Blackberry Balsamic Reduction Sauce image

Drizzle this blackberry balsamic reduction sauce over your grilled meat to take it to another level. A breeze to prepare, we thought it was delightful over grilled pork. It's sweet and tart with notes of blackberry flavor throughout.

3 Tbsp butter
1 Tbsp brown sugar
3 Tbsp honey
1/2 c blackberry juice/puree (seedless)
1/2 c balsamic vinegar
1 pinch salt

Steps:

  • 1. In a small saucepan, melt the butter. Add the brown sugar and honey. Bring to a boil. Boil 1-2 minutes.
  • 2. Add blackberry juice, balsamic vinegar, and salt. Bring to a hard boil and boil briskly for 5 minutes.
  • 3. Continue boiling more softly until the sauce will coat the back of teaspoon nicely.
  • 4. Let cool slightly and serve over roasted pork, beef, fish, or chicken.

This simple blackberry compote has the consistency of a chunky fruit syrup and is perfect on a variety of foods, such as ice cream, crepes, yogurt, oatmeal, and ricotta toast. It's a great way to use up fresh berries. Feel free to mash the berries with a fork or potato masher for a smoother consistency. The longer you simmer the compote, the more concentrated the flavors become.

2 cups fresh blackberries
¼ cup white sugar
1 teaspoon lemon juice
1 pinch salt

Steps:

  • Combine blackberries, sugar, lemon juice, and salt in a saucepan. Toss to coat and let sit for 5 minutes.
  • Bring berry mixture to a boil over medium-high heat. Reduce heat to medium and simmer until sauce has reduced and thickened slightly, 15 to 20 minutes. Cool slightly and serve warm, or refrigerate for later use. Mixture will thicken further as it cools.

1/4 teaspoon lemon juice

Steps:

  • Puree the berries through a food mill or in a food processor and press them through a fine-mesh sieve to remove their seeds.
  • Whisk in the sugar and lemon juice, whisking until the sugar dissolves.
  • Taste for sweetness and adjust, if necessary.

2 teaspoons cornstarch
1 cup blackberries
2 tablespoons stevia sugar substitute (such as Truvia®)
⅛ teaspoon ground cinnamon
½ teaspoon vanilla extract

Steps:

  • Mix together water and cornstarch in a small bowl; set aside.
  • Place blackberries in a small pot and sprinkle with sweetener and cinnamon. Add cornstarch mixture and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer, stirring constantly, until desired thickness is reached, 5 to 10 minutes.
  • Remove from heat, add vanilla, and stir.

  • Add blackberries, the 1 tablespoon of water and sugar to a small pan. Heat over low for three to four minutes, gently stirring until the blackberries have given off juices and the sugar is melted and mixture simmers. When blackberries have reached your desired stage (they can be cooked until just soft or cooked longer if you wish them to break apart) add the cornstarch slurry. Mix; the sauce should start to thicken immediately. Remove from heat. The sauce will be thicker once cooled.
  • Mix together lemon juice and water. In a small cup, add the cornstarch. Slowly while stirring, add in the lemon juice water mixture. If this mixture sits, the cornstarch will thicken on the bottom of the cup. Just stir together before using.
