Steps:
- Pat dry the duck breasts with a paper towel.
- Score the duck skin with sharp knife, making sure to not cut into the flesh.
- Season the duck breasts on both sides with salt and pepper.
- Add the potatoes to a pot of water and bring to a boil over high heat. Cook for 15-20 minutes, until fork-tender. Drain the potatoes in a colander.
- Using the bottom of a ramekin or your palm, gently smash the potatoes.
- Preheat the oven to 400˚F (200˚C).
- Starting with a cold and dry oven-safe skillet, place the duck breasts skin side down. Cook for 12-15 minutes over medium heat.
- Flip the breasts over and sear the other side for 1 minute. Flip to the skin side down, and transfer the skillet to the oven.
- Roast for 4 minutes for medium-rare, or 6 minutes for medium.
- Rest the duck skin-side up for 10 minutes. Do not discard the fat in the pan.
- In a small pot, combine the red wine, chicken stock, orange juice, and honey and reduce by half over medium heat.
- Fry the potatoes with remaining duck fat in the pan, until golden brown, 5-6 minutes. Season with salt, pepper and rosemary.
- Slice the duck ½-inch (1 cm) pieces.
- Serve with the sauce and the potatoes.
- Enjoy!

Steps:
- Score each duck breast's skin with a sharp knife, ensuring not to cut into the meat.
- Season generously with salt and leave the duck breasts to stand for 15 minutes. Pat both sides dry with a paper towel.
- Place the duck breasts skin side down in a cold frying pan and switch on the heat to a medium-high setting.
- Wait. Leave the duck undisturbed for around 3-5 minutes (depending on size of breasts) and watch as the fat melts, which lubricates the meat. Using a spatula or tongs, you can press down on the meat side to ensure the skin is evenly cooked.
- Flip the breasts over and cook for 3-4 minutes, all depending on how well you like your duck cooked.
- We advise medium-rare pink. If the duck is thicker on one side, tip the breasts onto the thick sides and allow to cook for another 30 seconds to 1 minute.
- Remove from the pan and allow to rest for 5 minutes.
- Serve with your choice of vegetables and accompanying sauce. I suggest dauphinoise potatoes, steamed broccoli and orange sauce. Enjoy!

Steps:
- With the tip of a knife, do incisions like a checkerboard on the skin of the duck breasts, but DO NOT touch the flesh. In a large non-stick skillet, brown the breasts at high heat 4-5 minutes on each side, beginning with the skin side. Put the breasts in a not too deep ovenproof dish and keep cooking in a preheated oven of 350 F for about 8 minutes or until the flesh of the duck is slightly pink inside.
- Meanwhile, deglaze the skillet by keeping 2 tablespoon of the grease. Add shallots and apples at medium heat, stirring from time to time, for about 3 minutes or until apples are golden. Pour apple juice in the skillet scraping the bottom with a wood spoon to remove the browned bits. Cook for 5 minutes or until liquid has reduced by half. Add rosemary and stir. Add salt and pepper.
- When ready to serve, slice the duck breasts in bias ( / ) Distribute the slices in the plates and coat with the sauce.

- When the fillets are done, cover the baking tray with aluminium foil or baking paper and allow to settle for 12-13 minutes before serving, to help soften them.

Steps:
- Score the skin of the duck breast at 2cm intervals, then season with sea salt and black pepper.
- Place the duck skin-side down in a cold non-stick frying pan, then turn the heat on to medium-high. Cook for 8 minutes without moving it, or until the fat is well rendered and the skin is golden and crispy.
- Meanwhile, finely chop the bacon. Peel and finely slice the garlic.
- Turn the duck over and cook for 4 minutes on the other side, then remove to a plate to rest, leaving the pan of duck fat on the heat.
- Sprinkle the bacon and garlic into the hot pan, strip in the rosemary leaves and cook for 2 minutes, or until golden, stirring regularly.
- Add a splash of red wine vinegar and stir to pick up any sticky bits, then pour in the beans, juice and all. Simmer for a couple of minutes, then stir through the spinach until wilted.
- Slice the duck breast at an angle. Divide the beans between your plates and arrange the duck on top, spooning over any resting juices, to finish.

- Squeeze the lemon juice into a bowl of water. Slice the apples into quarter moons of about 1/4 inch thick. Do not peel. Drop each slice into the lemon juice and make sure all sides are coated to avoid browning.
- Heat a large saute pan over high heat for 1 to 2 minutes. Add the duck fat or butter and swirl to coat the pan. Place the duck breasts skin side down, turn the heat to medium and cook for 5 to 8 minutes, until golden brown. Turn over and cook for another 2 to 4 minutes, depending on how you like your duck. Remove the duck breasts and tent loosely with foil. Let them rest while you make the sauce.
- Spoon off all but about 3 tablespoons of fat. Cook the apples over medium-high heat; do not crowd them. Brown the apples lightly on both sides. When you flip them, sprinkle the brown sugar over everything and swirl to combine while the apples continue to cook for 1 to 2 minutes. Pour the cider in the pan and put the heat up as high as it will go. Sprinkle a pinch of salt and the cayenne into the pan and boil this furiously until it cooks down by two-thirds.

- Potato Dauphinoise. Duck is pretty rich, it sometimes makes sense to give it an equally impressive accompaniment. Dauphinoise potatoes are packed with lovely flavours.
- Orange Sauce. Ok, it might be a little cliched, but it works! Because of the high-fat content of the duck, it might get a little too oily. By making a fresh and zesty sauce, you can cut through this fat beautifully.
- Sticky Marinated Duck Sauce. Sweet and savory is a well-known pairing. It works beautifully with duck too. The skin on a duck breast is one of life’s pleasures, so you want to make the most of it.
- Redcurrant Gravy. Roasted meats always go well with a slightly sweet jus. Pork and apple, lamb and mint, and of course duck and redcurrant. It is really easy to make.
- Spinach, Mushroom and Pomegranate Salad. Duck can be a little heavy. If you want something light to go along with it, then a fresh and simple salad can make the ideal choice.
- Sweet Chilli and Tomato Jelly. If the sound of sweet and spicy Jelly doesn’t tickle your tastebuds, nothing will. This works perfectly with duck. Add two crushed cloves of garlic and two finely chopped chilli’s to the frying pan that you cooked the duck in.
- Sweet Potato Mash. If you want super simple, then this could be the ideal side dish for duck breast. Sweet potato is filling, tasty, and it also (as the name suggests) has a sweet edge that works perfectly with oily and savory duck.
- Fried Egg and Potatoes. This is like a more refined version of hash. If you cook the egg right, you’ll get a lovely runny yellow yolk that works so well with duck breast.
- Brussels Sprouts. No, we don’t mean cut crosses in the bottom and boil them to death. Yuck! We like to finely shred our sprouts and then fry them. Do you know what is the best thing to fry sprouts in?
- Mashed Potatoes. A simple dish, so many possibilities. If you have cooked your duck to perfection, then there should be a lot of succulent juice left on your plate.

- To make a real red-eye gravy you need ham and ham drippings. So fry the slice of country ham in 1 tablespoon of the oil until crispy on both sides. You can serve the ham with the duck or eat it as a cook's treat.
- To prep the duck breasts, set each one between two pieces of plastic wrap, or better yet, a freezer bag cut open. Pound them with a mallet or empty wine bottle until the thick end of the breast is the thickness of the thin end of the breast. If you have a jaccard, run it over the pounded breast so it's full of little lacerations; this helps the batter stick to the meat. Salt the duck breasts well.
- Mix the flour, seasoning, salt, baking powder and soda together in a bowl. Mix the buttermilk and the beaten egg together in another bowl. Put the duck breasts in the buttermilk. You can leave them there for a few hours if you need to, in the fridge.

- Using a sharp knife, score duck skin in a crosshatch pattern at 3/4-inch intervals, about 1/8 inch deep (being careful to avoid cutting into meat). Sprinkle duck breasts with 1 tablespoon salt, and chill, skin sides up, uncovered, 8 hours or overnight.
- Place 15 charcoal briquettes in an even layer in a chimney starter; light briquettes. Once briquettes are covered with gray ash, use tongs to transfer 5 briquettes to one side of bottom grate of grill. Place 1 oak chunk on top of charcoal, and insert top grill grate. Cover and adjust vents to bring internal temperature to 85°F to 95°F.
- Fill a rimmed baking sheet with a single layer of ice cubes. Place duck breasts, skin sides up, on a wire rack, and set rack over ice. Place baking sheet with duck on top grill grate over unlit side of grill. Cover and smoke duck, maintaining temperature of 85°F to 95°F (adding more briquettes if necessary to maintain temperature) and allowing duck breasts to become infused with smoke flavor, about 20 minutes. Remove duck breasts from grill, and set aside.
- Heat duck fat in a large, high-sided skillet over medium-high. Add apples, and cook, stirring occasionally, until browned on all sides, about 6 minutes. Add butter, and swirl skillet to melt. Stir in sugar and remaining 1/2 tablespoon salt. Cook, stirring occasionally, until sugar melts and forms a golden caramel, 5 to 6 minutes. Reduce heat to medium, and carefully add duck stock. (Caramel will initially seize up and splatter.) Cook, stirring occasionally, until caramel is thick, syrupy, deep amber in color, and reduced to about 3/4 cup and apples are fork-tender, about 1 hour. Remove caramel from heat; turn off burner.
