SPINACH AND CHICKEN SALAD
This salad tastes great and packs a super nutritional punch! Try it with any dressing, but my favorite is a fat free roasted garlic vinaigrette.

Steps:
- Place equal portions of spinach onto four salad plates. Arrange chicken, zucchini, bell pepper, and black olives over spinach, and top with cheese. Drizzle dressing over salad.

CHICKEN AND BABY SPINACH WITH RASPBERRY-BALSAMIC VINAIGRETTE
Steps:
- For the dressing:
- Combine vinaigrette, raspberries, and sugar in a blender. Blend until smooth; set aside.
- For the salad:
- In a large bowl, toss together spinach, onions, raspberries, cucumbers, and half of the vinaigrette.
- Divide mixture among 4 chilled plates. Add chicken strips to mixing bowl and toss with 2 tablespoons dressing. Divide among the plates. Garnish with feta, pecans, and black pepper. Serve.
CREAMY SPINACH SALAD WITH CHICKEN AND BABY TOMATOES
This salad is a meal in itself. It's very filling. Its hard to believe that a 6 oz bag of spinach turns into 1/2 a cup of dressing. No wonder a typical green salad doesn't keep you full. This ones different. Its loaded with the good stuff; chicken breast, tomatoes, croutons and bacon. Can't go wrong with that list! It takes a little prep with the chicken and bacon, but its pretty straightforward and very tasty.

Steps:
- 1. Use a food processor to mince the spinach. Add mayo and lemon juice and mix until well combined and creamy.
- 2. Season chicken with salt and pepper and saute until cooked through. Cool chicken to room temperature Dice into 1/2-inch chunks.
- 3. Saute bacon until crunchy. Dry/drain on paper towels . Chop bacon.
- 4. Finely chop green onion or chives.
- 5. Cut the tomatoes in halves or quarters depending on tomato size.
- 6. Mix all the ingredients and dressing together just before serving.
- **You can prep all ingredients ahead of time but do not combine until ready to serve.**.

BABY SPINACH SALAD WITH LEMON AND PARMESAN
I love simple, yet delicious, recipes and this one qualifies for that description. This is perfect for spring and is an excellent recipe for low-carbers. Be sure to use very fresh baby spinach for this salad. I found this in the Chicago Trib's 'Good Eating' section and they give credit to "The Modern Vegetarian Kitchen" by Peter Berley and Melissa Clark.

Steps:
- Place the lemon juice in a small bowl; whisking constantly, slowly add the oil in a steady stream, whisking until the vinaigrette is creamy; set aside.
- Rub the inside of a large bowl with the cut sides of the garlic halves; add the spinach; drizzle with the reserved lemon vinaigrette; toss gently to coat.
- Divide the salad among 4 plates.
- Shave the cheese in wide sheets over each salad with a vegetable peeler.
- Season with salt and pepper and serve.
FIERY CHICKEN SPINACH SALAD
This hearty and colorful main-course salad is easy to throw together when I get home from work, because it uses canned black beans and Mexicorn and packaged chicken breast strips. I sometimes add a can of ripe olives and fresh cherry tomatoes from our garden.

- Place chicken, onions, garlic, salt, pepper, and flour in a resealable bag. Stir in the lime juice. Allow to sit for a few minutes to marinate.

- Preheat your oven to 400˚F. Line a rimmed baking sheet with foil (a mess-saving measure) and arrange your bacon over the foil. Bake at 400 for 15-20 minutes depending on how crispy you like your bacon. Dry/drain on paper towels . Chop bacon into 1/2" pieces and add them to your salad bowl.
- Heat a large skillet over medium/high heat. Swirl in 2 Tbsp oil. Slice chicken in half so it cooks faster. Season chicken with salt and pepper and saute until cooked through. Cool chicken to room temp, then dice into 1/2-inch pieces. Toss the chicken pieces into your salad bowl.
- Finely chop green onion or chives and toss them into your salad bowl and top with the 1 to 1 1/2 cups of croutons.
