Oatmeal-Lemon Crème Bars image

Oatmeal cookie mix jump-starts the crust to a classic homemade lemon bar.

1 pouch (1 lb 1.5 oz) Betty Crocker™ oatmeal cookie mix
1 egg
1 can (14 oz) sweetened condensed milk (not evaporated)
2 teaspoons grated lemon peel
1/4 cup lemon juice

Steps:

  • Heat oven to 350°F. Spray bottom of 8-inch square pan with cooking spray.
  • In large bowl, cut butter into cookie mix, using fork or pastry blender. Stir in egg until mixture is crumbly. Press half of cookie mixture into bottom of pan; bake 15 minutes.
  • In small bowl, stir condensed milk, lemon peel and lemon juice until thick. Spread over baked crust. Crumble remaining cookie mixture over top. Bake about 25 minutes longer or until light golden brown. Refrigerate 30 minutes or until set. For bars, cut into 5 rows by 5 rows. Store covered in refrigerator.

2 tablespoons Gold Medal™ all-purpose flour
1/2 cup cold butter
4 egg yolks
1 can (14 oz) sweetened condensed milk (not evaporated)
1 tablespoon Gold Medal™ all-purpose flour
Grated peel of 1 lemon (about 2 teaspoons)
1/3 cup fresh lemon juice
1 tablespoon powdered sugar

Steps:

  • Heat oven to 350°F. Spray bottom only of 13x9-inch pan with cooking spray.
  • In large bowl, stir cookie mix and 2 tablespoons flour. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like fine crumbs. Press mixture in bottom of pan. Bake 13 to 15 minutes or until edges are lightly browned.
  • Meanwhile, in medium bowl, mix egg yolks, condensed milk, 1 tablespoon flour, the lemon peel and lemon juice with whisk. Pour over hot crust. Bake 18 to 20 minutes longer or until filling is set. Cool on cooling rack 1 hour. Cover; refrigerate until chilled, about 1 hour.
  • Sprinkle bars with powdered sugar. Cut into 6 rows by 4 rows. Store covered in refrigerator.

1 ½ cups all-purpose flour
¾ cup canola oil
⅔ cup confectioners' sugar
1 (14 ounce) can sweetened condensed milk
3 eggs
½ cup lemon juice
⅓ cup white sugar
1 lemon, zested
¼ teaspoon baking powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine flour, oil, and sugar in a bowl. Pat into a 9x13-inch baking pan.
  • Bake in the preheated oven until golden around the edges, about 20 minutes. Cool on a wire rack.
  • Meanwhile, beat sweetened condensed milk, eggs, lemon juice, sugar, lemon zest, and baking powder together until just blended. Pour over the cooled crust.

1/2 cup confectioners' sugar
2 teaspoons lemon extract
1-1/2 cups all-purpose flour
1/4 cup cornstarch
LEMON FILLING:
1/4 cup butter, softened
1-1/2 cups confectioners' sugar
2 tablespoons lemon juice
2 teaspoons grated lemon zest

Steps:

  • In a bowl, cream butter and confectioners' sugar. Beat in extract. Combine flour and cornstarch; beat into creamed mixture. Divide into two balls; wrap in plastic and refrigerate for 1 hour., On a lightly floured surface, roll each portion of dough to 1/8-in. thickness. Cut into 2-in. rounds. Place on ungreased baking sheets. Bake at 350° for 10-12 minutes or until edges are lightly browned. Remove to wire racks to cool., For filling, in a small bowl, cream butter and confectioners' sugar. Beat in lemon juice and zest.
