Easy Mushroom Gravy image

Homemade Mushroom Gravy is creamy & full of flavor. Serve over pork chops or baked chicken!

¾ pound mushrooms (sliced)
¼ cup onion (finely diced)
3 tablespoons butter
1 clove garlic (minced)
2 tablespoons red wine (optional)
3 tablespoons flour
salt & pepper to taste
2-3 cups beef broth

Steps:

  • Cook the onions and mushrooms in butter until tender. Add garlic and cook until fragrant. Add wine and cook until evaporated.
  • Add flour & salt & pepper to taste. Cook 1 minute.
  • Add broth, a bit at a time stirring after each addition until gravy reaches desired thickness.
  • Simmer 2 minutes. Season and serve.

Number Of Ingredients 18

½ lb mushroom, sliced
3 tablespoons vegetable oil
1 cinnamon stick
3 cardamom pods
½ teaspoon cumin seed
1 white onion, finely chopped
½ teaspoon turmeric powder
½ teaspoon cumin powder
1 teaspoon garam masala powder
1 teaspoon coriander powder
2 teaspoons chili powder, to taste
1 teaspoon ginger garlic paste
3 green chillis
curry leaf
1 tomato, chopped roughly
water
salt, to taste
coriander leaf

Steps:

  • Heat oil in a pan and add cinnamon stick, cardamom, and cumin seeds. Let roast and, after a few seconds, add finely chopped onions and salt and saute until golden.
  • Once the onions are golden and tender, add the masalas (spices) as follows: ginger-garlic paste, turmeric powder, cumin powder, garam masala, coriander powder, red chili powder, green chilies, and curry leaves.
  • Mix all the ingredients well and then add chopped tomato, and a little bit of water (¼ cup) and cook until everything turns soft (5-6 minutes). You can also add ¼ cup (65 G) tomato paste in place of the 1 tomato to get a very smooth gravy.
  • Once the oil starts to separate, add the cleaned and sliced mushrooms and mix them well with the masala mixture. Cook for 3-4 minutes. Then, add ¼ cup (or slightly more) required water and cook until the mushrooms are fully done. You should have a gravy-esque consistency: something that can be mixed with rice or accompanied by naan or roti or an equivalent flatbread.
  • Finally, garnish with chopped coriander leaves and turn off the heat. If desired, add 1 tsp of ghee on the top to enhance the flavor.
  • Serve with rice or naan. Enjoy!

I love liver and stroganoff. This a recipe I made up to take advantage of that. I use an all-purpose Gluten-free flour mix but it would work fine with any all-purpose flour if you are not on a Gluten free diet.

1 lb beef liver
2 cups milk (divided)
1 cup beef broth
1/2 cup mozzarella cheese, shredded
4 tablespoons butter
4 tablespoons gluten-free all-purpose flour
1 medium onion, cut in half and thinly sliced
1 cup mushroom, quartered

Steps:

  • Rinse liver thoroughly and pat dry. Pour 1 cup of the milk over the liver in a shallow container and refrigerate for 1-2hrs. This will remove any bitter flavor from the liver.
  • Drain the milk off the liver and discard the milk.
  • Cut the liver into 1 inch cubes.
  • Saute liver over medium heat in a large non-stick skillet until the outsides and lightly browned and they are just barely pink inside. Do not overcook. Remove liver from pan and set aside.
  • Add the onions and mushrooms to the skillet and cook until onions are translucent and beginning to brown and the mushrooms are cooked through. Remove and set aside with the liver.
  • Melt butter. Add the flour and stir to form a roux. Cook 1-2 minutes. Add broth and milk slowly. Cook over medium-high heat until sauce begins to thicken.
  • Add cheese one small handful at a time stirring constantly and making sure the first handful has completely melted before adding another,.
  • Return the liver, mushrooms, and onions to pans and heat through.
  • Salt and pepper to taste.

5 tablespoons unsalted butter, divided
3 tablespoons shallot, minced
12 ounces baby bella mushrooms, sliced

½ teaspoon salt

3 cups vegetable broth (such as Kitchen Basics®)
1 ½ teaspoons dried tarragon
3 teaspoons low-sodium soy sauce

Steps:

  • Melt 2 tablespoons butter in a large skillet over medium heat. Add shallot and cook, stirring occasionally, until shallots are a deep golden brown, 2 to 3 minutes. Stir in mushrooms, garlic, salt, and pepper. Cook, stirring occasionally, until mushrooms are nicely browned, 3 to 5 minutes.
  • Pour sherry into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Cook and stir until sherry is reduced, about 2 minutes. Remove mushroom mixture from the skillet and set aside.
  • Reduce heat to medium-low and melt remaining 3 tablespoons of butter in the skillet. Add flour to make a roux, stirring continuously, until mixture is light golden brown, about 2 minutes. Add vegetable broth and tarragon; whisk until gravy is smooth and no lumps of flour remain.

3/4 cup dry sherry
1 portabella mushroom, cut into 1/2 inch cubes
1 1/2-2 1/4 cups water, as needed or 1 1/2-2 1/4 cups broth
3 tablespoons cornstarch, mixed with
3 tablespoons water
salt & freshly ground black pepper, to taste

Steps:

  • Remove the turkey from the roasting pan and set aside.
  • Place the pan and its drippings over medium-low heat.
  • Stir in the sherry, scraping and deglazing the pan.
  • Add the mushroom pieces, continuing to stir.
  • As the sauce thickens, add the water, a little at a time, continuing to stir for 3 or 4 minutes.
  • Stir in the cornstarch-water mixture.
  • Increase the heat to medium and stir until the gravy thickens.
  • Taste and adjust seasoning with salt and pepper, if necessary.
