GRANNY'S FILLED COOKIES

My granny always made these around Christmas. They are the easiest, best tasting cookies around. Be warned, they are addictive.

Number Of Ingredients 4

3 cups all-purpose flour
1 (8 ounce) package cream cheese, softened
1 cup butter, softened
12 ounces any flavor fruit jam

Steps:

  • Mix cream cheese and butter well in large bowl until well blended and creamy.
  • Add in flour slowly, beating well after each addition. Roll dough into 1-inch balls and wrap well in cellophane. Store in fridge overnight.
  • Preheat oven to 350 degrees F (180 degrees C).
  • Roll out dough balls flat and place a 1/2 teaspoon full of the jam in the center. Fold sides over and place on ungreased cookie sheet.
  • Bake for 13-15 minutes until brown and the jam starts to bubble hard. Cool for 3 minutes and place on cooling rack. Sprinkle with powdered sugar if desired.

1 ¼ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
¼ cup shortening
¾ cup packed brown sugar
1 egg
½ cup sour cream
2 ½ cups dates, pitted and chopped
1 cup walnut halves

Steps:

  • Pre-heat oven to 400 degrees F (205 degrees C). Lightly grease two baking sheets.
  • Combine flour, baking powder, baking soda and salt and set aside.
  • In a large bowl, cream together shortening and brown sugar. Beat in the egg and the sour cream. Gradually blend in flour mixture. Fold in dates.
  • Drop dough by teaspoonfuls 1-1/2 inches apart onto baking sheets. Press a walnut half into the center of each cookie.
  • Bake for 8-10 minutes until lightly colored. Cool cookies on wire racks.

These cookies have two layers of delicious and light sugar cookies sandwiched with date filling. I even loved these as a kid, when dates weren't COOL!

1 1/2 cups dates, cut up fine (You may use a combination of figs, raisins and dates -l/2 cup each- if you prefer)
1/2 cup sugar
1 tablespoon flour
1/2 cup water
2 teaspoons lemon juice
1/2 cup shortening
1 cup sugar
2 eggs
2 tablespoons heavy cream or 2 tablespoons canned milk
1 teaspoon vanilla
2 1/2 cups flour
1/4 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Mix in a sauce pan the dates, sugar and TBSP of flour, water, and lemon juice. Cook this for about 5 minutes on a medium heat, until all are blended well.
  • Mix together the shortening, sugar, and eggs.
  • Stir in the 2 Tbsps. thick cream and l teaspoons vanilla.
  • Sift together the 2 1/2 cups of flour, baking soda and salt. Add to shortening mix to form dough.
  • Chill dough for at least 1 to 2 hours.
  • Roll out dough in thin layers in small batches and cut with round cookie cutter.
  • Put mixture (about a tbsp.) in the center between 2 thin cookies pressed together.
  • Bake at 350 degrees on lightly greased sheet pan for 8-10 minutes or until bottoms are lightly browned.

2 cups brown sugar
1/2 cup water
3 1/2 cups flour
1/8 teaspoon cinnamon

1/2 cup chopped walnuts

Steps:

  • Make the filling first by putting the dates, sugar, and water in a saucepan and cook slowly,stirring constantly till thickened; add the nuts and cool.
  • COOKIE BATTER:.
  • Mix shortening, sugar, and eggs thoroughly.
  • Stir in water and vanilla.
  • Add the flour, salt, soda, and cinnamon; mix well.
  • Drop by teaspoons on ungreased sheet.
  • Place a teaspoon of the date filling on top of the dropped dough and then a tiny bit of dough on top of the filling.
  • Bake till lightly browned and done in a 375 degree oven for 8-10 minutes.

24 pitted whole dates
2 tablespoons butter, softened
1/3 cup packed brown sugar
1 egg yolk
3/4 cup all-purpose flour

1/4 teaspoon baking soda
1/3 cup sour cream
BROWN BUTTER FROSTING:
2 tablespoons butter
3/4 cup confectioners' sugar
1/2 teaspoon vanilla extract
1-1/2 to 2 teaspoons milk

Steps:

  • Cut pecan or walnut halves lengthwise; stuff into dates and set aside. In a bowl, cream butter and brown sugar. Beat in egg yolk. Combine flour, baking powder and baking soda; add to creamed mixture alternately with sour cream. Stir in stuffed dates. , Drop by tablespoonfuls with one date per cookie, onto greased baking sheets. 1 - 8 oz. pkg dates, chopped
1/4 cup(s) sugar
3/4 cup(s) water, warm
COOKIE
1/4 cup(s) butter, unsalted
1/4 cup(s) butter flavor shortening
1 cup(s) dark brown sugar
1 - egg, beaten
1/4 cup(s) water, warm
1 tablespoon(s) vanilla
2 cup(s) flour
3/4 teaspoon(s) baking soda
1/4 teaspoon(s) salt

Steps:

  • Bring dates, water, and sugar to a boil. Reduce heat to low and simmer, stirring frequently, until dates are thickened, about 5 to 7 minutes. Set aside to cool (can be prepared the day before, if needed).
  • Cream butter and sugar with your mixer. Add in the egg, water and vanilla.
  • Stir together the flour, baking soda and salt. Gently blend the dry ingredients to the butter mixture.
  • Preheat oven to 350°F. Lightly grease your cookie sheet or use a silicone baking mat.
  • Drop cookie dough by teaspoonfuls onto a lightly greased cookie sheet or use a silicon mat. Place about 1/2 teaspoon of date mixture on the top of each cookie, then a small dab of cookie dough on top of the date mixture.
  • Bake at 350° for 10 to 12 minutes. Cool 5 minutes on cookie sheet before moving to a cooling rack.
