- Preheat your oven to 350 °F (177 °C). Lightly grease an 8 in (20 cm) square baking dish, then set it aside.
- Toss the mulberries with the butter and lemon juice. Place 3½ cups (490 g) of mulberries into a large bowl. Add ¼ cup (55 g) of melted, unsalted butter and ½ teaspoon of lemon juice. Gently toss the 3 ingredients together until the mulberries are evenly coated with butter and lemon juice. ¼ cup (55 g) of butter is equal to about half a stick of a butter. Refer to the tablespoon marks printed on the wrapper. If the bowl is too small to toss the berries, you can gently stir the mixture with a rubber spatula. Be careful not to crush the berries. Rinse the mulberries first, then trim off the stems.
- Mix the brown sugar and flour in a new bowl, then add it to the berries. Place 1 to 2 tablespoons (12.5 to 25 g) of brown sugar into a small bowl, then add 2 tablespoons (15 g) of all-purpose flour. Stir the 2 together until they are evenly combined. Sprinkle the mixture evenly across the berries, then stir it in with a rubber spatula. How much sugar you add is up to you. Keep in mind that mulberries are sweeter than most other berries, so 1 tablespoon might be enough. Be careful while doing this so that you don't accidentally crush the berries.
- Spread the berries across the bottom of the greased 8 in (20 cm) pan. Pour the berry filling into your prepared pan, then use your rubber spatula to help spread them evenly across the bottom.
- Mix the granulated sugar, flour, salt, baking powder, and milk. Pour 1 cup (225 g) of granulated sugar into a clean bowl. Add ¾ cup (75 g) of all-purpose flour, ¼ teaspoon of salt, and 2 teaspoons of baking powder. Whisk them together, then stir in 3⁄4 cup (180 mL) of milk. You can mix everything together all at once, but it is easier to mix the dry ingredients together first before adding the wet. Mix the batter well enough so that the texture is consistent. Don't worry if there are some clumps.
- Spoon the batter over the berry filling in large clumps. You won't be able to pour the batter like you would cake batter. Instead, use a soup ladle to scoop the batter up and drop it by the spoonfuls over the berries. Don't worry if you can't cover the berries evenly. Most cobblers have gaps between the lumps of batter. This is part of the aesthetic.
- Bake the cobbler until it turns golden brown, about 40 minutes. The cobbler is ready when the topping turns golden brown, and the berries release their juice and bubble. If the cobbler isn't ready after 40 minutes, keep checking on it every 5 minutes. Cobblers can sometimes take up to 1 hour to bake.
- Let the cobbler cool for 10 to 15 minutes, then serve it. Because there is no crust, you won't be able to remove the cobbler from the pan. Instead, use a metal spatula to cut and serve the cobbler. You can enjoy the cobbler hot or chilled. If you want to serve the cobbler chilled, let it reach room temperature first, then tuck it into the fridge for 1 to 2 hours. For extra flavor, serve it with some vanilla ice cream or whipped cream. Cover any leftovers with foil, then store them in the fridge for up to 4 or 5 days.

- Preheat oven to 350°F before preparing the filling and cobbler.
- Wash your berries and gently pat dry.
- In a small or medium sized bowl, mix your berries with the sugar, cornstarch and lemon juice.
- Place your berries in your pan, or divide evenly across the ten ramekins.
- Set up your stand mixer with the paddle attachment.
- In the mixer, combine the butter and sugar and mix until it becomes fluffy and lighter in color (about five minutes). Scrape down the bowl half way through mixing to make sure all butter is evenly incorporated.
- Add the egg and vanilla to the butter and sugar mixture and mix for another 3-5 minutes. Again, scrape down the sides of your bowl half way through.
- In your large bowl, gently mix the flour, baking soda, and salt with a whisk.
- Add half of the flour mixture to the wet ingredients and pulse the mixer slowly until combined.
- Add you milk to the mixture and stir slowly until fully incorporated
- Add remaining flour and mix until combined. Scrape down the bowl before quickly mixing one last time
- Using a large spoon or cookie scoop, place a scoop of dough on top of the berry mixture in your ramekins, or around the top of your large dish. You want to leave a little space between scoops and around the edge of your dish to let steam escape during baking.
- Bake in your preheated oven for 20-25 minutes if using ramekins or for 40-45 minutes for the large pan. The cobbler will be ready once the crust is a golden brown and the berry mixture is bubbling.
- Let your cobbler cool for at least 15 minutes before serving and topping with vanilla bean icecream or fresh whipped cream.
