POORMAN'S BREAKFAST SKILLET

When I was growing up and when we didn't have much money, my Mom would make this for our Breakfast. It was't fancy, but it was good and filled our bellies. To make this even heartier, she would serve this on the side Recipe #141251.Now this was a meal that would stay with you :)The time for peeling the potatoes is included in the prep time.If you like you can add more meat.The amount of salt and pepper you use is up to you. 1 1/2 cups peeled peeled washed and thinly sliced russet potatoes
1/8 cup of all- vegetable shortening (PLEASE DO NOT USE ANY OIL )
1/8 cup of chopped sweet onion (optional)
1 1/2-2 ounces diced Spam or 1 1/2-2 ounces bologna
3 eggs, beaten well
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Melt shortening in a 8 inch cast iron skillet over medium heat.
  • When shortening is hot but not smoking, add potatoes and onions ( if using )sprinkle with desired amount of salt and pepper.
  • Cover with lid and cook potatoes until slightly softened, about 10 minutes.
  • Remove lid, add meat and turn mixture over.
  • Cover with lid and cook about 10 more minutes.
  • Remove lid and cook until potatoes are almost browned.
  • Push potatoes mixture to one side, and add eggs.
  • Scramble eggs until desired doneness is reached.
  • Just before eggs are cooked, push potato mixture into the eggs, and finish cooking eggs.
  • Eat and ENJOY :).

This is an awesome recipe that I got from my coworker. It can be modified in many ways, including for the slow cooker. It's a simple meal of things you often already have on hand that really sticks to the bones, and it can also be a fun way to use up some leftovers.

1 pound ground beef
salt and ground black pepper to taste
1 pinch garlic powder, or to taste
1 pinch onion powder, or to taste
1 (10.75 ounce) can cream of mushroom soup
2 (15 ounce) cans green beans, drained
5 cups mashed potatoes
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook and stir ground beef in a large skillet over medium heat until browned and crumbly, about 10 minutes; season with salt, black pepper, garlic powder, and onion powder. Drain excess grease. Stir cream of mushroom soup and green beans into ground beef and bring to a simmer.
  • Spread ground beef mixture into a 9x13-inch casserole dish. Spread mashed potatoes evenly over ground beef mixture. Sprinkle Cheddar cheese over the top.
  • Bake in the preheated oven until heated through, about 20 minutes.

3 pounds ground beef
25 saltine crackers, crushed
1 cup milk
½ teaspoon black pepper
½ teaspoon salt
½ teaspoon garlic powder
½ teaspoon Italian seasoning
3 (10.75 ounce) cans condensed cream of mushroom soup
1 (8 ounce) can mushrooms, drained

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix together the ground beef, crackers, milk, pepper, salt, garlic powder, and Italian seasoning. Form 6 or 8 large beef patties, and place in a 9x13 inch baking dish, or other shallow casserole dish. Pour the condensed soup evenly over the top of the patties, and sprinkle canned mushrooms over the top. Cover the pan with a lid or aluminum foil.
  • Bake for about 45 minutes in the preheated oven, or until beef patties are well done.

Roasted turkey drippings
Reduced-sodium chicken broth
1 shallot, finely chopped
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon onion powder
1/4 teaspoon poultry seasoning
1/4 teaspoon pepper

Steps:

  • Pour drippings into a 2-cup measuring cup. Skim fat, reserving 1/4 cup. Add enough broth to the drippings to measure 2 cups., Saute shallot in reserved fat in a small saucepan. Stir in the flour, salt, onion powder, poultry seasoning and pepper until blended; cook and stir for 2 minutes or until browned (do not burn). Gradually add broth. Bring to a boil; cook and stir for 2 minutes or until thickened.

I first came across this about 45 yrs ago in some woman's magazine. It was listed as a sort of "poor man's" Eggs Benedict, and included a sauce to top all. The amounts you use are dependent on your pesonal taste and how many people you are feeding. However, I was too impatient to take the time to make the sauce, and just enjoyed the dish so much without it, I never bothered to try it with the sauce! Hope you enjoy it as much as I do. If you feel the need for a sauce try the one from Cookiedog's recipe #208149. I've added it as a note to my recipe for those times I want a quick sauce.

1 English muffin, sandwich size, split, toasted
4 1/4 ounces deviled ham
1 tablespoon mayonnaise
2 eggs

Steps:

  • I always keep a container of deviled ham mixed with mayo in the fridge.
  • The proportion for the mix are up to your taste.
  • I use about 1 heaping tablesoon for each 4.25 oz can of Underwood deviled ham.
  • Toast the halves of one sandwich size English muffin, I use Thomas'.
  • Spread deviled ham mix to cover each half. Fry 2 eggs to your taste. Soft yolks best for this.
  • Put one egg on each English muffin half.
  • and ENJOY!.

Alright, I know this is extremely simple breakfast but I just had to post it. Everytime I make my eggs this way I am brought back to my grandparents house and my Grandpa Campbell making breakfast. He LOVED to make breakfast and this was another meal he made us quite often. I just love it! Simple yes, but simple good too. Now, my Gramps could lay down a mean spread when it was the holidays and breakfast was the only meal you really needed to eat. Because we would have steak and eggs, homemade biscuits w/poorman's gravy, bacon, sausage, homemade applebutter w/fresh baked bread that had been toasted, and a array of other goodies at the table. It was a breakfast fit for Kings & Queens and I remember them fondly and with great pride that I had such amazing grandparents who loved me so. OK, ok....a little too sentimental and I am stopping now since I am tearing up a little. Lovin' the old West Virginia ways of my Grandpa's Cookin'.

4 medium hard boiled eggs (still hot)
4 - pats of butter
- salt and pepper
4 medium homemade biscuits or pillsbury store bought
4 slice(s) fresh made bacon
POORMANS GRAVY
- bacon grease
- butter
- flour
- a little milk too

Steps:

  • Prepare your bisquits and fry up your bacon and boil your eggs. Peel your eggs while still hot and slice them up or mash with a fork like my Grandpa Campbell did.
  • Now, add your pats of butter and generous amount of pepper and a little salt.
  • Make up your gravy with the pan grease from the bacon a little butter and flour mix all together in a pan. Add a little milk if you want your gravy thinner.
  • Get your biscuits and open the up and pour your poormans' gravy over them and add your mashed eggs on top with 2 slices of bacon. You are ready to eat. We only make poorman'ts gravy once a month if that. Try not to enduldge in it too much. :-) But, boy did my Grandpa love his poorman's gravy!!
  • This is normally how I eat my mashed eggs over one slice of low calorie toast. Not quite as yummy but still tasty and of course a pickle to go with it since I'm not getting any bacon! hehe
