Old-fashioned Meatloaf - A.K.A Basic Meatloaf image

This classic meatloaf recipe will be a family favorite for years to come. Mix ground beef, onion, bell pepper, and a few more ingredients to create a tasty blend for your meatloaf. Serve with your favorite sides.

Number Of Ingredients 11

1 lb ground beef
1 1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 lightly beaten egg
8 oz canned without juice diced tomatoes
1/2 cup quick cooking oats
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon mustard

Steps:

  • Preheat oven to 375 °F.
  • Mix ground beef, salt, pepper, onion, bell pepper, egg, tomatoes and oats together well and place in a baking dish. Shape into a loaf.
  • Topping:
  • Mix ketchup, brown sugar and mustard and spread on loaf. Bake for 1 hour.

1 minced Vidalia onion
1 clove minced garlic
2 bunches stemmed and chopped spinach
1/4 teaspoon freshly ground nutmeg
1/4 cup heavy cream

Steps:

  • In a medium saute pan over medium-high heat, melt butter and then add the olive oil. Mix in the onions and garlic; cook for 2 minutes until soft. Add the chopped spinach and warm through. Add the salt, nutmeg and the heavy cream. Mix well. Cook until liquid reduces by half, roughly 3 to 4 minutes.

Steps:

  • Preheat oven to 375 degrees Fahrenheit.
  • In a large bowl, stir together ground beef, salt, pepper, onion, bell pepper, egg, tomatoes, and oats. Place the mixture in a loaf pan. Press the surface lightly with your palm to flatten the top.
  • To make the topping, combine ketchup, brown sugar, and mustard. Spread it on top of the loaf.
  • Bake the meatloaf for 1 hour. Use a meat thermometer to check for doneness. The center should be at 160 degrees Fahrenheit.
  • Let the meatloaf rest for 10 minutes after baking so that it holds together better while slicing.
