HOKEY POKEY ICE CREAM
Hokey Pokey is New Zealand's most popular ice cream. For those unfamiliar with the taste, just imagine vanilla ice cream with crunchy bits of honeycomb.

Steps:
- Gather the ingredients.
- Line a baking tray with waxed parchment paper or a silicone baking mat. Set aside.
- Heat the sugar and golden syrup in a small saucepan over medium heat.
- Melt the mixture, stirring occasionally. Bring to a boil for 5 or 6 minutes-make sure you stir continuously so the syrup doesn't burn.
- Take the pot off the stove and stir in the baking soda. The mixture will froth up and become pale.
- Use a spatula to scrape and pour the mixture onto the waxed parchment paper. Allow the honeycomb to set for 30 minutes.
- Once set, wrap the honeycomb loosely in parchment paper and use a rolling pin to break it into small pieces.
- Scoop ice cream into two serving bowls and sprinkle with hokey pokey honeycomb. Serve immediately.

- Combine the cream, vanilla, milk and 15ml (1 tbsp) sugar in a saucepan. Bring to the boil then remove from the heat.
- In a large bowl, whisk together the 125ml (1/2 cup) sugar and egg yolks, until the mixture has gone pale in colour and doubled in size.
- Temper hot milk into the sugar yolk mixture, by slowly adding hot milk about 60ml (1/4 cup) at a time, whisking to distribute heat. Once all the milk has been added, transfer mixture back into the saucepan.
- Place the saucepan over medium-low heat. Stir until mixture reaches nappé consistency, or 80°C (180°F) on a kitchen thermometer. Let mixture sit at this temperature for 5 minutes to pasteurise the eggs.

- Prepare a baking sheet with parchment paper and set closely to the range where you’ll be melting the sugar and syrup.

- *Hokey Pokey/Honeycomb will react with air and disintegrate over time. Best to make the day of use. It will still taste good but will go sticky the longer its stored.
- Remove ice cream from freezer. Scoop into bowls and top with good drizzle of honey caramel sauce and pieces of hokey pokey/honeycomb. Eat and enjoy, try to stop at just one scoop!

- In a small bowl, mix 2 Tablespoons of milk with the cornstarch to make a slurry. Set this aside. Reserve the remaining milk and keep it separate.
- Line a baking sheet with parchment paper or a silicone mat and set aside. In a medium sized nonstick pot, melt the sugar and golden syrup over medium heat. Once the mixture comes to a boil, turn the heat down to low and allow to boil for another 4-5 minutes or until the liquid becomes a deep amber color. Turn the stove off, take the pot off the stove and quickly stir in the baking soda. The mixture will bubble and turn lighter in color. Quickly pour the mixture onto your prepared baking sheet and spread it out. Once the syrup hardens, break into small chunks.
- Once the ice cream base is completely cool, churn it in your ice cream maker according to the manufacturer's directions. Stir in the broken chunks of honeycomb and freeze for at least 4 hours.
