This recipe was given to me by my father-in-law, who owns a machine shop. It is the family's traditional birthday party dinner. This chicken is truly mouth-watering and goes perfectly with a tomato/brie bowtie pasta.

1 (16 ounce) bottle zesty Italian dressing
1 (16 ounce) jar salsa

Steps:

  • To Marinate: Place chicken in a nonporous glass dish or bowl; pour dressing and salsa over chicken and turn to coat. Cover with lid or aluminum foil and refrigerate to marinate for at least 2 hours, or overnight.
  • Preheat oven to Grill/Broil.
  • Remove chicken from dish or bowl, discarding any remaining marinade, and grill/broil for about 20 minutes or until cooked through and juices run clear. Serve immediately.

1/4 cup chopped salted nuts, such as cashews
1/4 cup plain breadcrumbs
3 tablespoons apricot jam
1 teaspoon apricot jam
2 tablespoons prepared mustard
2 tablespoons flour
4 large boneless skinless chicken breast halves

Steps:

  • Heat oven to 350 degrees F.
  • Combine chopped nuts, breadcrumbs, 2 tablespoons of the jam and the mustard in small bowl to form a thick paste.
  • Lightly flour chicken; shake off excess. Spread 1 teaspoon jam on each chicken breast, covering both sides. Place breasts in baking dish large enough to hold them. Spread seasoned paste on top.
  • Bake in 350 degree oven for 30 minutes or until chicken is no longer pink in center. Place under heated broiler to crisp, 1 to 2 minutes.
