Oatmeal is a healthy breakfast, but the standard serving size is SO small. Thanks to a few simple tricks (in short, doubling the liquid and cook time), it's easy to make a huge bowl of "growing oatmeal" without a huge calorie count...

1/2 cup old fashioned oats
1 dash salt
1 cup milk (can use almond milk, coconut milk, soy milk)

Steps:

  • Combine 1/2 cup old-fashioned oats and a dash of salt in a nonstick pot. Add 1 cup fat-free milk (or milk alternative) and 1 cup of water.
  • Bring to a boil and then reduce to a simmer. Cook and stir until thick and creamy, 12 - 15 minutes.
  • Transfer to a medium bowl, and let slightly cool and thicken. Stir in any mix-ins, and top with optional toppings!
  • Mix-ins:.
  • * low-sugar fruit preserves (1 tablespoon = 25 calories, 0g fat).
  • * reduced-fat peanut butter (1 tablespoon = 90 calories, 6g fat).
  • * canned pure pumpkin (1/4 cup = 20 calories and 0g fat).
  • TOPPINGS.
  • Mix 'n match --
  • * chopped or sliced fruit (nutritional info varies, but you can't go wrong!).
  • * chopped or sliced nuts (average, 1 tablespoon = 50 calories, 5.4g fat).

1/4 teaspoon ground cinnamon
Dash salt
1 cup unsweetened vanilla almond milk (recommended: Blue Diamond Almond Breeze)
1/4 teaspoon vanilla extract
Blueberries, for topping

Steps:

  • Combine the oats, apple, sweetener, cinnamon, salt, almond milk, and vanilla extract in a nonstick pot on the stove. Add 1 cup water and mix well. Bring to a boil, and then reduce to a simmer.
  • Stirring often, cook until very thick and creamy, 12 to 15 minutes. Top with blueberries and additional chopped apple, if using. Eat!

While I was growing up, I enjoyed my grandma's oatmeal bars every Christmas. This recipe reminds me of her and Christmastime as a child. And now I fix the bars for my family. -Nancy Hawkins, Brookville, Indiana

Number Of Ingredients 12

1 pound pitted dates, quartered
1-1/2 cups water
1/2 cup sugar
1-1/2 cups all-purpose flour
1-1/2 cups old-fashioned oats
1 cup packed brown sugar
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon almond extract
3/4 cup shortening
Whipped cream, optional

Steps:

  • Preheat oven to 350°. In a small saucepan, combine dates, water and sugar. Bring to a boil. Reduce heat; simmer, uncovered, until thickened and dates are tender, stirring constantly, 7-9 minutes. Remove from heat., In a large bowl, combine flour, oats, brown sugar, vanilla, baking soda, salt and almond extract. Cut in shortening until crumbly. Press half onto bottom of a greased 13x9-in. baking dish. Carefully spread with date mixture. , Sprinkle remaining crumb mixture over filling; press down gently. Bake until lightly browned, 25-30 minutes. Cool on a wire rack. Cut into bars. If desired, serve with whipped cream.
