HOMEMADE SUGAR FREE STRAWBERRY JELLY

Homemade Sugar Free Strawberry Jelly image

This is an easy method for making your own strawberry jelly that has no added sugar except from what comes from the strawberries.

Provided by SFD

Time 30m

Number Of Ingredients 4

Strawberries- 2 cups- if using frozen use no sugar added
Instant Gelatin in Strawberry- 1 -3 ounce box
Cold Water- 1 cup
Sugar Alternative-1/4 cup equivalent to sugar in volume. Also (granular works best.)

Steps:

  • Start by placing your strawberries in a blender. Blend the strawberries until a near puree results. However, there should be some chunks of strawberries for best results.
  • Using a large saucepan, set on medium heat, combine your gelatin, cold water and sugar alternative. Cook this, stirring continuously, until the ingredients are combined together. This should take you about 3-4 minutes.
  • Next, we will add the strawberries to the saucepan. Stir in your strawberries 1/2 cup at a time. Be sure to stir the saucepan contents between strawberry additions.
  • When all of the strawberries have been added to the pan, bring the pan to a boil.
  • While your saucepan is heating up to that boiling poin, you can prepare empty jars by washing and drying them if you have not done so. I recommend using the method suggested by the manufacturer of the jars.
  • Once the items on the stove begin to boil, turn the heat down and allow to simmer for 2 1/2 to 3 minutes. Carefully pour the mix into the jars and allow to cool.
  • Once your jelly has cooled in the jars you can cover them tightly. The you can store them in your refrigerator.
  • This method of homemade jelly should last a couple of weeks in the refrigerator.
  • NOTE: If using pectin instead of jello, please refer to the post above for alterations to the recipe.
  • Details Prep time: 10 mins Cook time: 20 mins Total time: 30 mins Yield: 42-48

SUGAR FREE STRAWBERRY JAM

Sugar Free Strawberry Jam image

Making sugar free strawberry jam is easy-peasy! This recipe is so fruity and naturally sweet you'll wonder why you ever bought jam in a store. Bring on breakfast!

Provided by Katrin Nürnberger

Categories     Breakfast

Time 50m

Number Of Ingredients 5

400 g / 14 oz strawberries, diced
2 tbsp water
1 tsp chia seeds (ground)
1 tsp lemon juice (optional)
1 tbsp powdered sweetener (optional)

Steps:

  • Chop the strawberries and place them in a saucepan together with the water.
  • Bring to the boil (lid on), then turn down the heat medium and let it bubble away for 15 minutes. Only add the lemon juice if you want to store the jam for longer than 1 week - it prevents the growth of bacteria.
  • Mash the strawberries with a potato masher (or with a fork), then continue to cook on low-medium for another 30 minutes until reduced by half. You want it to bubble peacefully. Bubbles will become smaller as the liquid evaporates. Stir regularly with a spatula to prevent the jam from burning. Towards the end of cooking, stir constantly.
  • Taste. If necessary, sweeten with 1 tbsp of powdered erythritol.
  • Add the ground chia seeds and stir. Cool and fill into a sterilised jar. Store in the fridge.

SUGAR FREE STRAWBERRY JAM

Sugar Free Strawberry Jam image

After spending too much money on store bought sugar free jams, I was given this recipe by a friend. It tastes better than most you find in the store, and is much cheaper. I use granular splenda, and don't measure it, I just add until it tastes sweet enough.

Provided by 89240

Categories     Strawberry

Time 20m

Yield 18 serving(s)

Number Of Ingredients 5

16 ounces frozen strawberries
1 1/2 teaspoons plain gelatin
2 tablespoons cold water
6 -10 packets Splenda sugar substitute (or equivalent in granular form)
1 -2 tablespoon water, if needed

Steps:

  • Thaw strawberries.
  • In a bowl, soften gelatin in 2 tablespoons cold water.
  • If your strawberries are whole, crush them, or chop into small pieces.
  • Place strawberries into a heavy sauce pan, along with any any juices.
  • If they don't have much juice from thawing, add 1-2 tablespoons water.
  • Bring to a boil, reduce heat and simmer until strawberry pieces are softened.
  • Stir in softened gelatin until completely dissoved.
  • Remove from heat and stir in Splenda.
  • Chill well before serving.
  • Note: do not add too much water along with the strawberries, they will probably release enough moisture while heating.
