- Heat 1/4 cup olive oil in large skillet over medium heat. Add green onions, shredded carrots, eggs, ginger paste, minced garlic, and salt. Stir gently until eggs are cooked through, 4 to 5 minutes. Transfer to a bowl.

- Heat the oil in a wok. Add the ginger and garlic, then stir-fry briefly until just coloured. Add the prawns and the whites of the spring onions, and cook for a further 3 mins. Pour in the beaten egg, let it set for a couple of secs, then break it up and stir well to scramble. Add the cooked rice and stir-fry everything together for 10 mins. Add the rest of the spring onions, rice wine and soy, then toss everything together well. Serve immediately.

GINGER FRIED RICE
This recipe comes to The Times from the fertile mind of the chef Jean-Georges Vongerichten. Like all fried-rice dishes it begins with leftover rice (freshly cooked rice is too moist to fry well). It's jasmine rice here, but white from Chinese takeout works nearly as well and is more convenient. Perhaps unsurprisingly - this is a chef's recipe, after all - separate cooking processes are called for: ginger and garlic are crisped, leeks softened, rice and eggs fried. But no step takes more than a few minutes, and the results are absolutely worth the effort.

- In a large skillet, heat 1/4 cup peanut oil over medium heat. Add garlic and ginger and cook, stirring occasionally, until crisp and brown. With a slotted spoon, transfer to paper towels and salt lightly.
- Reduce heat under skillet to medium-low and add 2 tablespoons peanut oil and leeks. Cook about 10 minutes, stirring occasionally, until very tender but not browned. Season lightly with salt.
- Raise heat to medium and add rice. Cook, stirring well, until heated through. Season to taste with salt.
- In a nonstick skillet, fry eggs in remaining peanut oil, sunny-side-up, until edges are set but yolk is still runny.

- To save time, prepare and cook the rice first, since it typically takes about 30-45 minutes until it's ready.
- Cut the chicken in three stages:
- Add salt, cornstarch, and water to the bowl.
- Cut the ginger into thin slices, then thin strips, and finally into small bits. You don't have to peel the ginger skin beforehand as long as you wash it thoroughly.
- Chop the green onion into small pieces, about 1/2 to 1 cm long.
- Crack the eggs into a bowl and add salt. Using a chopstick or fork, mix the eggs until the yolk is evenly mixed.
- Once your rice is about 4 to 5 minutes away from being ready, set your stove to its highest heat setting.
- Heat up the wok again and add oil. Once the wok is hot enough, add the chicken and stir it around for about 60 seconds. You don't need to cook the chicken fully here.
- Move the chicken to one side of the wok, and add the ginger. Stir it around separately for a few seconds, and then mix it up with the chicken.
- Hopefully your rice is ready by now! Add the rice to the wok, and spread it out with a spatula and chopsticks. We don't want any clumps of rice here.
- Add salt, and mix it around the wok for about 30 seconds. Then, add the eggs and gently mix it all together for another 2 minutes.
- Add the green onion and mix it around the wok for about a minute.
- Start to fluff the rice. You can do this by tossing the rice in the wok, or by repeatedly lifting it upwards with your spatula and chopsticks.
FRIED RICE WITH EGG
It's simple to change this dish by adding two cups of cooked diced shrimp or chicken instead of egg, says Wilson. If you have a Chinese grocery store where you live, you can sometimes get a nice piece of seasoned and cooked roast pork, already cut into little pieces, and then you can have "roast pork and fried rice," which he knows is a real American favorite.

- At least 1 day before you plan to make the fried rice, place the rinsed rice in a heavy, medium-sized saucepan. Add 2 cups of cold water and salt, to taste. Bring to a boil over high heat. Cover, and cook at a gentle boil until the water has cooked down to the level of the rice. With a spoon (not a fork), stir the rice well. Cover, and reduce the heat to low. Continue to cook for about 15 minutes, or until the rice is tender. Fluff with a fork. Cool to room temperature before covering and refrigerating for 24 hours.
- Break up any clumps of the cold rice with your fingers and set aside. In a small bowl, stir together the oyster sauce and soy sauce and set aside.
- Coat a large, nonstick skillet with nonstick vegetable spray and set over medium-high heat. When the skillet is hot, add the eggs, swirling them around to make sure they coat the whole bottom of the pan. Cook, without stirring, and adjusting the heat as necessary, until the eggs are firm and cooked through but not yet starting to brown, lifting the skillet and tilting it so that the eggs cook evenly. Slide the eggs onto a plate and when they have cooled, cut into small pieces and set aside.
- Return the skillet to the burner and heat the oil over high heat. When it is hot, add the peas and scallions, and cook, stirring constantly, until the scallions are limp, about 1 minute. Stir in the rice, sauce mixture, eggs and roast pork until well mixed. Continue to cook, stirring, until the rice is heated through, 1 to 2 minutes. Plate and drizzle with sesame oil, to taste.

GINGER FRIED RICE
This looked awfully good, simple, almost perfect! I made this last night and my BF and I were very pleased with the outcome. If possible, use leftover rice as fresh rice will be too moist. Leftover rice from Chinese takeout works well too. After making the dish the amount of garlic didn't seem excessive to me, but use your judgment.
