FRUIT COBBLER
This is a fantastic American recipe equivalent to our crumble. It's particularly good with strawberries and rhubarb, but you can use any fruit combo you like; about 680g/1 1/2 pounds of fruit should do it.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C/gas 5). Put the fruit into a pan with the sugar and the balsamic vinegar. Put the pan over the heat, and cook gently, until the juices begin to run from the berries. Pour into an ovenproof dish.
- Meanwhile make the topping. Rub the cold butter into the flour until the mixture resembles fine bread crumbs. Add the sugar and salt, stir well, and then add the buttermilk to form a loose, scone-type mixture. Roll balls of the dough and place randomly over the hot fruit. Sprinkle with a little sugar, and bake in the oven for 30 minutes until golden brown. Serve with vanilla ice cream.
FRUIT COBBLER
Delicious fruit cobbler thats incredibly simple & quick & guaranteed to impress

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Once oven temperature is reached melt butter in a 9x13 inch baking pan.
- In a medium bowl stir together the flour, sugar and milk; (if batter is a little lumpy thats fine) Pour mixture on top of melted butter in baking pan. DO NOT mix butter and mixture together.
- Mix apple & raspberries & drop into the middle of the batter; if more crust is desired add less fruit. Bake in preheated oven for one hour or until golden brown
- *Other combinations of fruit work fine, blackberries in particular.
PALEO BERRY COMPOTE OR COBBLER
Steps:
- Place berries in a saucepan over medium heat. Cover saucepan and cook until berries soften and begin to break apart, about 5 minutes. If berries look dry when cooking, add 1 teaspoon of water to the saucepan. Remove from heat.
- Whisk coconut milk and cinnamon together in a bowl.
- Transfer berries to a bowl; pour coconut milk mixture over berries and sprinkle almond meal on top.

FRUIT COBBLER - PALEO AND THERMOMIX
Any fruit will do - berries, apples, whatever you like. I wrote the recipe for berries because I had to choose, but I've made it often with apples and peaches as well. This recipe is adapted for the Thermomix from balancedbites.com

Steps:
- Preheat the oven to 375ºF.
- Place walnuts in Thermomix Bowl. Set lid to closed position and hit turbo 2 or 3 times to chop the nuts. Tip out and set aside.
- Place coconut oil in TMbowl. Melt at 50º/speed 1.5/2 minutes. In summer you may not need to melt the oil at all - in winter it may take longer than 2 minutes - just make sure it is completely liquified.
- Add the almond meal, maple syrup, cinnamon and salt to the melted oil. Mix 15 seconds/speed 4.
- Add the chopped walnuts to the TMbowl and mix the whole lot together 10 seconds/speed 4.
- Place the fruit in the bottom of a 9x9 baking pan. Squeeze the lemon over all. Sprinkle on the topping. Don't worry about trying to cover every bit of fruit.
- Bake 20-30 minutes - or until crumbly and golden brown.

FRUIT COBBLER
My son took first place in a baking contest with this one. Serve warm or cold plain, with ice cream or whipped cream. When I use apples, a sprinkle of cinnamon or apple pie spice makes a nice touch. In place of peaches, try using apples or plums.

- Melt butter or margarine in a 9 x 13 inch pan. Set aside to cool.
- Stir together flour, sugar, salt, and baking powder. Mix in milk and vanilla. Pour batter over melted butter. DO NOT MIX OR STIR. Spoon fruit with juice over the batter. DO NOT MIX OR STIR.
- Bake at 350 degrees F (175 degrees C) for 55 minutes.
