1 cup hazelnuts

Steps:

  • Place apricots and hazelnuts in food processor. Cover and process, using quick on-and-off motions, until finely chopped. Place mixture in large bowl. Stir in cracker crumbs and milk.
  • Shape mixture into 1-inch balls. Cover tightly and store in refrigerator up to 2 weeks or freeze up to 2 months.

200g butter
175g soft brown sugar
2 tbsp thin-cut marmalade
2 tsp ground mixed spice
1 tsp ground cinnamon
1 tsp ground ginger
175g porridge oats
200g self-raising flour , plus extra for dusting
2 tsp baking powder
175g dried fruit - try chopped glacé cherries, apricots and sultanas
100g nuts , chopped (we used hazelnuts)

Steps:

  • Heat oven to 160C/140C fan/gas 3. Cream the butter and sugar until light and fluffy. Mix the marmalade with 2 tbsp boiling water. Stir into the creamed mix, then add the spices, oats, flour and baking powder. Mix in the fruit and nuts.
  • Dust your hands and surface with flour and roll the dough into a long sausage shape. Cut into about 20 discs. Place on a baking tray lined with baking parchment, spaced out as they will spread. Bake for about 25 mins until golden brown.

¾ cup butter
2 ripe bananas
1 egg
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon ground nutmeg
¾ teaspoon ground cinnamon
1 cup rolled oats
½ cup chopped walnuts

Steps:

  • Cream the butter or margarine until light and fluffy. Add the bananas and mix well. Beat in the eggs and vanilla.
  • Sift together the flour, baking soda, salt, ground nutmeg and ground cinnamon. Add the dry mixture to the creamed mixture and mix well. Stir in the oats and the chopped nuts. Cover and chill dough for 1 hour.
  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease baking sheets.
  • Drop chilled teaspoon-sized rounds of cookie dough onto the prepared baking sheet. Bake in the preheated oven for 10 to 12 minutes.

1-3/4 cups flour
1/2 tsp. baking powder
3/4 cup margarine, softened
1/4 cup granulated sugar substitute
1 egg
1 tsp. vanilla
1 oz. BAKER'S White Chocolate

Steps:

  • Heat oven to 400°F.
  • Mix dry gelatin mix, flour and baking powder. Beat margarine in large bowl with mixer until creamy. Add granulated sugar substitute; beat until light and fluffy. Blend in egg and vanilla. Gradually add flour mixture, beating well after each addition.
  • Shape dough into 36 (1-inch) balls. Place, 2 inches apart, on baking sheets. Flatten with bottom of clean glass.
  • Bake 6 to 8 min. or until edges are lightly browned. Cool on baking sheets 1 min. Remove to wire racks; cool completely.
  • Melt chocolate as directed on package; drizzle over cookies. Let stand until glaze is firm.

2 cups semisweet chocolate morsels or 1 (12 ounce) package semisweet chocolate morsels

Steps:

  • PREHEAT oven to 375°F.
  • COMBINE flour, baking soda and salt in small bowl.
  • Beat butter, coconut palm sugar, splenda and vanilla extract in large mixer bowl until creamy.

6 ounces cream cheese, softened
Sugar
8 ounces white candy coating
2 tablespoons shortening
1/8 teaspoon lemon extract, optional

Steps:

  • Place cereal in a food processor; process until finely crushed. Add cream cheese; process until blended. Shape into 1-in. balls. Coat bottom of a glass with cooking spray, then dip in sugar. Press cookies with bottom of glass to flatten to 1/4-in. thickness; re-dip glass in sugar as needed. These are a slight variation of a lovely cookie from a great diabetic cookbook called "Sweet & Natural: Desserts without sugar, honey, molasses or artificial sweetner" by Janet Warrington. I found this cookbook at a thrift store and have been meaning to try something from it. This is my first try. The original recipe lists carob powder as an optional ingredient. I decided to use it, but had to use cocoa powder as that was what I had. So feel free to leave it off. When you look at these cooled cookies the dates look like chocolate chips and my kids were slightly dissapointed when they realized they were fruit, but the enjoyed these a lot. A nice little fruity cookie which is quite sweet without any added sugar. Also, if you have over-ripe bananas which have not been frozen feel free to use those. I just have a bunch of bananas in my freezer.

2 bananas, frozen
2 egg whites
1 cup dates, chopped or ground
1/2 cup raisins
1 1/2 cups rolled oats (I used quick cooking)
1 tablespoon cocoa powder (optional)

Steps:

  • Preheat the oven to 350 degrees.
  • Defrost the bananas so they are soft and mash them in a bowl, leaving some little chunks.
  • Into the bowl add the egg whites and mix well.
  • Then add the dates and the raisins and mix well or until the fruit is coated with the egg mixture.
  • Add the oatmeal and the cocoa powder if you are using it.
  • Let the bowl sit for 10 minutes or until the oatmeal absorbs all the liquid.
  • Spray baking pans with cooking spray.
  • Using 2 teaspoons, spoon the mixture onto the baking pan.
  • With the back of one of the spoons, smush the mixture down so it is somewhat flat.
  • Bake the cookies for 20-25 minutes or until the edges are getting golden brown.
  • Remove the cookies to a cooling rack.
