HOCKADAY CHESS PIE
Steps:
- Preheat oven to 350 degrees F.
- In a large bowl, mix sugar and cornmeal. Add melted margarine and mix thoroughly.
- Add eggs, 1 at a time, mixing after each addition. Add all liquids, taking care to end with vinegar. Mix well. Divide filling among each unbaked pie shell. Bake for approximately 45 minutes.

I obtained this recipe 40-years ago from the cook at the Highway Cafe in Scappoose, Oregon. I have never found its equal. Whenever I serve it, I am always asked for the recipe.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Soak raisins in boiling water for 10 minutes. Drain, and chop.
- In a medium bowl, cream together the sugar and butter until light and fluffy. Beat in the eggs one at a time, mixing well after each one. Stir in the vanilla, sour cream, walnuts and chopped raisins. Pour into the baked pie shell.
- Bake for 30 minutes in the preheated oven, or until firm in the center. Allow to cool completely before slicing.

- Preheat oven to 375°F.
- In large bowl, combine sugar, flour, butter, and cocoa.
- Mix well.
- Add eggs one at a time, mixing well after each addition.
- Add evaporated milk, corn syrup, chocolate, and vanilla.
- Mix well.
- If using refrigerated crust, unroll and place into pie pan.
- Pour batter into pie shell.
- Bake 45 to 50 minutes or until wooden pick inserted in center comes out almost clean.
- Do not overbake.
