- Lightly grease eight 8-oz. custard cups; set aside. In a skillet, saute green onions in butter until tender; set aside., Spread corn on an ungreased baking sheet. Bake, uncovered, at 350° for 20 minutes. In a blender or food processor, combine corn and cream; cover and process for 1-2 seconds. Add the eggs, crab, Parmesan cheese, flour, salt, sugar, pepper, nutmeg and reserved onions. Cover and process 10-20 seconds longer. Pour into prepared custard cups. , Place cups in a large baking pan. Add 1 in. of boiling water to pan. Bake, uncovered, at 350° for 45-50 minutes or until a knife inserted in the center comes out clean.

- Preheat oven to 350 degrees F (175 degrees C). Lightly butter eight 3/4 cup custard cups or souffle dishes.
- In a heavy skillet over medium heat, melt butter. Add shallots and poblano pepper; saute until pepper is tender, about 3 minutes.
- In a blender or food processor, puree corn. Add half-and-half, eggs, flour, salt, sugar, nutmeg and white pepper. Pulse until mixture is smooth; transfer to large bowl. Stir in crabmeat and poblano chile mixture. Divide custard among prepared cups. Sprinkle 1/2 teaspoon cheese over each.
- Place cups in large roasting pan. Pour enough hot water into pan to come halfway up sides. Bake at 350 degrees F (175 degrees C) for 50 minutes or until custards are set in center and knife inserted into center comes out clean.

THE BEST BREAD PUDDING
Toasting the challah adds flavor, but more importantly, it helps the cubes to soak up and hold onto more of the deliciously rich custard (a high ratio of cream to milk makes it that way). And if that wasn't enough, we use not 1 but 2 vanilla beans to amp up the custard - plain old extract just doesn't do it justice. For a pleasing textural contrast, we top the pudding with turbinado sugar before baking to get a sweet crunch with every bite.

- Preheat the oven to 300 degrees F. Grease a 9-by-13-inch baking dish with 1 tablespoon butter.
- Toast the bread cubes on a baking sheet until they start to dry and harden, about 20 minutes. Set aside. Raise the oven temperature to 325 degrees F.
- Whisk together the cream, milk, sugar, vanilla bean seeds, salt, cinnamon, eggs and yolks in a large bowl. Add the bread to the bowl and stir until completely coated. Cover and let soak for 30 minutes, pushing the bread down occasionally so that it is completely covered.
- Pour the bread mixture into the prepared baking dish. Microwave the remaining 2 tablespoons butter in a small microwave-safe dish until melted, about 1 minute. Drizzle the butter over top of the custard and then sprinkle with the turbinado sugar. Bake until the custard is set and the top is golden brown, 1 hour 15 minutes to 1 hour and 30 minutes. Let cool slightly before serving. Serve warm or at room temperature.

A lovely recipe from my past life in New England. Great for brunch, lunch or dinner. May be prepared and refrigerated ahead of time.

Steps:
- Preheat oven to 375°.
- Coat a 2 quart baking dish with the melted butter.
- Line the bottom and sides with bread slices then the cheese slices.
- Fold crabmeat, milk, mayonnaise, green pepper, dill, and mushrooms into the beaten eggs.
- Season to taste with salt and fresh ground pepper.
- Pour over bread and cheese slices.
- Place in a baking pan and fill the pan with boiling water halfway up the side of the baking dish.
- Bake 1 1/2 hours or until a knife inserted into the pudding comes out clean.
- Serve immediately.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch casserole dish.
- In the greased casserole dish, combine kernel corn, cream style corn, sour cream, corn muffin mix and salt and pepper to taste.

HOT CRABMEAT PUFFS
These savory cream puffs are filled with a cream cheese, crab and almond mixture and baked for an elegant hot appetizer.

- Preheat oven to 400°F. Place water and butter in medium saucepan. Bring to boil. Add flour; mix well. Reduce heat to low. Cook until mixture forms a ball, stirring constantly. Remove from heat. Add eggs, 1 at a time, beating with wooden spoon after each addition until well blended. Drop rounded teaspoonfuls of dough onto lightly greased baking sheets.
- Bake 30 to 35 minutes or until golden brown. Immediately remove from baking sheets to wire racks. Reduce oven temperature to 375°F.
- Mix cream cheese, milk, horseradish, salt and pepper in medium bowl until well blended. Add imitation crabmeat, almonds and onion; mix lightly. Cut tops from cream puffs; fill with the crabmeat mixture. Replace tops. Return to baking sheets. Bake an additional 10 minutes or until heated through.

QUICK AND EASY CRABMEAT DRESSING
This is great for a dressing, stuffing, as a bed for Shrimp Scampi, or by itself. You can buy those little crab shells to stuff and broil, mold it into a loaf pan and bake, or use it to dress any main meat entree. This is a recipe from my wife's mother's collection.

Steps:
- Sauté garlic, onions, celery, and parsley. Set aside.
- Shred the crab meat.
- Prepare the stuffing mix as per instructions on the box but DO NOT COOK. In other words, just mix the water, butter, and stuffing mix together, without cooking it.
- Stir into the crab meat, add garlic powder, and mix until blended.
- Spoon into loaf pan treated with no-stick cooking spray (DO NOT PRESS).
- Brush lightly with butter, sprinkle with paprika, and bake covered in a 375°F oven for 45 minutes.
- Remove covering, add parmesan cheese, and continue to bake at 400°F for 10-15 minutes to allow the top to brown.
- Serve as a side dish, the main dish, or a bed for Shrimp Scampi.
