The Best Meatloaf I've Ever Made image

When I was growing up, my mom never ever made meatloaf and I always wanted to try it - I finally tried it at a restaurant and loved it. When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

1 tablespoon butter
¼ cup minced onion
2 cloves garlic, minced
1 ½ teaspoons salt
1 ½ teaspoons freshly ground black pepper
2 pounds extra-lean ground beef
3 slices bread, toasted and crumbled
7 buttery round crackers, crushed
1 egg, lightly beaten
3 ½ tablespoons sour cream
1 ½ tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce, divided
¼ cup milk
3 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
  • In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
  • Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
  • In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.

1/2 cup dry breadcrumbs
1/2 cup milk
2 lbs lean ground beef
1 egg, slightly beaten
1/4 cup finely chopped onion
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon sage
3 tablespoons brown sugar
1/4 cup ketchup
1/4 teaspoon nutmeg
1 teaspoon dry mustard

Steps:

  • Soak bread crumbs in milk.
  • Add remaining ingredients, pack lightly into greased loaf pan.
  • Bake at 350 degrees for 1 hour.
  • Combine sauce ingredients in small bowl, spread over top of meat loaf.
  • Bake an additional 45 minutes.
  • Slice to serve.

4 pounds ground beef
1 large green pepper, diced
1 large onion, diced
3 eggs
1 1/2 tablespoons chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
3/4 cup cracker crumbs
Ketchup, as needed

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, combine all ingredients except ketchup. Knead mixture and place into a loaf pan. In a large shallow pan, add 1-inch of water, place the meatloaf pan in the center and cover with foil. Bake for approximately 1 hour.
  • Drain water, remove foil, cover meatloaf with ketchup and bake for another 10 to 15 minutes.

Based on a recipe from Fanny Farmers American Cook Book, but with a twist. We have this with mashed potatoes and green beans or a green salad and a potato salad. I vary the meats by using minced lamb or a mixture of 1lb minced beef and 1lb minced lamb.

2 lbs minced beef
1 (100 g) packet seasoned stuffing mix (I use Shropshire brand Celery and Walnut)
1 1/2 teaspoons dried mustard
1 1/2 teaspoons salt
good grinding black pepper
2 eggs, beaten
2 tablespoons Worcestershire sauce
2 tablespoons ketchup
2 tablespoons of somerset red onion marmalade (Somerset Red Onion Marmalade #1)
milk

Steps:

  • Mix every thing together with your hands, adding enough milk to make a good consistency.
  • Leave for 10 minutes and mix again. You may need to add a little more milk as the stuffing mix will have absorbed the liquid and you don't want a dry meatloaf.
  • Grease a 2lb loaf tin and put the mixture into it patting down well and smoothing the top.
  • Bake in a medium hot oven for about an hour.
  • Remove from the oven and pour off any excess fat.
  • Leave to rest for 10 minutes before slicing.

  • Once pan is hot, add onion, celery, carrot, red bell pepper and fresh thyme. Sauté for approximately 8 minutes or until soft. Add salt and plenty of fresh ground black. Lower heat to medium and add garlic. Stir in Worcestershire sauce and tomato paste and cook for another 2 minutes. Scrape the veggie mixture into a large bowl and let cool until room temperature. In the meantime, spray a large sheet pan with fat free cooking spray.
  • Once veggie mixture is cooled, add turkey, egg whites, cheddar cheese, panko (or oats if you'd prefer) and spinach (or kale if you'd prefer) into the bowl and mix gently with hands until just combined (don’t over mix). Add more panko or oats if mixture is too wet to shape (it should be fairly wet).
  • Shape into 10 oval patties and arrange on sheet pan. Spread about 1 teaspoon of ketchup on each meatloaf. Bake for about 28 to 30 minutes or so until cooked throughout. Remove from heat and garnish with fresh parsley. Enjoy!

Preheat oven to 350°F. Using your hands, mix beef, sausage, eggs, onions, bell peppers, diced tomatoes, tomato sauce, salt and pepper, and Worcestershire sauce. Add saltines until stiff enough to form a loaf and place in a loaf pan. Bake for 60 to 90 minutes, or until a meat thermometer inserted into the loaf reads at least 160°F.
