1 cup dried black-eyed peas
1 tablespoon olive oil
1 cup lean diced ham
1 onion, chopped
½ cup chopped green bell pepper
1 clove garlic, minced
2 cups water
2 bay leaves
2 pinches paprika, or more to taste
salt and ground black pepper to taste
3 cups cooked rice

Steps:

  • Place black-eyed peas into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain and rinse.
  • Heat olive oil in a pot over medium heat; cook and stir ham until browned, about 5 minutes. Add onion, green bell pepper, and garlic; saute until onion is tender, about 10 minutes. Add black-eyed peas, water, bay leaves, paprika, salt, and black pepper; cover pot with a lid and simmer until peas are tender, 40 to 50 minutes.
  • Remove bay leaves from black-eyed peas mixture and stir in rice. Simmer until all the liquid is evaporated, 5 to 10 more minutes.

1 pound turkey Italian sausages, casings removed
1 pound turkey kielbasa, sliced
1 large onion, diced
1 cup diced celery
1 cup diced green bell pepper
2 tablespoons minced garlic
4 cups water
2 (15 ounce) cans no-salt-added black-eyed peas, rinsed and drained
1 tablespoon reduced-sodium chicken bouillon granules
1 tablespoon cayenne pepper
1 tablespoon chili powder
1 tablespoon dried oregano
1 tablespoon dried basil
1 tablespoon ground black pepper
2 leaf (blank)s bay leaves, or more to taste
2 cups uncooked white rice
1 bunch green onions, sliced

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir turkey Italian sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer to a bowl.
  • Heat the same pan over medium-high heat and brown kielbasa slices, 5 to 7 minutes. Transfer to the same bowl with Italian sausage.
  • Heat the drippings over medium-high heat in the same pan. Add onion, celery, and bell pepper; saute for 3 to 4 minutes. Add garlic and continue to saute until onion is tender, 2 to 3 minutes more.
  • Transfer sausages and vegetable mixture to a large pot. Add water, black-eyed peas, bouillon, cayenne, chili powder, oregano, basil, pepper, and bay leaves. Bring to a boil. Add rice and return to a boil. Reduce heat to low and simmer until rice is tender, about 25 minutes. Stir in green onions.

1/3 cup olive oil
6 strips bacon, chopped
1 cup chopped Vidalia or sweet onion
1 green bell pepper, seeded and chopped
1 celery stalk, finely chopped
5 or 6 sprigs fresh thyme, leaves stripped
Kosher salt and freshly ground black pepper
2 garlic cloves, grated on a rasp or finely minced
2 cups rice, rinsed in a sieve until the water runs clear
One 15-ounce can black-eyed peas, drained and rinsed
4 Roma tomatoes, chopped
One 8-ounce can tomato sauce
1 tablespoon Worcestershire sauce
1 habanero pepper, pierced with the tip of a knife

Steps:

  • In a large saucepan or Dutch oven over medium-high heat, combine the oil, bacon, onion, bell pepper, celery, thyme leaves, a pinch of salt, and a few grinds of pepper. Cook, stirring, until the bacon is crisped and the onion is tender and fragrant, about 10 minutes.
  • Add the garlic and rice and toast the rice until it has a nutty, popcorn-like scent, about 10 minutes more.
  • Stir in the peas, tomatoes, tomato sauce, Worcestershire, habanero pepper, and 3 cups water. Bring the pot to a boil, and then reduce to a low simmer and cover. Cook until the rice absorbs the liquid, 35 to 40 minutes. Try to avoid lifting the lid until the 30-minute mark, as the steam helps cook the rice.
  • Serve warm.

1/2 onion, finely diced
3 red bell peppers, finely diced
3 green bell peppers, finely diced
2 yellow bell peppers, finely diced
1 1/2 tablespoons Old Bay Seasoning
1 1/2 cups long-grain white rice
2 3/4 cups boiling water
4 cups canned black-eyed peas, rinsed and drained
salt and pepper
2/3 cup fresh cilantro, finey chopped

Steps:

  • In a large ovenproof pan over meidum-high heat, melt butter; add onions and peppers to pan and stir until limp, about 5 minutes.
  • Add Old Bay seasoning and rice and continue cooking until rice is translucent, about 2 minutes.
  • Pour 2 3/4 cups boiling water into rice mixture.
  • Stir well until rice returns to a boil.
  • Stir in the black-eyed peas and season well with salt and pepper.
  • Cover pan with a sheet of buttered waxed paper or prchment paper and then with aluminum foil.
  • Bake in 400°F oven for 15 to 18 minutes.
  • When the rice is done, fold in the cilantro and serve.

Add bay leaves, Cajun spice seasoning, and cayenne, and cook, stirring, until fragrant, about 30 seconds. Add brandy, scraping up any brown bits on the bottom of the pot with a wooden spoon. (You can use 2 Tbsp. water if you want to skip the brandy). Add rice and cook, stirring often, until some grains are translucent, about 3 minutes.
  • Add black-eyed peas and broth, season with salt and black pepper, and bring to a boil. Reduce heat, cover saucepan, and simmer until rice is tender and liquid is absorbed, 15–18 minutes. Remove pan from heat, add peas and butter, and fluff rice with a fork. Cover pan and let sit 10 minutes.
