Toasted Coconut Ice Cream is about to become your new favorite dairy-free ice cream recipe. Sweet and creamy coconut milk is loaded with chewy toasted coconut and had a hint of vanilla. It's delicious!

2 cups shredded coconut (divided)
2 14-ounce cans unsweetened coconut milk (minimum 60% coconut extract)
½ cup coconut sugar
1 tablespoon vanilla extract
½ cup chocolate chunks (optional (vegan or paleo, if needed))

Steps:

  • Place the coconut in a large pan over medium heat. Stir occasionally for about 5 minutes, or until it smells fragrant and is golden brown.
  • Add the coconut milk and coconut sugar to a small pot and warm over medium heat until the sugar is dissolved. Remove from the pot from the heat and stir in the vanilla and 1 ½ cups of the toasted coconut. Place the pot in your fridge until the coconut milk is cold.
  • Process the coconut ice cream in your ice cream maker according to the manufacturers directions. If using, stir in the chocolate chunks.
  • Serve with the remaining toasted coconut sprinkled over the top.

14 oz full fat coconut milk, room temperature
⅓ cup sugar
14 oz coconut cream, chilled
1 tablespoon coconut oil, melted
½ cup unsweetened coconut flakes, toasted, plus more for garnish
¼ cup dark chocolate, chopped
½ teaspoon coconut oil

Steps:

  • Line a 12-cup muffin tin with paper liners.
  • In a small pot over medium heat, whisk together the coconut milk and sugar. Cook for 20-25 minutes, until thickened and reduced by nearly half. Remove the pot from the heat and let cool completely, about 20 minutes.
  • Add the coconut cream to a chilled metal bowl. Using an electric hand mixer, beat the coconut cream on high speed for 3 minutes, until soft peaks form. Add the melted coconut oil and briefly whip to combine.
  • Add the condensed coconut milk mixture to the whipped coconut cream and beat for 1 minute, until well combined and fluffy. Fold in the toasted coconut flakes.
  • Evenly distribute the mixture between the prepared muffin cups. Top with more coconut flakes.
  • Freeze the cups for 30-60 minutes, until set but not too hard to bite through. Serve immediately, or keep in the freezer to let harden completely, then let sit at room temperature for 15-20 minutes to soften before serving.
  • While the ice cream cups are freezing, make the dark chocolate drizzle: Combine the dark chocolate and coconut oil in a microwave-safe container and microwave in 30-second intervals until melted. Drizzle on top of the ice cream cups and return to the freezer for 5 minutes to harden.

4 (14 ounce) cans coconut milk
1 ½ cups white sugar
4 egg yolks

Steps:

  • Cook and stir shredded coconut in a skillet over medium-low until lightly browned and fragrant, about 5 minutes.
  • Combine coconut milk, sugar, and toasted coconut in the top of a double boiler over simmering water; simmer until slightly reduced, about 1 hour. Pour coconut milk mixture through a strainer and pour liquid back into double boiler.
  • Fill a large bowl with ice water.
  • Whisk egg yolks into coconut milk mixture until thickened. Remove double boiler from heat and place the top portion in the ice water to cool the coconut milk mixture to room temperature, about 20 minutes.
  • Process coconut milk mixture in an ice cream maker according to manufacturer's instructions.

⅔ cup rolled oats
⅔ cup almond
1 cup unsweetened shredded coconut
¼ teaspoon salt
2 tablespoons maple syrup
¼ cup coconut oil, melted
2 ripe avocados
14 oz coconut cream, 1 can
¾ cup cocoa powder
¾ cup coconut milk
⅓ cup maple syrup
1 pinch salt
14 oz coconut milk, full-fat, chilled and divided
2 tablespoons maple syrup
½ teaspoon vanilla extract
toasted coconut flake, to serve

Steps:

  • Preheat oven to 350°F (180°C).
  • In a food processor, pulse rolled oats until finely ground.
  • Add almonds and blend until finely chopped. Add unsweetened coconut flakes and salt. Pulse a few times.
  • Add melted coconut oil and maple syrup until combined.
  • Pour pie mixture into a greased 9x9-inch (23x23-cm) pie dish, spreading it evenly on the bottom and sides.
  • Poke the crust with a fork several times. Bake for 20 minutes.
  • For the filling, add the avocados, coconut cream, cocoa powder,coconut milk, maple syrup, and salt to a blender and blend until smooth.
  • Pour mixture into the cooled crust and spread an even layer.
  • Place in the refrigerator for 4 hours or overnight.
  • For the coconut whipped cream, add the thick part of the coconut milk to a bowl. Using an electric mixer, beat the coconut milk until fluffy.
  • Add vanilla extract and maple syrup and beat until well combined. Chill until ready to serve.
  • Top with toasted coconut flakes.
