JALAPENO GRILLED CHICKEN

Add some zip to ordinary chicken with jalapenos. From Taste of Home Magazine, we made this last night, and can't wait to make it again. The chicken was juicy and flavorful!

4 -8 jalapeno peppers, seeded and chopped or
1 (4 ounce) can chopped green chilies
2/3 cup lemon juice, divided
1/4 cup minced parsley
6 -10 minced garlic cloves
2 teaspoons dried rosemary, crushed
2 teaspoons dried thyme
8 bone-in chicken breast halves
2/3 cup chicken broth
2 teaspoons pepper
1/2 teaspoon grated lemon peel

Steps:

  • In a bowl, combine peppers, chiles, 1/3 cup lemon juice, parsley, garlic, rosemary and thyme. Gently stuff pepper mixture under the skin of each chicken breast. Place in a greased 13in. x 9 inches x 2-in. baking dish. Combine the broth, pepper, lemon peel and remaining lemon juice: pour over chicken. Cover and refrigerate for at least 6 hours. Drain and discard marinade.
  • Place chicken skin side up on grill. Grill, covered, over medium heat for 45 minutes or until juices run clear, turning once during grilling.

Jalapeno Mayo:
1 large jalapeño, chopped (or more if you like it spicy)
1 medium garlic clove, minced
1/2 cp mayonnaise
2 tsp lime juice
1/4 cp cilantro, finely chopped
Kosher salt and black pepper
Cilantro Slaw:
1 1/2 cps finely shredded cabbage
1 small shallot, thinly sliced
1/4 cp cilantro, finely chopped
1 tbs olive oil
2 tsp lime juice
Kosher salt and black pepper
4 grilled chicken cutlets
4 buns/rolls (toasted or not - I prefer not toasted)

Steps:

  • 1. Combine the ingredients to make the mayo. Original recipe called for using a blender (if you do, add cilantro last) but I just stir it up really good with a fork. I like to make the sauce first and then let it sit in the refrigerator while I'm making the rest of it. 2. Combine ingredients to make the slaw in a medium bowl 3. Grill the chicken (I like to add some blackening season to it). 4. Once the chicken is done, throw it all on a roll!

4 boneless skinless chicken breast halves (about 1 1/4 lb)
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon garlic pepper
1/2 teaspoon salt
1/4 cup green or red hot pepper (jalapeño) jelly
2 tablespoons lime juice
2 tablespoons chopped fresh cilantro

Steps:

  • Heat closed medium-size contact grill for 5 to 10 minutes. Sprinkle chicken with chili powder, cumin, garlic pepper and salt. Place chicken on grill. Close grill. Grill 6 to 8 minutes or until juice of chicken is no longer pink when centers of thickest pieces are cut.
  • Meanwhile, in small microwavable bowl, mix jelly and lime juice. Microwave uncovered on High 40 to 60 seconds, stirring every 20 seconds, until melted and smooth. Stir in cilantro.
  • To serve, spoon warm jelly mixture over chicken.

This is another great Jalapeno Chicken recipe by Weight Watchers. It's out of the 2000 "Day by Day" cookbook. It has 3 points per serving. I have done both blender and fine chopping and they are both great. I find the extra bits and pieces by chopping instead of blending adds a great crunch to the dish and makes it look outstanding. 1/3 cup fresh lime juice
1/4 cup honey
2 tablespoons fresh cilantro leaves
2 tablespoons soy sauce
1/4 teaspoon salt
1/4 teaspoon pepper
3 jalapeno peppers, halved and seeded
3 garlic cloves, chopped
6 (6 ounce) skinless chicken breast halves (bone in)
cooking spray

Steps:

  • Place first 8 ingredients in a blender; process until smooth (or chopped them fine).
  • Combine lime juice mixture and chicken in a large, heavy-duty zip-lock plastic bag.
  • Seal bag, and marinate chicken in refrigerator 1 to 8 hours. (I have done over night).
  • Prepare grill.
  • Remove chicken from bag, reserving marinade.
  • Place chicken on grill rack coated with cooking spray; cover and grill 12 minutes on each side or until done, basting occasionally with reserved marinade.
