Sausage gravy was always one of my favorite meals for breakfast, delicious but so fattening! Now that I am cooking for my family, I'm trying healthier versions of my favorite recipes. Enjoy!

3 tablespoons salted butter
1 cup diced onion
½ pound ground turkey sausage
½ teaspoon ground black pepper
¼ teaspoon salt
¼ teaspoon garlic powder
¼ teaspoon red pepper flakes
3 tablespoons all-purpose flour
2 cups whole milk

Steps:

  • Melt butter in a skillet over medium-low heat; stir in onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Add sausage, pepper, salt, garlic powder, and red pepper flakes. Cook and stir until sausage is browned and crumbly, about 10 minutes.
  • Stir in flour until well blended and cook for about 2 minutes. Increase heat to medium and slowly add milk, stirring as you go. Cook and stir until gravy thickens and is heated through, about 5 minutes.

My mom substituted turkey sausage, egg beaters and low fat cheddar to reduce the fat. We have this dish every Christmas morning with croissants.

1 pound ground turkey sausage
4 large eggs eggs, lightly beaten
4 medium (4-1/8" long)s green onions, finely chopped
1 (16 ounce) package frozen hash brown potatoes
½ cup milk
1 ½ cups shredded Cheddar cheese

Steps:

  • Place turkey sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, stir together eggs, green onions, hash browns, milk, cheddar cheese and cooked sausage. Pour mixture into a 9x13 inch baking pan.
  • Bake in preheated oven for 60 minutes.

1 pound bulk turkey sausage
2 cups baking mix
1 ½ cups shredded sharp Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray.
  • Combine turkey sausage, baking mix, and shredded Cheddar cheese in a large bowl and mix until thoroughly combined. Roll mixture into approximately 30 quarter-sized balls and place on the prepared baking sheet.
  • Bake until golden brown and cooked through, 10 to 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Here's what you need: cheddar cheese, turkey breast deli meat, crackers, cucumber, clementine, plastic water bottle

3 slices cheddar cheese
2 slices turkey breast deli meat
6 crackers
6 spears cucumber
1 clementine
1 plastic water bottle, frozen

Steps:

  • Use a cookie cutter to cut out shapes in the cheese and turkey.
  • Using cupcake liners to separate, place cheese, turkey and crackers in the bento box. In one of the other compartments, place the cucumber spears.
  • Carefully, slice the skin of a clementine in two half circles on either side of the navel. Then, make 3 cuts within the inside of those half circles to make tentacles. Repeat on the other side and separate the skin from the fruit to make it look like a little octopus.
  • Place in bento box.
  • Pack bento box in a lunch box with a frozen water bottle to keep everything cold.
  • Enjoy!
