1 package (6-1/2 ounces) garlic-herb spreadable cheese
3 tablespoons grated Parmesan cheese, divided
30 small fresh mushrooms, stems removed
Thinly sliced fresh basil, optional

Steps:

  • Preheat oven to 400°. In a small bowl, combine spreadable cheese and 2 tablespoons Parmesan cheese; spoon into mushroom caps., Transfer to a foil-lined baking sheet; sprinkle with remaining Parmesan cheese. Bake 10-12 minutes or until lightly browned. Garnish with basil if desired.

6 tablespoons extra-virgin olive oil
1 1/2 pounds whole small button mushrooms, wiped clean
3 tablespoons butter
Gray sea salt
1 tablespoon minced garlic
1 1/2 teaspoons fresh thyme leaves, chopped
2 tablespoons lemon juice
1/2 cup white wine
1 tablespoon chopped parsley leaves

Steps:

  • In a large skillet, heat the oil over high heat. Add the mushrooms. Do not move the mushrooms until they have caramelized on the bottom. If you toss them too soon, they will release their liquid and begin to steam. When the bottoms are caramelized, toss them and continue to cook for about 5 minutes.
  • Add the butter. Cook and toss for 5 minutes, until beautifully browned.
  • Season with salt and add the garlic. Saute another 2 minutes, and add the thyme, lemon juice, and white wine. Cook to evaporate the liquid.
  • Toss in the parsley and serve immediately.

Steps:

  • In a small bowl combine garlic-herb spread and two tablespoons Parmesan cheese. Spoon into mushroom caps.
  • Transfer the stuffed mushrooms to a foil-lined baking sheet. Sprinkle with remaining Parmesan cheese. Bake at 400 for 10 to 12 minutes or until lightly browned. Garnish with basil if desired. (2-1/2 dozen)

1 pound button mushrooms, sliced
1 clove garlic, thinly sliced
1 tablespoon red cooking wine
1 tablespoon teriyaki sauce, or more to taste
¼ teaspoon garlic salt, or to taste
freshly ground black pepper to taste

Steps:

  • Heat olive oil and butter in a large saucepan over medium heat. Cook and stir mushrooms, garlic, cooking wine, teriyaki sauce, garlic salt, and black pepper in the hot oil and butter until mushrooms are lightly browned, about 5 minutes. Reduce heat to low and simmer until mushrooms are tender, 5 to 8 more minutes.
