Steps:
- In a food processor, pulse together the flour, baking powder, sugar, and salt.
- Pulse in the chunks of vegan butter until it forms a sandy texture. (This usually takes me 7-10 pulses.)
- Pulse in water, adding more as needed until it can form into a ball. To prevent it from being too sticky, add in a tablespoon of water at a time. If still dry and crumbly, add a bit more ice water.
- Split the dough into two halves, roll each into a ball, and press into discs.
- Wrap in plastic wrap or parchment paper.
- Chill in the fridge for 30 minutes. You can leave it in the fridge for up to 3 days. Or freeze for up to 3 months.
- Sprinkle flour on the surface you'll be rolling the dough on. Then, sprinkle some on top of the dough as well so the rolling pin doesn't stick. Roll the dough out between two pieces of wax paper to make things easier!
- Roll out to fit the size of your pie dish. Place in the pie dish, then cut off the excess crust and crimp the edges.
- Bake per your pie recipe instructions.

Steps:
- Gather the ingredients.
- Combine the flour, sugar, and salt in a large bowl.
- Cut in the vegan margarine , mixing until crumbly.
- In a separate bowl, whisk together the vegetable oil and water.
- Then add to the flour and sugar mixture, mixing just until dough forms. You may want to use your (clean) hands at this stage, in order to make sure all the flour gets incorporated well.
- Once the dough pulls together and there's no extra flour, cover the dough with plastic wrap, then chill in the refrigerator for at least 30 minutes.
- After 30 minutes, remove the dough from the refrigerator and roll out onto a lightly floured surface to about 1/4-inch thickness.
- Once your dough is rolled out, gently press it into a pie tin, trimming any extra bits along the edges.
- Your perfect flaky vegan pie crust is now ready to be filled up with whatever amazing ingredients you have planned. Enjoy!

FLAKY PIE CRUST
Provided by Alisa Fleming
Yield one 9-inch crust
Number Of Ingredients 4
Steps:
- Have ready one 9-inch pie plate. Combine the flour and salt in a large mixing bowl. Cut in the oil or spread with a pastry blender or fork until the mixture resembles coarse crumbs. Sprinkle the milk or water over the flour mixture, tossing gently with a fork to lightly moisten. The mixture should be evenly moistened, not damp or soggy. With your hands, quickly form the dough into a ball, handling it as little as possible.
- Place between two sheets of waxed paper and roll into a circle about one inch larger than your pie plate. Remove the top sheet of waxed paper. Carefully flip the crust over and lay it in the pie plate with the dough against the plate. Working very carefully and gently, remove the second sheet of waxed paper. Ease the crust into the pie plate without stretching or tearing it. Trim the edges or turn them under to within ¼ inch of the rim and flute them. Thoroughly prick the sides and bottom of the crust with the tines of a fork to keep air bubbles from forming under the surface.
- To prebake the crust (for pies that will be filled and then baked), place in a preheated 400 degree F oven for about 12 to 15 minutes, or until it turns a deep golden brown. Remove from the oven and cool before filling.
- To fully bake the crust (for pies that will be filled and chilled, or baked very briefly), place in a preheated 400 degree F oven for about 20 minutes or until it turns a rich brown color and is crisp. Remove the crust from the oven, and allow to cool before filling.
- Tips: Lightly moistening your countertop with water will help to keep the waxed paper from sliding.

- Cut the chilled vegan butter into the flour using a pastry blender or fork until the fat is in small pieces.
- Slowly add ice water, 1 tablespoon at a time, while gently mixing with a fork. Keep adding the water and stirring until the vegan pie dough starts to clump together on it’s own. The dough should look crumbly, but hold together. The dough shouldn’t be wet or sticky.
- On your countertop, lay out a piece of plastic wrap (I use 2, laid out in a cross shape.) Dump the crumbly vegan pie dough in the center of the plastic wrap. Very tightly wrap the dough into a flat disk so that the dough doesn’t appear crumbly at all. Refrigerate for 2 hours before rolling out.

- Peel, core, and slice the apples uniformly. If the apples aren’t sliced evenly, they won’t cook evenly.
- Place the apples, 1/3 cup water, 2 tbsp lemon juice, 1/3 cup sugar, and 1 tbsp ground cinnamon in a large saucepan and bring to a boil. When the water is boiling, reduce the heat to medium-low and cook for approximately 10 to 15 minutes, or until the apples are just fork tender.

- Prepare the vegan pie crust and chill it for at least an hour. I make the dough the night before and let it sit in the fridge overnight. The pie crust recipe makes 2 crusts. We'll use both in this recipe.
- Prepare the vegan chicken. Make sure the vegan chicken is thawed, then cut it into bite-size pieces. Some vegan chicken will need to be cooked in a skillet, so it's not mushy.
- Cook the butter and onions in a large skillet over medium heat. Stir occasionally and cook the onions until tender, around 5 minutes. Then add the garlic and cook for another minute.
- In a bowl, stir together the flour, salt, and spices. Stir this into the butter mixture along with the broth, and soy milk. Cook and stir until you've worked out the lumps in the mixture.

- This technique, traditionally used when making puff pastry and croissants, makes the dough more pliable and flaky. You can skip it if this intimidates you, but the dough will be more brittle.
- Remove the dough from the fridge, unwrap, and place on a lightly floured piece of parchment. Roll out the dough into a 12" circle, dusting the dough lightly with cassava flour as needed, rotating and flipping it to prevent it from sticking.
- Position a rack in the lower third of the oven and preheat to 400º. If you have a baking stone, put it on the rack as this will help the bottom of the crust stay crisp. Place the cold crust on a rimmed baking sheet. Fill and bake as directed in your pie recipe, or...
