Our home is often filled with family and friends, so I'm always cooking up something. I created this recipe when I was looking for a treat to surprise my husband. -Susan Bettinger, Battle Creek, Michigan

3 tablespoons butter, softened
3 tablespoons sugar
1 large egg white
1/2 teaspoon vanilla extract
1/3 cup all-purpose flour

Steps:

  • Preheat oven to 400°. Write fortunes on small strips of paper (3-1/2x1/4-in.); set aside. Line a baking sheet with parchment. Using a pencil, draw two 3-1/2-in. circles on a sheet of parchment. Place paper, pencil mark down, on a baking sheet; set aside., In a small bowl, beat butter, sugar, egg white and vanilla. Add flour; mix well. Spread 1 tablespoon batter over each circle. Bake 4-5 minutes or until lightly browned., Slide parchment onto a work surface. Cover one cookie with a kitchen towel. Place a fortune in the center of the other cookie; loosen cookie from parchment with a thin spatula. Fold cookie in half over fortune strip so the edges meet; hold edges together for 3 seconds., Place center of cookie over the rim of a glass; gently press ends down to bend cookie in middle. Cool 1 minute before removing to a wire rack. Repeat with second cookie. If cookies become too cool to fold, return to oven to soften for 1 minute. Repeat with remaining batter and fortunes.

3 egg whites
¾ cup white sugar
½ cup butter, melted and cooled
¼ teaspoon vanilla extract
¼ teaspoon almond extract
1 cup all-purpose flour
2 tablespoons water

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets, or line with parchment paper. Have fortunes ready to go on small strips of paper.
  • In a large glass or metal bowl, whip egg whites and sugar on high speed of an electric mixer until frothy, about 2 minutes. Reduce speed to low, and stir in melted butter, vanilla, almond extract, water and flour one at a time, mixing well after each. Consistency should resemble pancake batter. Spoon the batter into 3 inch circles on the prepared baking sheets. Leave room between for spreading.
  • Bake for 5 to 7 minutes in the preheated oven, or until the edges begin to brown slightly. Quickly remove one at a time, place a message in the center, and fold in half. Fold the ends of the half together into a horse shoe shape. If they spring open, place them in a muffin tin to cool until set.

1 egg white
⅛ teaspoon vanilla extract
1 pinch salt
¼ cup unbleached all-purpose flour
¼ cup white sugar

Steps:

  • Preheat oven to 400 degrees F. Butter a cookie sheet. Write fortunes on strips of paper about 4 inches long and 1/2 inch wide. Generously grease 2 cookie sheets.
  • Mix the egg white and vanilla until foamy but not stiff. Sift the flour, salt, and sugar and blend into the egg white mixture.
  • Place teaspoonfuls of the batter at least 4 inches apart on one of the prepared cookie sheets. Tilt the sheet to move the batter into round shapes about 3 inches in diameter. Be careful to make batter as round and even as possible. Do not make too many, because the cookie have to be really hot to form them and once they cool it is too late. Start with 2 or 3 to a sheet and see how many you can do.
  • Bake for 5 minutes or until cookie has turned a golden color 1/2 inch wide around the outer edge of the circle. The center will remain pale. While one sheet is baking, prepare the other.
  • Remove from oven and quickly move cookie with a wide spatula and place upside down on a wooden board. Quickly place the fortune on the cookie, close to the middle and fold the cookie in half. Place the folded edge across the rim of a measuring cup and pull the pointed edges down, one on the inside of the cup and one on the outside. Place folded cookies into the cups of a muffin tin or egg carton to hold their shape until firm.

This is a great recipe that came from the Food Network, so I wanted to post it here (I was looking for a really good fortune cookie recipe on here). One thing, I did find that when I used the recommended tablespoon in putting the batter on the cookie sheet, the centers of the cookies were too "doughy" and the edges were golden brown, and the cookies broke when I tried to bend them into the fortune cookie shape. So, using a rubber bowl scraper, I put a small amount on the cookie sheet and just swirled it around until it was a nice, thin layer, about 3-inches in diameter. This worked perfectly! But, when the recipe says only make a few at a time, it's no joke! These harden quickly and unless you've got others in the kitchen to help or you move with lightning speed, I suggest only making 2 or 3 at a time.

  • You will also need: 2 1/2 x 1/2-inch fortune strips.
  • Preheat oven to 350°F.
  • Grease a cookie sheet thoroughly.
  • Whip the egg whites on low speed until light and foamy.
  • Blend in the sugar and continue to beat until soft peaks form.
  • Pour in the melted butter, flour, salt, and extracts; mix until well combined.
  • Drop a tablespoon of the batter onto the prepared cookie sheet.
  • Using the back of a spoon, spread the batter evenly into very thin 3-inch rounds.
  • Alternatively, use the lid of a jar with a 3-inch circle punched out as a template, pour the batter in the ring, and remove.
  • Because you must work quickly to shape these cookies, bake just 3 at a time.
  • Bake for about 5-8 minutes or until the edges are a light golden color.
  • Remove the cookies with a spatula and place on a work surface.
  • Lay a fortune in the lower middle of the cookie, and fold in half to make a semi-circle.
  • Bend the edges up toward each other to make a crescent.
  • Drag the crease across the rim of a small measuring cup, with the ends facing down.
  • Cool in mini muffin tins to hold shape until crisp.
  • Repeat with remaining batter.

1/2 cup margarine, softened
1/2 cup light brown sugar, packed
2 eggs, lightly beaten
2 tablespoons flour
3 ounces walnuts, chopped
1/2 tablespoon vanilla
1/3 cup mini chocolate chip
confectioners' sugar

Steps:

  • Beat margarine and sugar until light.
  • Beat in eggs. Add rest of ingredients and mix well.
  • Place batter by small teaspoonfuls far apart on well greased cookie sheet(s). Probably have to do this in 4 batches.
  • Bake at 350 degrees F. for 10 minutes until edges and undersides are well browned. If not adequately browned, it won't roll. Loosen each cookie immediately and roll up while hot.
  • Place rolled up cookies on a napkin lined plate and sprinkle with confectioners sugar when cooled. Do this until process until you use up all the batter.

1 cup all-purpose flour
1 cup confectioners' sugar
1/4 cup milk
1/4 cup butter, melted
2 teaspoons vanilla extract
1 1/2 cups semisweet chocolate chips

Steps:

  • For the cookies: Preheat the oven to 250 degrees F.
  • Whisk the egg whites in a bowl just until mixed. Sift in the flour and the confectioners' sugar and whisk until combined. Slowly incorporate the milk, melted butter, and the vanilla extract. On a well-greased sheet pan or silpat, add tablespoons of batter equally spaced apart from one another. Spread each thin and in a rectangular shape, using the back of a spoon. Bake the wafers just until brown around the edges, about 4 to 8 minutes. With a flexible knife or metal spatula, lift the wafers off the baking sheet while they are still hot. If they cool down, warm them briefly in the oven. Working quickly, curl the hot wafers at once around a pencil. If they harden while shaping, return them to the oven briefly until they soften.
  • For the chocolate: On a low simmer in a double boiler, melt the chocolate chips. Dip the end of each cigar cookie into the chocolate and place on a well-greased cookie sheet to cool. Tuck a fortune message into the inside of each of the cookies.

HAZELNUT FORTUNE COOKIES

1 teaspoon hazelnut extract
1-ounce hazelnut paste
1/4 cup sugar
1/4 cup all-purpose flour
3 tablespoons butter, melted but cooled
1 cup chocolate, melted
1/2 cup hazelnuts, chopped

Steps:

  • Preheat oven to 375 degrees F.
  • Lightly whip the egg white, hazelnut extract, hazelnut paste, and sugar. Sift the flour and mix into the egg white until smooth. Stir in the butter.
  • Using a template 3 1/2-inch round, spread the batter on a sheet pan lined with a silpat. (If you don't have a template, you can drop 2 teaspoons of batter onto the sheet pan and spread evenly into a 3 1/2-inch circle.)
  • Bake for approximately 5 minutes until the edges become brown. Remove from the oven.
  • One at a time and working quickly, turn a cookie over, place a fortune in the center of the cookie. Draw opposite edges towards the center, slightly overlapping and then fold the ends downwards, in half. You can fold over the rim of a bowl. Cookies will crisp as they cool.
  • When cool, coat the outer rim with melted chocolate and rolled in chopped hazelnuts.

1/4 cup sugar
1/4 teaspoon salt

1/4 cup egg whites

1 teaspoon vanilla extract

Steps:

  • Write individual fortunes on strips of paper. Sift flour, cornstarch, sugar, and salt into a medium bowl. Add oil, egg whites, water, and vanilla extract; stir until smooth. Preheat oven to 300 degrees. Bake 1 cookie at a time. Drop 1/4 cup batter onto an oiled baking sheet; spread evenly to make an 8-inch circle. Bake until cookie turns light golden brown, 12 to 14 minutes. (Don't allow edges to become overly brown or cookie will crack when folded.) Using pot holders to protect your hands, immediately remove hot, pliable cookie from baking sheet and place a fortune in center. Fold cookie in half to form a half-moon, then grasp ends of cookie and gently pull together to crease. Hold folded cookie for a minute to maintain its shape as it cools and becomes crisp. Repeat with remaining batter.

Steps:

  • Preheat the oven to 375 degrees F.
  • In a medium bowl, whisk together the sugar, flour, salt and cardamom. In a separate medium bowl, whisk together the extracts and egg whites. Sift in the dry ingredients and whisk it -- whisk it good -- until you have a smooth batter.
  • Grease a baking sheet with cooking spray. Spread 1 tablespoon of batter into a 3-inch circle on the baking sheet (it helps to use the lid of a mason jar as a guide); make 2 more circles on the baking sheet (only bake 3 circles at a time so you have time to mold the cookies before they cool). Bake until the edges are brown, 5 to 7 minutes.
  • Working quickly (but carefully, so as to not burn your fingers), use a spatula to flip a circle over. Place a fortune in the center, fold the circle in half and then pick it up and bend the folded side over the edge of a bowl to form a fortune cookie shape. Place in a muffin tin so the shape holds while it cools. Repeat with the remaining circles. Bake and mold the remaining batches.

1 cup simple syrup
2 sheets gelatin, sponged
2 egg whites, room temperature
6 tablespoons butter
1/4 cup sugar
1/2 all-purpose flour, sifted
1/4 teaspoon vanilla extract

Steps:

  • To make the Granita: In a bowl whisk the liquids together. Take off 1/2 cup of the liquid, add the sponged gelatin and warm it to melt the gelatin. Combine all the liquids and pour into an 8 by 8-inch pan. Freeze overnight. Scrape the next day into a freezer container.
  • Preheat the oven to 350 degrees F.
  • To make the Fortune Cookie: Cut a stencil out of a plastic coffee can lid in the shape of a 6-inch disk.
  • Whip the egg whites until stiff and chill.
  • In a mixer, cream the butter; then add the sugar and continue mixing. Add the flour and blend in; then add the vanilla and blend again. Add the chilled egg whites and mix on low until well incorporated and the batter is smooth.
  • With a small offset spatula, spread batter through the stencil onto a silicone baking mat- or parchment paper-lined cookie sheet, about 4 per cookie sheet. Bake until light golden brown, 7 to 8 minutes.
  • Quickly remove the pan from the oven and 1 at a time place a fortune across the center with a bit hanging out. Fold cookie circle in half over fortune; then in half again with flaps only slightly overlapping each other, bringing the opposing sides together and pinch. Let cool. Serve next to a frozen bowl of granita.
