Steps:

  • Poach eggs. Take eggs out and reserve 4 cups poaching water.
  • Mix flour in sour cream until smooth.
  • Add to reserved poaching water with dill weed.
  • Cook until thickened, stirring constantly. Spoon over poached eggs.

4 ounces thinly sliced smoked salmon
2 gluten free english muffins, food for life is a good brand, split and toasted

Steps:

  • poach eggs. bring water to a simmer carefully slide egg in swirling water, cook until opaque about 3 minutes.. remove with slotted spoon and pat dry. add chopped dill to the hollandaise sauce after it is finished. place 1/2 of salmon over toasted english muffin, then top with poached egg, then spoon hollandaise sauce over top and garnish with more dill.

1 tablespoon honey
¼ cup fresh lemon juice
3 tablespoons chopped fresh dill
1 pound salmon
1 cup white wine
½ cup water
¼ cup chopped shallots

Steps:

  • In a small bowl, blend the plain yogurt, Dijon mustard, honey, lemon juice, and dill. Cover, and refrigerate until serving.
  • In a medium saucepan over medium heat, place the salmon in the white wine and water. Adjust the amount of water as necessary to just cover the fish. Sprinkle with shallots. Cover the saucepan, and cook 10 to 12 minutes, until salmon is easily flaked with a fork. Drain, and serve with the yogurt sauce.

1 tablespoon butter
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1/4 teaspoon salt
Dash ground nutmeg
1 package (6-1/2 ounces) garlic-herb spreadable cheese
3 ounces cream cheese, softened
1/4 cup white wine or chicken broth
1 tablespoon snipped fresh dill or 1 teaspoon dill weed
1 tablespoon white vinegar
4 large eggs
2 English muffins, split and toasted
1/3 cup sun-dried tomato spread
1 jar (2 ounces) diced pimientos, drained
4 fresh dill sprigs

Steps:

  • In a small skillet, melt butter over medium heat. Add spinach, salt and nutmeg; heat though. For dill sauce, in a small saucepan, combine spreadable cheese, cream cheese, wine and dill. Cook and stir over medium-low heat until well blended., Place 2-3 in. of water in a large saucepan or skillet with high sides; add vinegar. Bring to a boil; adjust heat to maintain a gentle simmer. Break cold eggs, one at a time, into a small bowl; holding the bowl close to the surface of the water, slip each egg into water., Cook, uncovered, 3-5 minutes or until whites are completely set and yolks begin to thicken but are not hard. Using a slotted spoon, lift eggs out of water., Spread each muffin half with 4 teaspoons tomato spread. Top with 1/4 cup spinach mixture, a poached egg and 1/4 cup sauce. Top with pimientos and dill sprigs.

This 30 minute meal is easily prepared. Do not remove the skin before poaching or the fish might fall apart during the cooking process. The vegetables in the pot can be served alongside the fish or discarded. Buttered egg noodles with a little chopped parsley are good, on the side. And, as I suggest with all my recipes which call for wine, use a good, drinkable wine.

2 carrots, chopped
1 small onion, chopped
1 1/2 cups dry white wine
4 sprigs fresh dill
1 tablespoon fresh dill, chopped
1 lemon, sliced

6 cups water
1/2 cup plain yogurt
1 tablespoon drained capers, chopped
1 tablespoon lemon juice

1 1/2 lbs skin-on salmon fillets (4)

Steps:

  • Bring carrots, onion, wine, dill sprigs, lemon slices, 2 teaspoons salt and water to boil in Dutch oven over high heat.
  • Reduce heat to low and simmer, covered, for 15 minutes.
  • Meanwhile, combine yogurt, capers, lemon juice, chopped dill and salt and pepper to taste in bowl.
  • Add salmon to pot, cove and simmer gently until fish is opaque and flakes easily at thickest part, 8 to 10 minutes.
  • Using slotted spatula, carefully transfer salmon to serving platter.

This is a variation on traditional Eggs Benedict. Toast Crumpets or English muffins, with the cut side up, under the broiler for two to three minutes.

2 tablespoons white-wine vinegar
2 tablespoons dry white wine
5 whole black peppercorns
1 shallot, minced
3 large egg yolks
12 tablespoons (1 1/2 sticks) unsalted butter, cut in pieces
Salt
8 large eggs
1 tablespoon finely snipped fresh dill, plus more for garnish
8 ounces smoked salmon, thinly sliced
4 Crumpets, or English muffins, split in half, toasted

Steps:

  • Fill a large saucepan with water; bring to a boil. In a small saucepan, combine vinegar, wine, peppercorns, and shallot. Place over medium-high heat; cook until almost all the liquid is evaporated, about 2 minutes. Add 2 tablespoons water; reduce heat to low.
  • Add yolks; whisk until thickened, about 4 minutes. Turn off heat; whisk in the butter until fully incorporated and the sauce thickens, about 3 minutes. Season with salt. Strain sauce into a medium heat-proof bowl; discard solids. Stir in dill. Keep bearnaise warm over very gently simmering water, whisking occasionally.
  • Fill a shallow dish with warm water. Reduce heat under saucepan to medium, so water is just simmering. Break one egg at a time into a small heat-proof bowl. Gently tip bowl into water; carefully slide in egg. Repeat until all eggs are in saucepan.
  • When first eggs become opaque, begin to remove them with a slotted spoon, in the order in which they were added. This process should take about 3 minutes. Transfer the eggs to the dish of warm water.
  • Divide salmon into 8 portions; place each over a half of a toasted crumpet. Using a slotted spoon, remove eggs from warm water; set the spoon, with the egg inside, briefly on a clean cloth to drain. Gently place 1 egg on each crumpet; spoon dill bearnaise over the top. Serve two crumpet halves to each person, and garnish with snipped dill.
