Olive oil, for frying
1 15-ounce can chickpeas, drained and rinsed
Coarse salt
1/4 to 1/2 teaspoon Pimento (Spanish wood-smoked paprika), optional

Steps:

To a large skillet set over medium-high heat, add enough olive oil to reach a depth of 1/2 inch. Meanwhile, dry chickpeas thoroughly using paper towels.
Slowly add chickpeas to oil, being careful as they may splatter. Fry chickpeas, stirring frequently, until golden brown, 4 to 5 minutes. Transfer to a paper towel-lined baking sheet to drain. Season with salt and pimento, if desired. Let cool completely, and store in an airtight container.

1 lb boiled chickpeas
1 medium onion, chopped fine
1 tomatoes, chopped
1 teaspoon salt
1 teaspoon red chile, chopped
1 teaspoon coriander powder
2 tablespoons garlic
2 tablespoons fresh ginger, grated
1 teaspoon garam masala
1 tablespoon vegetable oil

Steps:

Soak the chickpeas overnight in water.
The next day, place the soaked peas in fresh water to cover and cook until tender, about 3 hours.
Place the chickpeas into a blender with a little water and puree.
Put the pureed chickpeas into a skillet and add all the other ingredients.
Add 1 cup of water and cook over medium heat until all the water is completely taken up.
Allow filling to cool before using to fill samosas.

1 (1 1/4 kg) roasting chickens (12 or 1.2kgs)
600 g potatoes
100 g margarine, for the mash
1 cup skim milk, for the mash
2 cups frozen peas

Steps:

Place chicken in oven bag and roast until cooked approximately 1 ½ hours.
Peel potatoes and cut into quarters, add a dash of salt and cook until tender, approximately 15-20 minutes Mash together with milk and margarine.
Place peas in pot and cover with water, add a dash of salt and cook for approximately 15 minutes.
Cut chicken into 4-6 pieces and serve with mash and peas.
