TURKEY MEATLOAF

Steps:
- Preheat oven to 375 degrees F.
- Place spinach in a microwave-safe bowl. Defrost in the microwave for about 5 minutes. Let rest. Once cooled place spinach in a double layer of paper towels and squeeze out all of the excess liquid possible.
- To a large mixing bowl, add the ground turkey, spinach, milk, bread crumbs, onion soup mix, 1 1/2 cups cheese, egg, Worcestershire sauce, bell pepper, garlic powder, salt, and pepper. Mix everything together until well combined.
- Spray an 8-inch x 8-inch glass baking dish with non-stick cooking spray.
- Put the turkey mixture in the pan and spread it into an even layer.
- Sprinkle the remaining 1/2 cup of cheese on top of the meatloaf. Pour the tomato sauce on top of the cheese, and sprinkle the diced onion on top of the tomato sauce.
- Bake for 1 hour. If the top of your meatloaf begins to brown too quickly, carefully place a piece of foil over the top and secure loosely.
- Remove meatloaf from the oven and let cool for 10 minutes before cutting into 6 slices.

- Mix all save 1/3 can of tomato sauce, and spread into Pyrex or stone loaf pan. Top with remainder tomato sauce. Cover with plastic wrap. Microwave 15-20 minutes on high, rotate dish every 5 minutes if not on carousel, until temperature is 170°f. Let stand 5 minutes before slicing into 1 inch thick portions.

MY MICROWAVE TURKEY MEATLOAF
The original recipe came with my first microwave and was made with ground beef. I made it originally because my Mom was working and I was the oldest and still at home. My Dad loved it and I liked it too when I hadn't really liked meatloaf before. When I got married I made it for my husband and he loved it as well. Then we started eating healthier, so I altered it to ground turkey instead. I've tried to increase this recipe, but for the microwave it doesn't really work. Some people like it made in a convection oven. Keep in mind you have to let the meatloaf stand or it won't be fully cooked.

- Mix crushed saltines, egg. In a separate bowl mix mustard, 1 1/2 teaspoon brown sugar and 1/2 can tomato sauce. Add 1/2 (about 10 small spoons full) of the tomato mixture to the saltine mixture and mix well. Add the ground turkey and mix well. Put in a microwave safe bowl with a glass in the center. Top with 1 teaspoon chopped onion, mix all remaining tomato sauce together with the leftover 1/2 teaspoon brown sugar. Spoon a little tomato sauce mixture over top of the meatloaf, just until covered. Cover with waxed paper. Cook about 5 minutes 45 seconds. Let stand for 10 minutes. Times will vary depending on microwave.

GRANDMA'S MEATLOAF WITH OATS
Grandma's meatloaf recipe was the best I have ever tried to make. My previous attempts to create a healthy, yet good tasting meatloaf recipe failed repeatedly because each attempt resulted in a dry loaf. Not so with Grandma's recipe! I added more seasonings and scaled her recipe up a bit so 2 full pounds of beef can be used and a whole can of tomato sauce (instead of a partial can). Plus beef is usually sold in 1-pound packages, so assembly time is reduced.

- Preheat the oven to 350 degrees F (175 degrees C).
- Mix together ground beef, oats, tomato sauce, eggs, onion, garlic, salt, and pepper until well combined. Press into a 9x5-inch loaf pan.
- Bake in the preheated oven until an instant-read thermometer inserted into the center reads at least 160 degrees F (71 degrees C), about 1 hour.
- Remove from the oven and spread ketchup over top. Serve with additional ketchup.

- Combine first 8 ingredients in a bowl and mix with hands until well mixed.
- Pat into a 9 x 5 loaf pan.
- Cook in microwave on full power 6 minutes.

GRANDMA'S FAMOUS MEATLOAF WITH SALTINES
This is the recipe my grandmother used to make her meatloaf. Most notably it doesn't have any sort of sauce coating the top as is called for in many meatloaf recipes. My family enjoys it this way but I'm relatively certain that any standard meatloaf sauce would do if you want one.

- Mix all together; I generally use my hands.
- Form mixture into a loaf shape.
- Put in a baking dish (I use a pie plate).
- Bake at 350 for 1 hour.
- NOTE: I always put a little water in my pan. I've never done it any other way, so I don't know what would result if you don't.

- You can either pour the tomato juice or ketchup on top before baking, or apply the sauce to the top of the meat loaf 10 minutes before it is done.

- Pre heat oven to 350 degrees.
- Spray a 9 x 5 inch loaf pan with non stick cooking spray.
- Stir beef, eggs, onion, ketchup, salt and pepper, oatmeal, 1/2 of tomato soup, and 1 Tablespoon Worcestershire sauce with hands (it really is easier that way).
- Mold and put into loaf pan.
- Stir brown sugar, rest of Worcestershire sauce, and rest of soup and pour over top of loaf.

- Preheat oven to 350 degrees. Line a rimmed baking sheet with parchment or spray with cooking spray.
- In a medium skillet over medium-low heat, cook the onions, olive oil, salt, pepper and thyme until translucent (about 10 minutes). Add Worcestershire sauce, chicken broth, and tomato paste. Mix well, and cool to room temperature.
