LATTICE-TOPPED PEACH COBBLER

Steps:
- Heat oven to 375°F.
- Toss peaches with next 6 ingredients in large saucepan. Bring to boil on medium heat, stirring occasionally. Pour into 9-inch square baking dish sprayed with cooking spray.
- Unroll pie crust; sprinkle with cinnamon sugar. Cut into 12 strips. Reserve remaining dough for garnish. Weave strips over filling to make lattice design. Cut remaining dough into shapes with small cookie cutters; arrange on top of crust.
- Bake 28 to 30 min. or until filling is hot and bubbly, and crust is golden brown.

ARETHA FRANKLIN'S PEACH COBBLER
Steps:
- Preheat the oven to 350 degrees F.
- In a large saucepan, add peaches, 1 stick of butter, 1 cup of sugar, cinnamon, and nutmeg and bring to a simmer. Add bread crumbs and stir. Using a sprinkle of flour, roll out both pie crusts; 1 will be used for the top of the cobbler and 1 for the bottom.
- Spray a 10-inch square pan with canola oil and place 1 layer of dough into the baking dish. Place a few chips of butter, as well as a dusting of the remaining sugar, on the bottom crust. Pour the peach mixture into the baking dish. Cut the top layer of dough into strips and arrange them on the top of the peaches in a lattice pattern. Top with 3 or 4 chips of butter and bake for 25 to 30 minutes or until the crust is brown and the peaches are bubbling. Serve warm with vanilla ice cream.
OLD FASHIONED PEACH COBBLER
I was searching for a peach cobbler recipe that reminded me of the yummy dessert I ate as a young girl in Southeast Missouri. No shortcuts here. Fresh peaches and homemade crust...but worth every minute! Absolutely delicious served warm with vanilla ice cream! Never any leftovers with this dessert!

- In a medium bowl, sift together the flour, 3 tablespoons sugar, and salt. Work in the shortening with a pastry blender until the mixture resembles coarse crumbs. In a small bowl, whisk together the egg and cold water. Sprinkle over flour mixture, and work with hands to form dough into a ball. Chill 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Roll out half of dough to 1/8 inch thickness. Place in a 9x13 inch baking dish, covering bottom and halfway up sides. Bake for 20 minutes, or until golden brown.
- In a large saucepan, mix the peaches, lemon juice, and orange juice. Add 1/2 cup butter, and cook over medium-low heat until butter is melted. In a mixing bowl, stir together 2 cups sugar, nutmeg, cinnamon, and cornstarch; mix into peach mixture. Remove from heat, and pour into baked crust.
- Roll remaining dough to a thickness of 1/4 inch. Cut into half-inch-wide strips. Weave strips into a lattice over peaches. Sprinkle with 1 tablespoon sugar, and drizzle with 1 tablespoon melted butter.
- Bake in preheated oven for 35 to 40 minutes, or until top crust is golden brown.

- Preheat oven to 350 degrees F (175 degrees C). Once oven reaches desired temperature, melt margarine in a glass 9x13 baking pan.
- In a large bowl, combine flour, sugar and baking powder. Pour reserved peach juice into dry ingredients and stir until smooth. Remove glass pan from oven and pour batter in starting in the center; batter will then spread itself over entire pan. Add peaches by placing them in center of pan; allow them to spread on their own.
- Bake cobbler in preheated oven for 20 to 25 minutes, or until brown on top. Do not overcook.

- Drain peaches, reserving 1/2 cup syrup for the sauce. In a large bowl, combine peaches, brown sugar, tapioca, cinnamon if desired, lemon juice and vanilla. Transfer to an ungreased 11x7-in. baking dish. Let stand for 15 minutes., In a large bowl, combine the flour, sugar, baking powder and salt; cut in butter until mixture resembles coarse crumbs. Stir in eggs. Drop by spoonfuls onto peach mixture; spread evenly. Bake at 350° until filling is bubbly and a toothpick inserted in topping comes out clean, 50-55 minutes. Bring to a boil over medium heat; cook and stir until thickened, 1 minute. Remove from the heat; add lemon juice. If desired, serve cobbler with ice cream.

- Preheat oven to 325 and grease baking dish.
- Crust:.
- Add the refrigerated butter to the flour and use fingers or a fork to mash until the mixture resembles large crumbs. Slowly add the milk until a dough ball forms. Cover with plastic wrap and place in the refrigerator for ten minutes.
- Peach Filling:.
- Boil a pot of water and add the peaches. Boil the Peaches for 3 three minutes and take out and let cool. After cool enough to handle, slowly remove the skin and cut the peach in half. Move each side of the peach in a circular motion to remove the pit. Chop the peach into small pieces and place in a bowl. Add the melted butter, spices, and sugar to coat the peaches. Add the one tablespoon of flour to the peaches.
- Crust:.
- After filling is prepared remove it from the fridge. The dough should be cold. Set 1/3 of the dough aside. Roll out the remained of the dough to match your baking dish size. Place into the Baking dish, the dough should be about half an inch thick. Place the filling inside the bottom layer of the crust.
- After, Roll out the remaining 1/3 dough and cut into 1/2 inch strips. Place the strips on the top of the cobbler into a crisscrossed lattice pattern. Bake the cobbler at 325 for 45 minutes. Let cool for 15 minutes. Serve!
