DOUBLE-FRIED FRENCH FRIES

4 (4 to 5-inches long) russet potatoes (about 2 pounds)
2 quarts canola oil
1 tablespoons fine-grain sea salt
1 teaspoon freshly ground black pepper

Steps:

  • Peel potatoes on the sides, leaving the ends with the skin on. Cut the potatoes into 1/3-inch slices and then slice into 1/3-inch sticks.
  • Fill a large bowl with water and soak potatoes, submerged, for at least 30 minutes up to 24 hours. This will help remove the excess starch from the potatoes and keep them from oxidizing.
  • Heat a heavy stock pot fitted with a deep-fry thermometer with oil to 325 degrees F.
  • Remove potatoes from the water, and pat dry to remove excess water. Add 2 handfuls of potatoes to hot oil. There should be at least 1-inch of oil above the potatoes. Par cook until potatoes are light brown, 5 to 7 minutes. Remove potatoes, gently shaking off excess oil and let drain on rack. Repeat until all of the potatoes are par cooked.
  • Raise heat of oil to 350 degrees F.
  • Cook potatoes again, 2 handfuls at a time, until golden brown, about 2 minutes. Remove from oil, shake off excess oil, and season lightly in a bowl with salt and pepper. Repeat until all potatoes are cooked.

1 large idaho potato
kosher salt, to taste
freshly ground black pepper, to taste

Steps:

  • Fill a large, high-walled skillet with canola oil to a depth of about ½ inch. Heat over medium-high heat until the oil temperature reaches 300°F (150°C).
  • Peel the potato and cut into ½-inch (1-cm) batons. Dry the potato thoroughly with paper towels.
  • Working in batches to avoid overcrowding the pan, par-fry the fries in the hot oil for about 5 minutes, or until lightly browned and tender. Use a slotted spoon to transfer the fries to a paper-towel lined baking sheet to drain. Season with salt.
  • Increase the oil temperature to 375°F (190˚C).
  • Return the fries to the hot oil and fry until golden brown and crispy, 3-5 minutes.
  • Use a slotted spoon to transfer the fries back to the paper towel-lined baking sheet to drain. Season with salt and pepper.
  • Serve immediately.

3 sweet potatoes (or Yukon Gold Potatos, whichever you prefer)
3 egg whites (My rule of thumb is 1 egg white per potato)
1 tablespoon season salt

Steps:

  • Peel potatos.
  • Cut potatos into strips ( I cut them thin like shoe string fries).
  • Brush potatos with egg whites, be sure to all sides are coated.
  • Sprinkle all sides with season salt (or whatever seasoning you like).
  • Bake at 375 for about 30 minutes or until they reach desired crispiness.
