ROAST STUFFED PORK BELLY
This pork belly recipe turns a cheap cut of meat into a dish of dinner party standard. The fresh, zingy stuffing makes this extra special.

- Preheat the oven to 240°C/fan220°C/gas 9, or as high as it will go. Place the pork belly skin-side down on a board. Using a very sharp knife or Stanley knife, carefully remove and reserve the flap of belly that sits over the rib bones, then remove and reserve the ribs. Turn the belly over, short side towards you, and score it widthways, 1cm apart, across the skin.
- Make the stuffing. In a frying pan, soften the onion in the oil over a low heat, then remove to a bowl to cool. Finely chop 250g of the reserved belly flap meat in a food processor (if there's any remaining, discard it). Add to the bowl of onion along with the remaining stuffing ingredients, and some seasoning. Set aside.
- Place 30cm lengths of string at 2cm intervals across a large board. Lay the pork on top, skin-side down, so the string is running the same way as the scored lines. Spoon the stuffing lengthways down the middle of the pork belly, heaping it up into a cylindrical shape, then bring the sides of the belly up and around the stuffing so that they meet tightly. Tie tightly with the string, and weigh to calculate the cooking time (25 minutes per 450g, plus 20 minutes). Turn the rolled pork belly over and rub the sea salt into the skin, making sure that it gets right into the score lines.
- Place the ribs in an oiled roasting tray and place the pork on top, with the join underneath. Roast for 20 minutes to brown and crisp the skin, then turn the oven temperature down to 180°C/fan160°C/gas 4 and roast for the remainder of your calculated cooking time.
- When the pork is cooked (a metal skewer inserted into the centre of the meat should be hot at the tip), remove from the oven and rest on a board, uncovered, for 20 minutes. Carve into slices, cutting along the score lines you made earlier. Serve with the crispy crushed potatoes and fennel salad.

- Adjust the oven rack to the lower-middle position and heat oven to 325°Line a large rimmed baking sheet with aluminum foil and set a V-rack wire rack inside. Spray the rack with nonstick cooking spray.
- Butterfly the pork loin roast or ask your butcher to do this for you.
- Use paper towels to pat the pork dry and rub it on all sides with salt and sugar. Place the roast in a zipper-lock bag and refrigerate 1-4 hours.
- In a large skillet, cook the sausage and bacon until the sausage has browned, the bacon is cooked through but not crispy. Transfer the meat to a paper towel-lined plate reserving 2 tablespoons of the rendered fat in the skillet.
- Add the onion, celery and apple to the skillet. Season with salt and pepper and cook until the onion, celery and apple are tender. Add the minced garlic and remove the skillet from the heat. Pour the onion mixture into a large mixing bowl and wipe out the skillet.
- Add the reserved sausage/bacon mixture to the onion mixture, in the bowl, and stir well.
- While the above cooks, place the bread, sage, rosemary and thyme in the bowl of a food processor and pulse the mixture into coarse crumbs.
- Set the skillet over medium heat and add the butter. When the butter melts, add the coarse breadcrumb mixture and stir until the breadcrumbs are lightly toasted, about 3 minutes (do not allow the breadcrumbs to burn). Add the breadcrumb mixture to the sausage/onion mixture and stir well. Set aside.
- Remove the pork from the bag and set it in a second large baking tray. Pat it dry with paper towels and arrange it, fat cap down, on the tray.
- Cover the pork with the sausage/onion stuffing, leaving a ½-inch border on all sides.
- Cut 7 (10-inch) pieces of kitchen twine and set them next to the work area.
- Roll the pork tightly and tie it at 1-inch intervals along the length of the roast. Season it, on all sides, with kosher salt and black pepper.
- Heat the large skillet over medium heat and add 2 tablespoons oil.
- Place the roast in the skillet and brown on all sides (about 3 minutes per side).
- Set the roast in the V-rack wire rack on the rimmed baking sheet, fat side up, and set it in the oven. Pour the chicken stock under the roast in the bottom of the baking sheet.
- Roast the pork 50-60 minutes or until the thickest, middle part of the pork registers 145°F on a meat thermometer. Remove the roast from the oven, tent loosely with foil, and let it rest 10-20 minutes before slicing. Remove the kitchen twine before slicing.
- If desired and if there is enough, pour any rendered juices from the bottom of the pan through a mesh strainer and serve alongside the roast.

- Chop 1 rosemary sprig finely. Melt butter in medium saucepan on medium heat. Add celery; cook and stir 4 min. or until crisp-tender. Remove from heat. Add chopped rosemary, water, cherries and nuts; mix well. Stir in stuffing mix just until moistened.

- 1. Place Pork Loin fat side down in a 9 x 13 pan and arrange vegetables around it.
- 2. In a small bowl mix Garlic powder, onion powder, seasoned salt and black pepper until combined and rub it onto the pork (top only, not the bottom).
- 3. Sprinkle the parsley on top, and then the garlic. Drizzle the olive oil over top of the pork. You can season the vegetables as well, I recommend to. Just sprinkle all of the same dry seasonings over top.
- 4. Add beef broth from one of the corners of the pan, do not pour over pork. Place foil, slightly vented, over the pork, and fitting the pan. Cook it on 325 for 2 1/2 hours. Midway through rotate the pork so it it fat side up and replace the foil so it is covered again.
- 5. After its done take the foil off and put the broiler on HIGH. Flip the pork again to meat side up and broil for 10 minutes. You will do this twice (meat side up, 10 mins, fat side up 10 mins, and then meat side up one last time for 10 mins.) For a total of 30 minutes You may need a few mins longer depending on your oven. Just look to see how browned its getting.
- 6. Let meat rest for 30 minutes.
- 7. Enjoy! The vegetables will have an incredible flavor and so will the meat.
- **You may add more veggies but You'll probably have to go with a bigger pan size.
- **If you'd really like to kick it up, make a roux and add PAN JUICES and some red wine and let it reduce, stirring often to make a nice gravy!
