- Spring is calling, and so is this amazing dish of blackened pork chops stuffed with andouille, mozzarella, and mascarpone, served with lemon-parsley tomatoes.
- Pairing
- Blue Moon® Spring Blonde Wheat Ale is brewed with orange and lemon peel for a little extra zing, which pairs perfectly with pork, sausage, and vegetables.
- Pre-heat the oven to 350 degrees F.
- To stuff the pork chop, insert a thin boning knife into the middle of the chop, starting by the bone. Use the knife to create a pocket, cutting horizontally.
- To make the stuffing, mix sausage, mozzarella, and mascarpone. Season with salt and pepper to taste.
- Using your fingers, stuff about 1/4 of stuffing into each chop. When finished, coat with blackening spice and refrigerate 30 minutes. In cast-iron pan with about 1/2 inch of oil in pan. Heat oil until smoking. Add chops, searing for about 1 minute on each side. Remove from heat and put on a baking sheet. Bake for 15 to 25 minutes until cheese is oozing and pork is medium. Let rest five minutes.
- While pork is cooking, dump oil from pan, then add tomatoes and lemon juice. Cook about five minutes over high heat until tomatoes are hot and blistering. Add butter then remove from heat. Add parsley to tomatoes, one chop on each plate and top with tomatoes.
MEMPHIS-STYLE HICKORY-SMOKED BEEF AND PORK RIBS

- For the rub:
- Add all ingredients to a bowl and stir until combined. Keep in an airtight container for up to 6 months.
- For the ribs:
- Rinse and dry ribs. Place on a clean cutting board and pull off the membrane, the thin fatty skin that lines the underside of the ribs. Trim the ribs of excess fat and meat. Liberally season both sides of the ribs with 1/4 to 1/2 cup Neely's BBQ Rub. Wrap ribs and refrigerate for at least 8 hours so flavors can permeate.
- Preheat grill to 250 degrees F using hickory and charcoal.
- Use indirect heat and cook with the cover down.
- Place ribs, meatier side down, on the grill away from the coals. Cook beef 2 hours, adding more coals as needed. Turn and cook for 45 minutes more, or until the ribs "bend" and the meat easily separates from the bone using a fork. Cook the pork ribs 3 hours. Turn and cook another hour, or until ribs bend. Remove from grill.
- For dry ribs: Sprinkle extra Neely's BBQ seasoning over ribs, cut bones and serve.
- For wet ribs: Coat ribs with Neely's BBQ Sauce, cut and serve.
- In a medium saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to simmer. Cooked uncovered, stirring frequently, for 1 hour 15 minutes.
BLUE CHEESE MASHED POTATOES

- Place potatoes in a large stockpot and cover with cold water. Add salt and bring to a boil over high heat. Reduce to medium and cook until fork tender. Drain well. Add back to the pot that they were cooked in.
- Meanwhile, heat butter and cream until hot. Add the crumbled blue cheese and stir together. Add sauce to potatoes and mash until smooth. Season with salt and pepper.

- Preheat oven to 350ºF. Heat 3 tablespoons oil in heavy large skillet over high heat. Season pork with salt and pepper. Dredge in 1 cup flour; shake off excess. Working in batches, add pork to skillets and saute until brown, about 3 minutes per side. Arrange pork in single layer in 15x10x2-inch glass baking dish. Sprinkle 1 teaspoon paprika over pork.
- Discard contents of skillet; wipe clean. Add 3 tablespoons oil; heat over medium-high heat. Add onions; sprinkle with sugar and saute until well browned, stirring often, about 20 minutes. Add garlic; saute 1 minute. Add 1 tablespoon paprika. Place onions over pork. Pour enough broth over so that chops are almost covered. Cover with foil. Bake until pork is tender, about 45 minutes.
- (Can be made 1 day ahead. Uncover; cool slightly. Cover; chill. Rewarm covered pork in 350ºF oven, about 20 minutes).
- Reduce oven temperature to 200ºF. Using tongs, transfer pork to large bowl, leaving onion mixture in baking dish. Pour contents of baking dish into strainer set over medium bowl. Return onion mixture to same baking dish, spreading evenly (reserve cooking liquid). Arrange pork atop onions; sprinkle with cheese. Cover dish with foil; set in oven to keep warm.
- Melt butter in heavy large saucepan over medium heat. Add 5 tablespoons flour. Cook until mixture just begins to color, whisking often (mixture will be dry and crumbly), about 4 minutes. Gradually whisk in reserved cooking liquid. Bring sauce to boil, whisking constantly. Boil until thickened, whisking often, about 5 minutes. Season with salt and pepper.
- Transfer pork and onions to plates. Spoon sauce around pork and serve.

SMOKED PORK CHOPS
There are pork chops and then there are smoked pork chops. The rub has just the right amount of sweetness and saltiness that complements the smoky flavor perfectly. Oak is my wood of choice for these but feel free to substitute any hard wood chips.

- Preheat the smoker to 250 degrees F (120 degrees C). Add wood chips according to manufacturer's directions.
- Combine salt, brown sugar, pepper, paprika, ground mustard, garlic powder, onion powder, and oregano in a small bowl. Stir until evenly combined. Sprinkle over both sides of each pork chop.

SMOKED PORK CHOPS WITH POTATOES & SAUERKRAUT
I love this no fuss dinner. It is perfect for those cold days of Autumn. I like to add a layer of apples on top of the chops before covering them with the second layer of potatoes & Kraut.

- Mix the potatoes and the kraut.
- Place half the sauerkraut/potato mixture in a Pyrex pie plate.
- Spread 1 1/2 tbsp of mustard over the sauerkraut.
- Place the chops on the sauerkraut.
- Spread remaining mustard on the chops.
- Cover with remaining sauerkraut/potato mixture.
- Season with salt & pepper.
- Put the pat of butter on top.
- Seal with foil and bake in a 350°F oven for 45 minutes to an hour.
- I like uncover the chops for the last 15 minutes or so to lightly brown the potato topping.

PORK CHOPS WITH CARAMELIZED ONION MASHED POTATOES
Nothing says home to me more than pork chops and mashed potatoes. My mom always made these with the thick-cut boneless loin chops, but when I have to pay for them, it's the variety pack of thinner cut bone-in chops that always seem to be on sale. The good news is they cook faster and because of the gravy they don't get dried out.

- Peel the onions, cut them in half, and thinly slice. Place 1 tablespoon of the oil in a large frying pan over medium-high heat and add the onions. Cook, stirring occasionally, for 15 minutes, or until golden brown.
- Meanwhile, peel the potatoes and cut into chunks. Place the potatoes in a saucepan, cover with cold water, and add the salt. Bring to a boil and then simmer over medium heat for 20 minutes, or until a fork slides easily into the potatoes.
- While the potatoes are cooking, remove the onions from the pan and set aside. Add the remaining 1 tablespoon of oil to the pan and add the pork chops. Season the chops with salt and pepper and cook over medium-high heat for 2 to 3 minutes on each side, or until lightly browned. Place the beef bouillon and flour in a small bowl and slowly stir in the water a little at a time until all of the water is incorporated and the mixture is smooth. (If you put all the water in at once the flour will get lumpy and your gravy will never get smooth.) Add the mixture to the pan and stir well. Stir in half of the caramelized onions, cover, and cook over medium heat for 10 minutes.
- Drain the potatoes and add the milk and butter to the pan. Cook over high heat for 2 to 3 minutes, until the milk comes to a boil. Remove the pan from the heat and mash the potatoes with a fork until fairly smooth. Stir in the remaining caramelized onions and season with salt and pepper.
- Place a pork chop and some of the mashed potatoes on each plate and top with some of the gravy.
- Boneless pork loin chops can cost over $4 per pound, but whole or half pork loins often go on sale for under $2 per pound. They are boneless so they are easy to cut into chops and you can make them any thickness you want. You can put as many as you want in a resealable bag and freeze them for later use.
PORK CHOPS SMOTHERED IN CARAMELIZED ONIONS
I created this dish for my husband, as he loves the flavor of deeply caramelized onions. It was a big hit and is sure to become one of our regular meals. I served it with homemade applesauce and skillet country potatoes. Yummm!

- Season both sides of pork chops with garlic powder, sage, thyme, salt and pepper.
- Melt 2 tbs. butter in a large skillet over medium heat, evenly coating the bottom of the skillet.
- Increase heat to medium-high. Cook both sides of chops for 10-15 minutes until lightly browned. (Note: It is okay if the chops are not completely done, as there is more cooking time to come.).
- Push chops to outside edges of skillet. Melt the remaining 1 tbs. butter in the center of the skillet and add onions to the center of the skillet, sprinkling with sugar.
- Replace skillet cover and cook for 10 minutes, frequently tossing and stirring onions with a spatula. Onions are caramelized when tender and medium-brown in color. My husband prefers cooking them until slightly burned, as the flavor intensifies. (Note: Don't forget to watch your chops to make sure they don't burn.).
- Check chops for doneness before serving. They will be done when a fork piercing the thickest part of the chop draws clear juice. If the juice is pink, cook chops a bit longer until done. (Note: Make sure to watch onions, so they don't burn.).
- Serve pork chops with caramelized onions piled on top.

- Melt butter in a large skillet, over medium heat. Season the pork chops with black pepper and garlic powder. Fry the chops in butter until no longer pink and the juices run clear, about 20 to 25 minutes. Turn occasionally to brown evenly.
