1 (3 ounce) box Jell-O instant pistachio pudding mix (4-serving)
2 cups milk
2 kiwi fruits, peeled and thinly sliced
Cool Whip
3 drops green food coloring
green coarse sugar, for garnish (the kind used on xmas cookies)

Steps:

Prepare pudding according to package directions using the milk; chill until set.
When pudding is chilled, layer pudding, kiwifruit and green-tinted Cool Whip in clear dessert glasses (wine glasses will work well)-- do pudding-fruit-coolwhip then repeat, ending with a layer of Cool Whip.
Sprinkle a tiny amount of green coarse sugar on parfaits and refrigerate until serving.

1/2 tsp. crème de menthe liqueur (green)

Steps:

In a small bowl, stir pudding and crème de menthe. Dip the edge of a small mug in pudding and sugar, then layer pudding and crumbled brownie. Sprinkle green sugar on top and dig into this adult parfait.

Yummy!! Got it from a Hershey's choc dessert cookbook. Prep time does not include chilling time. I chill these although the original recipe permits freezing as well.

Ingredients

3 cups miniature marshmallows (or 30 large)
1/2 cup milk
2 tablespoons green creme de menthe (or green food color and mint flavor)
1 cup Hershey's semi-sweet chocolate chips, melted
1/4 cup confectioners' sugar
1 1/2 cups heavy cream

Steps:

Combine marshmallows and milk in a saucepan over low heat; stir until mixture is smooth.
Measure one cup into a bowl, add creme de menthe.
Add melted chocolate chips and sugar to remaining marshmallow mixture.
Leave to cool to room temperature.
Whip cream until stiff, divide into 2.
You can also use 3 cups of whipped topping, divided.
Fold half into creme de menthe mixture, and the other half into the chocolate mixture.
Alternately spoon mixtures into parfait glasses.
Chill, garnish with mint leaves or shaved chocolate.
