This is an old time South Dakota recipe. Cocoa is an optional ingredient. This recipe is made in two parts.

½ cup butter
½ cup brown sugar
1 ½ cups all-purpose flour
3 eggs, beaten
1 ½ cups brown sugar
1 teaspoon vanilla extract
¼ cup all-purpose flour
¼ cup unsweetened cocoa powder
1 teaspoon baking powder
¼ teaspoon salt
1 ½ cups flaked coconut
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cream together the butter and 1/2 cup brown sugar until smooth. Stir in the 1 1/2 cups of flour. Press the mixture firmly into the bottom of a 9x13 inch pan. Bake the crust for 15 minutes in the preheated oven, until golden.
  • In a medium bowl, mix together the eggs and 1 1/2 cups brown sugar. Stir in the vanilla. Combine the 1/4 cup flour, cocoa (if desired), baking powder and salt; stir into the egg mixture. Fold in the coconut and walnuts. Pour into the pre-baked crust.
  • Bake for 25 to 30 minutes in the preheated oven, until firm. Cool and cut into squares.

CRUST:
1 cup all-purpose flour
1/2 cup packed brown sugar
1/2 cup butter, cubed
FILLING
2 large eggs, lightly beaten
1 cup packed brown sugar
1 teaspoon vanilla extract
2 tablespoons all-purpose flour
1/2 teaspoon salt
1 cup sweetened shredded coconut
1 cup chopped walnuts

Steps:

  • In a small bowl, combine flour and brown sugar; cut in butter until crumbly. Pat into a 13x9-in. baking pan. Bake at 350° for 10 minutes. , Meanwhile, in a bowl, beat eggs and brown sugar; stir in vanilla. Combine flour and salt; add to egg mixture. Fold in coconut and walnuts. Spread over baked crust. Return to oven and bake 20-25 minutes longer or until golden brown. Cool on a wire rack.

I made this up tonight and my family ate it up! It is low fat and low calorie but you won't believe it. This is a BIG BOWL of dessert sure to satisfy any dieters chocolate desires. **Note, I make this in two loaf pans then save half for another night. I only make one box of pudding at a time.

1 (16 ounce) box angel food cake mix
1 1/4 cups water
1/2 cup unsweetened cocoa
2 (4 ounce) boxes sugar-free instant chocolate pudding mix
4 cups skim milk
4 cups Cool Whip Free

Steps:

  • Mix water and cake mix. Add half cup unsweetened cocoa to the mix. Bake as directed either in two 9x4 loaf pans or a tube pan.
  • When cake is cool, slice into 12 servings. Dice the cake into bite size cubes.
  • Divide into dessert bowls.
  • Mix up the pudding and after it sets add it to the top of the cakes.
  • Dollop the whip cream on top and eat!

1 cup coarsely chopped pecans
5 ounces white baking chocolate, chopped
VANILLA DOUGH:

1 teaspoon baking soda

  • For chocolate dough, in a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine the flour, cocoa, baking soda and salt; gradually add to creamed mixture and mix well. Stir in pecans and white chocolate., For vanilla dough, in another large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine the flour, cream of tartar, baking soda and salt; gradually add to creamed mixture and mix well. Stir in pecans and German chocolate. Cover and refrigerate both doughs for 2 hours. , Divide both doughs in half. Shape each portion into a 12-in. roll; cover. Refrigerate until firm, about 3 hours., Uncover and cut each roll in half lengthwise. Place a chocolate half and vanilla half together, pressing to form a log; repeat with remaining dough. Cover and refrigerate until the dough holds together when cut, about 1 hour. , Using a serrated knife, cut into 1/4-in. slices. Place 2 in. apart on greased baking sheets. I love clotted cream from England, but it's hard to get here in the US. I found this recipe in a book from the Stars Restaurant, and it comes as close as anything I've tried to real clotted cream. This is a great (IMO, essential) spread for scones and muffins.

2 tablespoons heavy cream (not ultra pasteurized)

  • Put all the ingredients in a stainless steel bowl and whisk until the cream holds its shape.
  • Refrigerate the cream until ready to use.
  • Double cream should be used within an hour after it is made.
