2 cups hot mashed potatoes
4 ounces PHILADELPHIA Cream Cheese, cubed
1 cup KRAFT Shredded Cheddar Cheese, divided
2 cloves garlic, minced
4 cups frozen mixed vegetables, thawed
1 cup beef gravy

Steps:

  • Preheat oven to 375 degrees F. Brown meat in large skillet. Meanwhile, mix potatoes, cream cheese, 1/2 cup of the shredded cheese and the garlic until well blended.
  • Drain meat. Return to skillet; stir in vegetables and gravy. Spoon into 9-inch square baking dish; cover with potato mixture and remaining 1/2 cup shredded cheese.
  • Bake 20 min. or until heated through.

I was craving Shepherd Pie but i wanted a little spice. My boy friend added hot sauce, I add sour cream. Add spice to your own taste.

4 baking potatoes
1 lb ground turkey or 1 lb lean ground beef
1 (15 1/2 ounce) can Mexican-style corn
2 jalapenos, chopped
1/3 cup chopped red onion
2 tablespoons garlic powder, divided
2 tablespoons onion powder, divided
1 tablespoon taco seasoning
1 tablespoon season salt
1 (12 ounce) jar sausage gravy
1/4 cup shredded mexican cheese

Steps:

  • Cut 4 potatoes in half skin or no skin. Boil until potatoes are soft enough to mash. while mashing stir in half jar of sausage gravy, 1 tbs garlic powder, and 1 tbs onion powder. Set aside.
  • Preheat oven to 350°F.
  • Brown turkey or beef in large skillet. Stir in 1 tbs garlic, 1 tbs onion powder, taco seasoning, and season salt while meat is still raw. Add red onion and jalapeño.
  • In a 9x9-inch casserole dish or pan spread meat mixture on bottom of pan, spread corn with chilies on top of meat. Spread potato mixture on top of corn evenly. Spread the rest of the sausage gravy on top of potatoes evenly and sprinkle with cheese.
  • Cook for 15 minutes or until cheese is golden brown.

4 cups chopped lamb (the meat must be rare) or 4 cups roast beef (the meat must be rare)
2 large garlic cloves, chopped
1 large onion, chopped
1 teaspoon fresh rosemary leaf
8 tablespoons kerry irish gold butter, divided
3 tablespoons flour
1 cup beef stock or 1 cup bouillon
4 cups mashed potatoes

Steps:

  • See separate recipe for Marta Sgubin's Mashed Potatoes --
  • Preheat oven to 350.
  • Combine the lamb, garlic, onion and rosemary and put them through a meat grinder twice. If you don't have a meat grinder, don't use a food processor because that doesn't give the right texture. Use a knife to chop [or shred] the ingredients very fine, the way you would if you were making hash.
  • Melt 6 tablespoons butter in a large skillet and stir in the flour.
  • Stirring constantly with a wooden spoon, cook for 5 minutes or until completely blended. Slowly add the beef stock, stirring as you add, and cook until thickened - about 5 minutes.
  • Add the chopped lamb mixture and stir to blend. Add salt and pepper to taste.
  • Spoon this meat mixture into a 2-quart oval ovenproof casserole dish. Spread the mashed potatoes over the top. They should be as even as possible and touch the rim of the dish so that non of the meat mixture shows.
  • Use a fork to rake a design along the top, drawing the tines over the sirface from one end to the other the long way. Dot with the remaining 2 tablespoons of butter.
  • Bake for 40 minutes or until the filling is bubbling hot and the potatoes are lightly browned.

This rich and meaty classic shepherd's pie is made with a mixture of lamb and sirloin and topped with a creamy, cheesy mashed potato topping--it's sure to delight everyone at the table.

3 pounds Yukon Gold potatoes
1 tablespoon kosher salt
¼ cup milk
3 tablespoons salted butter, divided
1 cup shredded white Cheddar cheese
¼ cup sour cream
1 large egg yolk
2 teaspoons kosher salt, divided
1 teaspoon ground black pepper, divided
1 tablespoon olive oil
1 cup diced onion
1 cup diced carrot
1 pound ground lamb
1 pound ground beef sirloin
3 tablespoons all-purpose flour
1 teaspoon finely chopped fresh rosemary
1 teaspoon finely chopped fresh thyme
1 cup beef stock
1 tablespoon tomato paste
1 tablespoon Worcestershire sauce
1 cup frozen green peas
1 tablespoon chopped fresh parsley, or to taste

Steps:

  • Place potatoes in large saucepan and add enough water to cover by 2 inches. Stir in 1 tablespoon salt and place pot over medium-high heat; bring to a boil. Cook until potatoes are fork tender, about 10 minutes. Turn off the heat and drain.
  • Return potatoes to the hot pan and set over the same burner. Add milk and 2 tablespoons butter; allow butter to melt from the residual heat. Mash potatoes with a potato masher until smooth. Stir in Cheddar cheese, sour cream, egg yolk, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Set aside while you prepare the filling.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch casserole dish.
  • Heat olive oil and remaining 1 tablespoon butter in a large skillet over medium-high heat. Add onion and carrot and cook, stirring constantly, until onion begins to turn translucent, about 5 minutes.
  • Add lamb and beef and cook, crumbling with a spoon and stirring often until browned, about 5 minutes. Sprinkle meat mixture with flour, remaining salt and pepper, rosemary, and thyme. Cook, stirring constantly, for 2 minutes.
  • Add beef stock, tomato paste, and Worcestershire; cook, scraping any flavorful bits from the bottom of the skillet. Bring mixture to a simmer. Cook until thickened and vegetables are tender, about 8 minutes. Stir in peas. Transfer mixture to the prepared casserole dish and top with the prepared mashed potatoes.
  • Bake in the preheated oven until golden and bubbly around the edges, 25 to 30 minutes. Sprinkle with parsley and serve.

This is a hearty one-dish meal you can throw together in minutes. My family has been making it this way since I was a kid and we've always called it Jacob's Pie. Shepherd's Pie (I later learned), contains cooked tomatoes which is something we were never too crazy about as kids. I hope it reminds you of home as much as it does me!

Number Of Ingredients 7

1 -1 1/2 lb ground beef
1/4 cup chopped onion
1 garlic clove, crushed
1 (10 3/4 ounce) can cream of mushroom soup
2 (14 1/2 ounce) cans green beans, drained (you can substitute corn for all or part if you prefer)
4 -6 cups mashed potatoes, prepared the way you like them
4 slices cheese (we prefer American cheese with this dish)

Steps:

  • Saute the ground beef garlic and onions together in a deep iron skillet until the beef is no longer pink in the middle. You can add any other seasonings to suit your taste -- I like to use salt, pepper and Worcestershire sauce. (Note: If you don't have an iron skillet, use a regular skillet to cook the meat and then assemble in a casserole dish).
  • Drain ground beef mixture.
  • Return ground beef to the skillet (or casserole dish), and arrange in a layer to cover the bottom.
  • Spread condensed cream of mushroom soup in a layer over the ground beef.
  • Arrange drained green beans/veggies in a layer over the soup.
  • Spread mashed potatoes in a layer over the veggies.
  • Top with cheese slices.
  • Place skillet/casserole dish on center rack in the oven at 350 degrees for 15-20 min or until cheese is melted with slightly browned edges.
  • Serve with warm dinner rolls.
