a large oiled skillet over medium heat, about 375*F.
  • Drop batter by spoonfuls into hot skillet and spread with back of spoon to form 3 inch circles. When underside is golden brown and edges begin to dry, turn and brown other side.

1/3 cup multigrain oatmeal
2 egg yolks
3 tablespoons honey
2 tablespoons milk
1/2 teaspoon vanilla extract
1/4 teaspoon ground cardamom
6 egg whites
Vegetable oil
Accompaniment: Peach and Berry Salad

Steps:

  • Mix cottage cheese, flour, oatmeal, egg yolks, honey, milk, vanilla and cardamom in large bowl. Beat whites in another large bowl until stiff but not dry. Fold whites into cottage cheese mixture in 2 additions.
  • Preheat oven to 200°F. Heat large nonstick skillet over medium heat. Brush with oil. Spoon batter onto skillet by 1/3 cupfuls, forming 4-inch-diameter pancakes. Cook pancakes until bottoms are brown and bubbles form on top, about 3 minutes. Turn; cook until bottoms are brown and pancakes are cooked through, about 4 minutes.
  • Transfer to plate and place in oven to keep warm. Repeat with remaining batter. Serve immediately; pass Peach and Berry Salad to spoon over pancakes.

5 teaspoons vegetable oil

Steps:

  • In a large bowl, stir together flour, sugar, baking powder, and baking soda. Stir in cottage cheese, milk, egg whites, and vanilla.
  • In a large nonstick skillet, heat 2 teaspoons oil over medium. Working in batches, drop cottage cheese mixture by 1/4 cupfuls into pan (2 or 3 at a time).
  • Cook until bottoms are set and tops have small bubbles, about 1 minute. Turn pancakes and cook until just firm in the center, 1 to 3 minutes more. Repeat, using remaining 3 teaspoons oil for the other batches.

2 cups 2-percent cottage cheese
1/4 cup granulated sugar
2/3 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon coarse salt
1/4 teaspoon ground cinnamon
Vegetable-oil cooking spray
1 tablespoon confectioners' sugar
2 lemons (1 zested; 1 cut into wedges)

Steps:

  • Beat egg whites on medium-high speed until foamy. Add cream of tartar; beat until stiff, glossy peaks form.
  • Heat a griddle or large skillet over medium-high heat. Stir together yolks, cottage cheese, granulated sugar, flour, baking powder, salt, and cinnamon in a medium bowl. Whisk in one-third of the whites. In two batches, gently fold in remaining whites with a rubber spatula.
  • Spray griddle with cooking spray; heat until a drop of batter sizzles upon contact. 1 handful nut

Steps:

  • Put all of the pancake ingredients in a blender and blend until smooth.
  • Place the frying pan over medium-high heat and add 1 tsp of coconut oil or butter. Then, pour the desired amount of pancake batter on the frying pan.
  • Let pancakes cook thoroughly before flipping; (pancakes should brown on both sides).
  • For the syrup:
  • Melt butter
  • Add nuts of choice (pecans, walnuts, cashews, sliced almonds) to a skillet with 1 tsp of butter and toast for 2 minutes, caramelizing nuts. Add syrup and simmer until cohesive.
  • Serve on top of pancakes.
