Grilled Balsamic Chicken with Blue Cheese Sauce image

A tangy balsamic marinade is all you need for easy and flavorful grilled chicken. Serve with cool and creamy blue cheese sauce that doubles as a delicious salad dressing.

1 ½ pounds chicken breasts (boneless and skinless)
⅜ cup balsamic vinegar
¼ cup avocado oil ((or olive oil))
½ lemon (juiced)
¼ teaspoon salt
¼ teaspoon black pepper
½ teaspoon dried basil
½ teaspoon dried parsley
½ teaspoon dried thyme
½ teaspoon garlic (minced)
7 ounces greek yogurt (about ¾ cup)
4-4½ ounces blue cheese
⅜ cup milk
1 teaspoon Worcestershire sauce
1 teaspoon minced garlic
2 teaspoons white wine vinegar
salt and pepper (to taste)

Steps:

  • Add the marinade ingredients to a large zipper-top bag. Shake gently to combine. Add the chicken and seal the bag. Flip the bag over and back to ensure the chicken is evenly coated. Refrigerator for a minimum of 30 minutes or up to 2 hours.
  • Preheat the grill over medium heat. Remove the chicken from the marinade (discard the marinade) and place on the grill. Grill for 7-8 minutes per side or until the internal temperature is 165 degrees. The grilling time will depend on the size and thickness of the chicken breasts.
  • Meanwhile, prepare the blue cheese sauce. Add the sauce ingredients to the bowl of a food processor. Mix until well combined. Refrigerate extra sauce for 4-5 days.

Chicken wings are baked until super crispy and then tossed with a sweet and tangy balsamic-honey glaze and whole cloves of roasted garlic and served with a cool buttermilk-blue cheese sauce for dipping.

1/4 cup sour cream
1/4 cup mayonnaise
2 ounces crumbled blue cheese
2 tablespoons buttermilk
1 tablespoon chopped chives
2 cloves garlic, finely grated
Kosher salt and freshly ground black pepper
2 heads garlic
4 tablespoons olive oil, plus more for oiling the pans
4 pounds split chicken wings, wing tips removed
Kosher salt and freshly ground black pepper
3 tablespoons balsamic vinegar
2 tablespoons honey
2 sprigs thyme
1/2 teaspoon crushed red pepper flakes

Steps:

  • Whisk together the sour cream, mayonnaise, blue cheese, buttermilk, chives and garlic. Season to taste with and pepper. Refrigerate until ready to serve.
  • Preheat the oven to 425 degrees F. Drizzle the garlic heads with 1 tablespoon of oil and wrap in foil. Bake until golden and soft, about 1 1/2 hours.
  • After about a 30 minutes, generously oil 2 rimmed baking sheets. Toss the wings with 2 teaspoons salt and a few grinds of pepper and divide them between the two baking sheets, spreading them in a single layer. Bake until very crispy, about 55 minutes.
  • Squeeze the baked garlic from the heads into a large bowl. Combine the vinegar, honey, thyme, red pepper flakes, 1/3 cup water and 1 teaspoon salt in a small saucepan and bring to a boil over medium-high heat. Reduce the heat slightly and simmer briskly until the liquid becomes syrupy and is thick enough to coat the back of a spoon, about 5 minutes. Remove from the heat and whisk in the remaining 3 tablespoons of oil. Whisk into the bowl with the garlic.
  • Transfer the baked wings to the bowl with the glaze and toss to combine. Serve with the dipping sauce.

Steps:

  • Whisk together the olive oil, balsamic vinegar, garlic, Italian seasoning, salt and pepper.
  • Tenderize the chicken breasts using a meat tenderizer. Then place them in a Ziploc marinade bag, and pour the marinade mixture over top. Close the bag tightly and squish it around to coat the chicken. Place the bag on a plate and put it in the refrigerator to marinate for at least 10 minutes or up to 3 hours.
  • Grill over medium-high heat for 8-10 minutes per side, until no longer pink inside or until the internal temperature reads 160 degrees. This simple digital meat thermometer will change your grilling game forever!
  • Remove the chicken breasts to a platter to rest and cover with a tent of aluminum foil for 10 minutes.

1 cup balsamic vinegar
½ cup olive oil
½ cup honey
2 tablespoons Dijon mustard
4 cloves garlic, minced
2 teaspoons dried basil
2 teaspoons salt
2 teaspoons ground black pepper
4 boneless, skinless chicken breasts

Steps:

  • Whisk together balsamic vinegar, olive oil, honey, Dijon mustard, garlic, basil, salt, and pepper in a small bowl.
  • Combine chicken and 1/2 of the marinade in a resealable plastic bag. Marinate chicken for 1 hour to overnight. Reserve the other 1/2 of the marinade until grilling.
  • Preheat an outdoor grill for medium-high heat, to approximately 400 degrees F (200 degrees C). Lightly oil the grate.
  • Remove chicken from marinade and discard used marinade.
  • Place chicken on the hot grill and baste with reserved marinade. Lower grill to medium and cook until chicken is no longer pink in the center and the juices run clear, 6 to 8 minutes per side. Baste with marinade on each side when flipping chicken. Chicken should reach an internal temperature of 165 degrees F (74 degrees C). Remove chicken from grill, cover, and let rest for 5 to 10 minutes before serving.

Chef Pierre Franey: This dish, like so many I have created over the years, came about by accident. One day while cooking with Craig Claiborne, I asked our kitchen assistant to hand me some cheese, thinking we had some Gruyere. Instead, he handed me a quarter pound of blue cheese. My first reaction was negative, but on second thought I said, "Why not?" I was very pleased with the result.

4 boneless skinless chicken breast halves (about 1 1/2 pounds)
salt, to taste if desired (optional)
fresh ground pepper, to taste
3 tablespoons butter
1 tablespoon flour
1/2 cup canned chicken broth
1/2 cup milk
1/4 cup heavy cream
1/4 lb blue cheese
4 slices of thinly sliced cooked ham (about 1/4 pound)
1/4 cup finely chopped onion
1/4 cup dry white wine

Steps:

  • Sprinkle the breast halves with salt and pepper.
  • Heat 2 tablespoons butter in a heavy skillet large enough to hold the chicken in one layer over medium-high heat. Add the chicken and brown lightly on one side. Turn and continue cooking about 5 minutes or until cooked through. Remove the pieces and keep warm.
  • Meanwhile. Heat the remaining 1 tablespoon of butter in a saucepan and add the flour, stirring rapidly with a wire whisk. Add the broth and milk, and continue stirring rapidly. Add the cream and cook, stirring often, about 5 minutes. Add the cheese and stir until melted.
  • Add the ham slices to the skillet in which the chicken pieces cooked and saute briefly on both sides just enough to heat through. Transfer the slices to a heated serving dish and cover each slice with a piece of chicken breast.
  • Add the onion to the skillet and cook, stiffing until wilted. Add the wine and stir to dissolve the brown particles that cling to the bottom and sides of the skillet. Stir in the cheese sauce.
  • Place a sieve over a small saucepan and strain the sauce, stirring and pushing down with a plastic spatula to press through as much of it as possible. There should be about 1 1/3 cups of sauce.
  • Pour the sauce over the chicken pieces and serve hot.

This marinade is also excellant on Pork Chops! NOTE: Plan Ahead! Marinate 4-6 hours or overnight. Not included in cook time.

1/2 cup chicken broth
1 cup balsamic vinegar
1 1/2 tablespoons Worcestershire sauce

2 tablespoons sugar
1/4 cup Dijon mustard

Steps:

  • Rinse chicken, and pat dry. Place in a gallon-size zip-top plastic bag. Combine chicken broth and next 8 ingredients in a mixing bowl.
  • Reserve 1/2 cup marinade; pour remaining marinade over chicken. Seal bag, and refrigerate up to 24 hours, turning occasionally.
  • Grill chicken, uncovered, at medium-high for 6 minutes on each side or until cooked through, basting with reserved 1/2 cup marinade every few minutes. Done when juices run clear.

1 tablespoon olive oil
1 medium onion, thinly sliced
1 (14.5 ounce) can diced tomatoes
1 cup chicken broth
½ cup balsamic vinegar
2 tablespoons chopped fresh basil
1 tablespoon cold water
1 teaspoon cornstarch

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate. Season both sides of the chicken breasts with salt and pepper.
  • Cook on the preheated grill until no longer pink in the centers and the juices run clear, about 8 minutes on each side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Let rest for 5 minutes before slicing into strips.
  • Heat olive oil in a large pan over medium-high heat. Add onion and cook, stirring frequently, until soft and translucent, about 5 minutes. Add diced tomatoes, chicken broth, balsamic vinegar, and basil. Bring to a boil; reduce heat to a simmer and cook for 5 minutes. Season with salt and pepper.
  • Mix water and cornstarch together in a small bowl and slowly add to the balsamic sauce. Stir until thickened. Toss chicken strips in balsamic sauce and serve.
