EASY CLASSIC SHRIMP AND GRITS



Easy Classic Shrimp and Grits image

This classic, traditional Shrimp and Grits recipe is such delicious, gluten free Southern comfort food in only 30 minutes with the most YUMMY butter sauce!

2 1/2 cups chicken stock/broth (divided)
2 cups whole milk
4 tablespoons butter (divided)
3/4 cup stone-ground grits
1 cup sharp cheddar cheese (shredded)
4 strips bacon
1 lb. jumbo shrimp (peeled and deveined)
kosher salt (to taste)
black pepper (to taste)
thinly sliced green onions (for garnish (optional))

Steps:

  • Bring 2 cups of the chicken broth, the milk (2 cups), 3 tablespoons of the butter, and a pinch of salt to a gentle boil in a medium sized pot. Add the grits and whisk together. Cover and simmer for 15-20 minutes, or until grits are fully cooked, soft, and creamy, whisking again every 5 minutes or so.
  • Meanwhile, cook the 4 bacon strips until crispy in a nonstick or cast iron skillet. Set aside on a paper towel lined plate. Once cool, chop into small pieces.
  • Drain all but 2 tablespoons of the bacon grease from the skillet.
  • Rinse the shrimp with cold water and pat dry. Season with salt and pepper. Cook in the bacon grease until only just cooked- about 2 minutes per side.
  • Add the remaining tablespoon of butter and 1/2 cup of chicken broth to the shrimp and stir until melted and broth is heated.
  • When grits are finished cooking, remove from heat and stir in the cheese (1 cup) until melted.
  • Serve the shrimp mixture over the grits, making sure to spoon some of the liquid from the skillet over the grits, and sprinkle with the bacon pieces and sliced green onions. Serve immediately.

6 cup water
kosher salt
2 cups corn grits
2 tablespoons unsalted butter
6 ounces Castello Caraway Havarti Cheese, grated
sea salt and black pepper
2 tablespoons olive oil
1 tablespoon rice wine vinegar
1 teaspoon lime juice
1 teaspoon chili powder
½ teaspoon cayenne pepper
¼ teaspoon crushed red pepper
1 pound jumbo shrimp, cleaned and peeled
1 tablespoon vegetable or canola oil
½ pound deli-style corned beef, chopped
chopped fresh parsley, for garnish

Steps:

  • Add the water and salt to a deep saucepan or stock pot. Bring it to a boil, and then add the grits. Reduce the heat to medium low and cook the grits for 25-30 minutes or until creamy and smooth, stirring occasionally. Adjust seasoning to taste and stir in the butter and cheese. Continue to stir until melted. Keep warm until ready to serve.
  • In a small bowl, whisk together the olive oil, rice wine vinegar, lime juice, chili powder, cayenne pepper, crushed red pepper and a dash of salt and pepper. Pour the mixture into a gallon-sized zip bag and add the shrimp. Close tightly and coat the shrimp evenly with the mixture. Set aside.
  • Heat the oil in a large sauté pan over medium heat. Add the shrimp and sauté until pink and cooked through, about 4-5 minutes. Remove from heat and stir in the corned beef.
  • Serve the shrimp and corned beef on a bed of grits. Sprinkle with parsley and enjoy immediately!

1 pound shrimp, peeled and deveined

1 cup thinly sliced scallions
1 large clove garlic, minced

Steps:

  • Bring water to a boil. Add salt and pepper. Add grits and cook until water is absorbed, about 20 to 25 minutes. Remove from heat and stir in butter and cheese.
  • Rinse shrimp and pat dry. Fry the bacon in a large skillet until browned; drain well. In grease, add shrimp. Cook until shrimp turn pink. Add lemon juice, chopped bacon, parsley, scallions and garlic. Saute for 3 minutes.
  • Spoon grits into a serving bowl. Add shrimp mixture and mix well. Serve immediately.

3 tablespoons butter

1 large clove garlic, minced
4 teaspoons lemon juice

Steps:

  • Bring water to a boil in a pot. Add salt and pepper. Stir in grits; reduce heat and let simmer until water is absorbed, 20 to 25 minutes. Remove from heat and stir in Cheddar cheese and butter.
  • Rinse shrimp and pat dry.

2 cups reduced-sodium chicken broth
2 cups 2% milk
1/3 cup butter, cubed
3/4 teaspoon salt

SHRIMP:
8 thick-sliced bacon strips, chopped
1 pound uncooked medium shrimp, peeled and deveined
3 garlic cloves, minced
1 teaspoon Cajun or blackened seasoning
4 green onions, chopped

Steps:

  • In a large saucepan, bring the broth, milk, butter, salt and pepper to a boil. Slowly stir in grits. Reduce heat. Cover and cook for 12-14 minutes or until thickened, stirring occasionally. Stir in cheese until melted. Set aside and keep warm., In a large skillet, cook bacon over medium heat until crisp. 3 cups chicken stock
2 cups heavy cream
2 1/2 cups raw yellow grits, not instant
1 teaspoon seafood seasoning (recommended: Old Bay)
2 cups shredded Havarti cheese
2 tablespoons grapeseed oil
1 pound peeled and deveined bay shrimp, 30/40 count
1 cup diced tomatoes
1 teaspoon salt
1 teaspoon white pepper
1/4 cup green onions, thinly chopped on the bias
1/4 pound butter, whipped with 1 tablespoon hot sauce

Steps:

  • In a sauce pot over high heat, bring the chicken stock to a simmer, then add the cream, grits, and seafood seasoning. Reduce the heat to medium-low and continue to cook until the mixture has thickened and all the liquid has been absorbed, 15 to 20 minutes. Reduce the heat to low, add the cheese, and stir thoroughly to blend, 4 to 5 minutes. Remove the grits from the heat and keep warm.
  • In a saute pan over medium heat, add the grapeseed oil and shrimp, and cook, stirring, until the shrimp are faint pink in color, 4 to 5 minutes. Add the tomatoes, salt, white pepper, and green onions and cook for an additional 2 minutes. Turn the heat off and add the flavored butter. Allow the butter to melt and coat the shrimp, then remove the pan from the stove.
  • Divide the grits among the plates and spoon the shrimp-tomato mixture over the top and serve.
