IRISH CREAM JELLY SHOTS

Steps:

• Line a 8-by-8-inch baking dish with plastic wrap so there is a 2-inch overhang on all sides.
• Whisk together the coffee and sugar in a medium bowl until the sugar dissolves. Vigorously whisk in 2 packets of gelatin until dissolved and the mixture thickens slightly. Strain the coffee mixture through a fine mesh sieve into the prepared pan. Use a spoon to scrape off any foam from the top. Refrigerate, uncovered, until firm, about 1 hour. Use a wooden skewer to poke several holes into the gelatin. (This will help the two layers stick together.)
• Microwave 1 cup of the liqueur in liquid measuring cup on high until hot, about 1 minute. Add the remaining 3 packets of gelatin and whisk until dissolved. Add the remaining liqueur and whisk to combine. Pour the mixture over the set coffee gelatin and chill until completely firm, about 2 hours.
• Gently lift the gelatin out of the pan using the plastic wrap to help you. Cut into 36 squares. (You could also use a small shamrock cookie cutter.)
• Pipe small dollops of whipped cream on top of each jelly shot and top each with an espresso bean. Refrigerate until ready to serve.

• NOTE: This recipe makes enough to fill 36 shot glasses, you can divide the jello in half, but you will have leftover milk. You could also divide the can of milk in half, if you want the leftover milk. In a small bowl, combine lime jello, 2 envelopes gelatin and 2 cups boiling water, stir until jello is dissolved. Pour into glasses, filling about 1/3 full. Place in fridge until set, about 20 minutes In a small bowl combine sweetened condensed milk and 1 cup boiling water, stir well. In another small bowl, add cold water and sprinkle 2 envelopes unflavored gelatin, set aside for 1 minute. Add 3/4 cup boiling water and stir well. Add to milk mixture and stir. Pour on top of lime jello, filling another 1/3 amount. Place in fridge until set, about 20 minutes. In a small bowl, combine orange jello, 2 envelopes gelatin and 2 cups boiling water, stir until jello is dissolved. Pour into glasses, filling the remainder of the glass. Place in fridge until set, about 20 minutes Garnish with whipped topping and sprinkles. I used Cool Whip in a decorator bag and a giant round tip. NOTES You can easily change the flavor or color of the jello for a fun everyday treat

• Combine the Jello and boiling water in a bowl. Stir until completely dissolved, about 2 minutes. Let set until it comes to room temperature. Slowly stir in the whisky. Pour into a glass shot glasses and chill in the refrigerator for at least 4 hours.

Steps:

• Boil cup of water.
• Empty jello powder into a large mixing bowl and add the boiling water.
• Continue stirring for two minutes or until the jello is completely dissolved.
• Add in the 1/2 cup of cold water and 1/2 cup of vodka.
• Stir until mixed and pour into 2oz. cups filled 1/2 to 3/4 of the way.

OREO JELL-O SHOTS

Steps:

• In a large bowl or measuring cup, combine vodka and gelatin and let sit 2 minutes. Add water and stir until gelatin dissolves completely. Pour in sweetened condensed milk and whisk to combine.
• Spray a small sheet pan with nonstick cooking spray and pour mixture into pan. Refrigerate until firm up, 4 to 5 hours.
• Meanwhile, remove cream from Oreos using a butter knife. When gelatin mixture is firm, using a small biscuit cutter or shot glass, cut gelatin mixture into rounds. Place 1 round between two Oreo cookies and repeat until all gelatin rounds are used.

BAILEYS® AND COFFEE JELL-O® SHOTS

Steps:

• Sprinkle 1/2 package unflavored gelatin into a heat-resistant bowl and pour boiling water on top, stirring to dissolve. Add Irish cream liqueur and stir until well incorporated. Fill shot glasses halfway and refrigerate until set, 2 to 4 hours.
• Sprinkle remaining 1/2 package unflavored gelatin into a heat-resistant bowl and pour boiling coffee on top, stirring to dissolve. Add Irish cream liqueur and stir until well incorporated. Pour coffee mixture into the half-filled shot glasses on top of the previous layer. Return to the refrigerator and chill until set, 2 to 4 hours.
