HOW TO MAKE FRESH CRANBERRY JUICE

Steps:
- Wash and drain fresh or frozen cranberries.
- Put the cranberries and water in a large pot and bring to a boil.
- Once the water comes to a boil, allow the cranberries to simmer. You will notice that soon, the cranberries will start to burst open.
- Turn off the heat and let the berries steep for 10-15 minutes.
- At this point, you can add sugar or any sweetener of your choice to the cranberry mixture. Remember that cranberry juice is usually bitter, so you may need to add sugar. You can also add apple chunks and spices of your choice such as cinnamon or nutmeg.
- Add the mixture in batches in a blender. Blend till you get a thick, viscous liquid.
- Strain the mixture through a cheesecloth or a fine mesh strainer to collect cranberry skin pieces.
- Your home-made cranberry juice is ready. All you have to do is add a couple of ice cubes and enjoy!

I'm a cranberry nut. I just can't get enough of these berries. Here are some fun facts I found on the web. Cranberries are one of the only three native North American Fruits (Concord grapes, and blueberries being the others). To the eastern Indians, cranberries were known as sassamanesh. The Cape Cod Pequots and the South Jersey Leni- Lenape tribes called the little red berry ibimi or bitter berry. But it was the Pilgrims who gave the cranberry its modern name. To them, the pink cranberry blossoms resembled the heads of cranes; therefore the word crane berry later contracted to cranberry. Early American sailors carried barrels of cranberries while at sea as a source of vitamin C, much like the British limeys carried limes aboard ships.

- Combine cranberries and water in a large pan.
- Bring to a boil.
- Reduce heat and cook until berries burst.
- Strain juice through a fine strainer lined with cheese cloth.
- Sugar can be added to juice to your taste.
- Reheat juice until it is almost, but not boiling.
- Pour into jars.
- Allow to cool before refrigerating.

- In a Dutch oven or large saucepan, bring water and cranberries to a boil. Reduce heat; cover and simmer until berries begin to pop, 20 minutes., Strain through a fine strainer, pressing mixture with a spoon; discard berries. Return cranberry juice to the pan. Stir in the sugar, lemon juice and orange juice. Bring to a boil; cook and stir until sugar is dissolved. , Remove from the heat. Cool. Transfer to a pitcher; cover and refrigerate until chilled.

Making your own cranberry wine is easy, using fresh fruit or cranberry juice. This recipe makes one gallon of cranberry wine, but can be increased or decreased based on your needs.

- Add the sugar and cranberry juice to a small saucepan and heat it just enough to dissolve the sugar. If using fresh cranberries, add water instead of juice and use it to dissolve the sugar.
- Allow the sugar and juice mixture to come to room temperature. While it's cooling, dissolve the yeast packet in a small amount of lukewarm water. Allow it to bloom for at least 5 minutes.
- Add the yeast nutrient and dried cranberries to the juice/sugar mixture and then pour it all into a primary fermentation vessel. Add the dissolved yeast.
- Cap with a water lock and allow the mixture to ferment in primary for 2-3 weeks. Alternately, allow the mixture to ferment without an airlock for about 5 days, then rack into secondary and add an airlock.
- Either way, once the mixture is in secondary, add an airlock. Ferment in secondary for 6-8 weeks before bottling. For a very dry wine, rack the cranberry wine a second time and ferment for another 6-8 weeks.
- Bottle in wine bottles and age for at least 3 months, but preferably a full year from bottling.

- Cooking - In a stockpot simmer the cranberries with 4 quarts of the water until most of the berries pop. Strain through a wire mesh strainer. Set aside the juice that has been extracted and add the pulp back to the pan and add an additional 2 quarts of water.
