BAKED GOLDEN GARLIC CHICKEN



Baked Golden Garlic Chicken image

This is a warm, comforting baked chicken dish with a golden, garlicky crunch. The curry powder works unexpectedly well with the Parmesan cheese, and the dish is particularly good with buttered egg noodles and a crisp salad. Prep time includes marinating in the fridge.

1 egg yolk
4 cloves garlic, chopped
2 large boneless skinless chicken breasts
6 tablespoons butter
1 cup dry breadcrumbs (I prefer unseasoned Progresso crumbs)
1/2-1 teaspoon curry powder
1 tablespoon garlic powder
1 tablespoon black pepper
1/2 tablespoon salt
1 cup parmesan cheese
extra butter, for top of chicken

Steps:

  • Beat egg yolk and add garlic and curry powder.
  • Place chicken in egg mixture in a glass dish and turn to coat.
  • Cover and refrigerate overnight.
  • Preheat oven to 400 degrees F.
  • Melt 6 tbsp.
  • butter in the bottom of an 8x8-inch baking dish.
  • Combine bread crumbs, Parmesan cheese, garlic powder, salt and pepper.
  • Dip and coat marinated chicken in crumb mixture and place in baking dish.
  • Sprinkle more of the remaining crumb mixture onto the chicken breasts (you won't use it all- unless you want to!) Bake for 20 minutes on each side, or until chicken is no longer pink inside.
  • Remove from oven and top each chicken breast with two thin pats of butter; uncover and bake 5 to 10 minutes longer.
  • Serve with a smile!

This is a deliciously rich mashed potato recipe with a subtle garlic flavor. Because of the richness, the serving sizes are smaller. The recipe is very loosely based on a recipe by Anne Burrell, a chef on the Food Network.

6 medium yukon gold potatoes, peeled and quartered
1 large garlic clove (or 2 smaller cloves)
kosher salt
1/2 cup heavy cream
3 tablespoons butter

Steps:

  • Place the potatoes and garlic in a medium sauce pan and cover with cold water. Add a generous amount of salt to the pan (I use 1 - 2 tbsp). Bring to a boil and cook until the potatoes are tender (about 20 minutes). Drain the potatoes and garlic. Mash them with a potato masher or pass through a ricer or food mill. Important - don't use a food processor or mixer if you don't want a pasty result.
  • While mashing the potatoes, heat the cream for a few seconds in the microwave until it's warm. Add about a third of the cream to the potatoes along with a tbsp of butter. Stir until incorporated. Repeat the process two more times.
  • Taste for seasoning and add more salt if necessary. If you need to keep them warm until the rest of the meal is finished, cover and place in a 200 degree oven.

1 to 2 garlic cloves, minced
1 teaspoon dried basil
1 loaf (1 pound) French bread, halved lengthwise

Steps:

  • Combine the butter, cheese, garlic and basil; spread over cut sides of bread. Place on an ungreased baking sheet. Broil 4 in. from the heat until golden brown, about 3 minutes. Cut into 3-in. pieces.

I found this recipe years ago in a magazine and thought it was great...over the years I have altered it a bit for myself (I just spread the butter mixture on the bread and then sprinkle the cheddar cheese) but this is how I had copied it down. It was so good I thought everyone should have it! Enjoy!

3 cups shredded cheddar cheese
1/2 cup grated parmesan cheese
3 green onions, chopped
1 teaspoon italian seasoning
1 -2 garlic clove, minced
1 loaf French bread

Steps:

  • In a small mixing bowl, beat butter and mayonnaise until blended.
  • Stir in cheeses, onions, Italian seasoning and garlic.
  • Spread over cut sides of bread and place on ungreased baking sheet.
  • Broil 4-6 inches from the heat 3-5 minutes or until topping is lightly browned and bubbly.

5 1/2-6 teaspoons vegetable shortening
1 cup all-purpose flour
2 teaspoons bouquet garni, finely crushed
1 teaspoon salt
1/4 teaspoon baking powder
4 eggs
1 cup milk
12 garlic cloves, crushed in a garlic press

Steps:

  • Position rack in lower half of oven and preheat to 450 degrees.
  • Place 1/2 teaspoon shortening in each cup of a heavy-duty muffin pan or cast iron popover pan.
  • Heat in oven until shortening is almost smoking, about 5 to 10 minutes.
  • Meanwhile, sift flour, seasoning, salt and baking powder in medium bowl.
  • Beat eggs in large bowl with electric mixer until just foamy.
  • Add milk and stir through.
  • Add flour mixture to eggs and milk and mix until smooth;stir in crushed garlic.
  • Fill popover cups about 2/3 full.
  • Bake until popovers are puffed and tops are golden brown, about 20 to 25 minutes.
  • Do not open oven door for the first 20 minutes.
  • Serve popovers immediately.
