4 cups shredded lettuce
1 can (15 oz) red kidney beans, drained, rinsed
1 1/2 cups shredded deli rotisserie chicken (without skin)
1 cup coarsely crushed hint-of-lime white corn tortilla chips (from 13 1/2-oz package)
1 cup shredded Mexican-style taco cheese (4 oz)
1/2 cup grape or cherry tomatoes, halved

Steps:

  • In small bowl, mix dressing and taco seasoning mix.
  • On large serving platter or individual serving plates, layer remaining ingredients except tomatoes. Drizzle with dressing. Sprinkle with tomatoes.

2 Tbsp taco seasoning (hot or mild)
3 cups chicken (cooked, cooled and diced)
4 cups Romaine lettuce (chopped, about 1 head)
2 Roma tomatoes (diced)
1 cucumber (seeded and diced)
1 cup corn kernels (fresh or frozen)
4-5 green onions (sliced)
1 15 oz can black beans (drained and rinsed)
4 oz sharp cheddar cheese (or pepper jack, cut into ¼" cubes)
1/4 cup cilantro (chopped )
juice of 1/2 of a lime
1 cup tortilla chips (crushed )
jalapeño (diced, toasted pumpkin seeds, diced avocado or jicama for garnish (optional))

Steps:

  • In a small bowl, stir together ingredients for dressing then refrigerate until ready to use.
  • In a large bowl, toss salad ingredients together. Add dressing a little at a time then toss until lightly coated.
  • Season with salt and pepper to taste. Serve immediately.

¾ cup medium-hot salsa
½ cup chopped fresh cilantro
1 tablespoon lime juice
2 tablespoons chili powder
1 teaspoon ground cumin

¼ teaspoon cayenne pepper
1 tablespoon olive oil
1 pound skinless, boneless chicken breast halves
4 (7 inch) corn tortillas
4 cups shredded lettuce

1 avocado - peeled, pitted, and sliced
1 lime, cut into wedges
¼ cup sour cream

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Mix black beans, salsa, 1/2 cup cilantro, and lime juice in a bowl; set aside.
  • Stir chili powder, cumin, coriander, brown sugar, cayenne pepper, and olive oil in a bowl until smooth; rub mixture over chicken breasts.
  • Cook chicken breasts on preheated grill until no longer pink in the center and the juices run clear, 10 to 12 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). While the chicken is cooking, place tortillas on grill and grill until lightly brown on both sides, 3 to 5 minutes.

butter, for preparing 8 by 8-inch glass pan
1 (8 1/2 ounce) box cornbread mix (recommended ( Jiffy)
1 large egg
1/3 cup milk
1 (15 1/2 ounce) can black beans, drained and rinsed
1 Sazon Goya seasoning, packet
salt & freshly ground black pepper
1 cup salsa
2 tomatoes, seeded and chopped
1 head romaine lettuce, cut into strips
1 1/2 cups monterey jack cheese, grated
1 1/2 cups cheddar cheese, grated
2 tablespoons cilantro leaves, freshly chopped
1 tablespoon red wine vinegar
1 teaspoon lime zest
1/4 cup lime juice
1/2 cup sour cream
1 garlic clove, smashed
1 tablespoon honey
1/2 cup extra virgin olive oil
salt & freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Grease an 8 by 8-inch glass pan with butter. Stir together the cornbread mix with the egg and milk.
  • Evenly spread into prepared pan and bake on the middle rack for 20 minutes.
  • Remove from oven and cool in pan for 10 minutes.
  • Remove from pan to cool completely.
  • Mix together the beans with the sazon and season with salt and pepper.
  • Toss the salsa with the tomatoes.
  • When ready to serve, cut the cornbread into 1/2-inch croutons.
  • Toss the lettuce with 3/4 cups of the dressing. In a clear trifle dish, layer the Tex-Mex Salad beginning with the black beans followed by the Monterey jack cheese, the tomato salsa mixture, the Cheddar, the dressed romaine and top with the cornbread croutons.
  • Serve the remaining dressing on the side.
  • For the dressing, use a blender and blend all the ingredients except the olive oil until smooth.
  • While machine is running, slowly drizzle in the oil until incorporated.
  • Season, to taste, with salt and pepper.

1/4 cup KRAFT Original Barbecue Sauce
6 cups torn romaine lettuce
1 can (11 oz.) corn with red and green bell peppers, drained
1/2 cup TACO BELL® Thick & Chunky Salsa
1/2 cup KRAFT Mexican Style 2% Milk Finely Shredded Four Cheese
1/4 cup KRAFT Lite Ranch Dressing
1 cup broken unsalted tortilla chips

Steps:

  • Heat grill to medium-high heat.
  • Spray both sides of chicken with cooking spray. Grill 4 min. on each side. Brush with 2 Tbsp. barbecue sauce. Grill 2 min. or until chicken is done (165ºF), turning and brushing occasionally with remaining barbecue sauce.
  • Remove chicken from grill. Let stand 5 min. Cut chicken into strips.
