SPICY PRAWN NOODLE SALAD

Looking for an easy midweek meal that's low in fat and calories? Save time in the kitchen with this Thai prawn noodle salad which takes 5 minutes to cook

200g glass noodles (available from thai-food-online.co.uk) or rice vermicelli
1 tbsp vegetable oil
3 spring onions , sliced
2 lemongrass stalks , sliced
300g raw jumbo king prawns
small handful mint
small handful coriander
small handful Thai basil
½ cucumber , cut into matchsticks
1 red bird's-eye chilli , roughly chopped
2 garlic cloves
2 limes , juiced
2 tbsp fish sauce
1 tsp soft brown sugar or palm sugar

Steps:

  • Cook the noodles following pack instructions. Drain, rinse with cold water and set aside.
  • Heat the oil in a frying pan over a medium heat and cook the spring onions and lemongrass for 2 mins or until softened. Add the prawns and cook for 3 mins or until they have turned pink. Tip everything into a large bowl and allow to cool while you make the dressing.
  • Put all the dressing ingredients in a mini chopper and blitz until very finely chopped. Taste and add a little more sugar (to sweeten) and fish sauce (to make saltier), if you like. Tip the noodles into the bowl with the prawns, then add the rest of the ingredients and dressing, and toss really well before serving.

Vietnamese Shrimp Vermicelli Salad is one light and fresh bite of deliciousness filled with fresh herbs, veggies and a zesty dressing you will want to drizzle on everything.

Number Of Ingredients 20

6 oz Rice Vermicelli noodles
Boiling water (enough to cover noodles in a bowl)
1 tbsp Oil
20 Shrimp (large or about 5-6 large per person (peeled and deveined))
Salt and white pepper (to taste)
1 cup Carrots (julienne sliced or grated)
1 cup Snap peas (cut on an angle)
1.5 cup Bean Sprouts ((sprouted Mung beans) fresh )
1/3 cup Thai Holy Basil (roughly chopped (can exchange with regular basil))
1/3 cup Cilantro ((coriander)- handful - roughly chopped)
1 tbsp Mint (fresh finely chopped (optional))
4 cloves Garlic ( peeled and minced)
3 Thai bird chili
2 stalks Lemongrass (white ends only chopped finely or 2 tbsp lemongrass paste.)
4 Kaffir Lime leaves (chopped finely (or can exchange with 2 heaping teaspoons lime zest) )
1 inch Galangal (knob peeled and grated (or can exchange with fresh ginger))
1/8 cup Fish sauce ((there are gluten free options on the market if you need this))
1/4 cup Lime juice ((plus lime wedges for serving))
2 tbsp Sugar (or sugar alternative- 2 tablespoon (We used coconut palm sugar ) adjust to your sweetness preferences)
2 tbsp Water

Steps:

  • In a large bowl, add your rice vermicelli noodles and boiling water and let sit for about 10-15 minutes, just until aldente. Drain and rinse with cold water and set aside.
  • In a wok add your cooking oil and shrimp and stir fry for about 2-3 minutes until the shrimp are pink and no longer translucent. Add salt and white pepper to taste. Set aside.
  • Prepare your salad dressing - If you have a powerful food processor, add your garlic, chili (to desired heat level), lemon grass, kaffir lime leaves, galangal, fish sauce, lime juice, sugar or sugar alternative to taste and water and process on high until all the ingredients are incorporated and minced extra fine.
  • If you do not have a powerful food processor- go old school and crack out the mortar and pestle. Add your garlic, chili, lemon grass, kaffir lime leaves, galangal and a pinch of salt. Crush ingredients to a fine paste. Add your fish sauce, lime juice, sugar or sugar alternative and water and mix well.
  • In a large bowl, combine your prepared rice vermicelli noodles, your cooked shrimp, your prepared carrots, snap peas and mung beans (or thinly sliced vegetables of choice), chopped fresh Thai Holy Basil (or regular basil), cilantro and mint if desired.
  • Drizzle with your prepared Vietnamese Dressing and toss well. Garnish with lime wedges. Enjoy!
  • *** If you like another layer of texture- try topping with fried shallots or roasted peanuts.

This Vietnamese-style dressing is best made just before serving to preserve the vibrant colour of the mint.

100g rice noodle
100g sugar snap pea , shredded
2 carrots , coarsely grated
100g baby spinach
85g peeled, cooked prawn , defrosted if frozen
1 red chilli , deseeded and finely chopped
3 tbsp rice vinegar
1 tsp caster sugar
1 tsp fish sauce
1 tbsp roughly chopped mint

Steps:

  • Pour boiling water over the noodles to cover, leave for 4 mins, then cool under cold running water. Drain well. Mix the sugar snaps, carrots, spinach, noodles and prawns in a shallow bowl. Mix together the dressing ingredients until the sugar has dissolved, pour over the salad, then toss everything together. Serve straight away.

100g fine rice noodle
½ courgette , coarsely grated
100g fresh white crabmeat
½ cucumber , halved lengthways, deseeded and thinly sliced
1 small red chilli , deseeded and finely chopped
4 spring onions , thinly sliced
handful coriander leaves
handful mint leaves, torn if large
2 tbsp rice wine vinegar
2 tbsp tamari (wheat-free alternative to soy sauce)
1 tsp toasted sesame oil
1 tsp soft brown sugar
juice and zest 1 lime , plus wedges to serve

Steps:

  • Mix the dressing ingredients together in a large bowl, taste and add seasoning, if you like. Cover the noodles in freshly boiled water and let soak for 5 mins, then drain, rinse under the cold tap and add to the bowl with the dressing. Stir through the courgette and leave to cool completely.
  • Mix through the crabmeat and the rest of the ingredients. Using clean hands, pile onto plates, drizzling with any leftover dressing from the bowl. Serve with lime wedges.

200g thin rice noodle
200g large cooked, peeled prawn
1 small red onion , halved and sliced
1 small red chilli , sliced
1 small cucumber , shaved into ribbons (use a peeler)
1 large handful each coriander and mint
2 tbsp roasted peanut , roughly chopped
juice 3 limes
1 tbsp soft brown sugar
2 tsp fish sauce
1 garlic clove , crushed
5 shallots , thinly sliced
vegetable oil , for frying
flour , for dusting

Steps:

  • For the crispy shallots, heat 5cm of oil until hot in a wok. You will know the oil is hot enough when one piece of shallot sizzles as soon as it's dropped in. Toss the shallot slices with flour, shake off excess and fry in the oil until golden. They fry quickly, about 1 min. Drain on kitchen paper, sprinkle with salt and set aside.
  • To make the dressing, mix the lime juice, sugar, fish sauce and garlic and set aside. In a large mixing bowl, pour boiling water over the noodles. Leave them for 2 mins or until they are just cooked, then rinse under cold water. Drain well, shaking the sieve numerous times to get out the excess water, then place back in the bowl. Add prawns, onion, chilli, cucumber and herbs. Pour the dressing over, mix, then sprinkle with the shallots and peanuts.

2 nests thin vermicelli rice noodles
1 tbsp light soy sauce
1 tbsp oyster sauce
2 tsp mild curry powder
1 tbsp sesame oil
1 garlic clove , chopped
1 red chilli , thinly sliced (deseeded if you don't like it too hot)
thumb-sized piece ginger , grated
1 medium onion , sliced
1 red pepper or yellow pepper, cut into thin batons
4 spring onions , cut in half lengthways then into batons
8 raw king prawns
1 large egg , beaten
coriander leaves, to serve

Steps:

  • Soak the rice noodles in warm water for 5 mins until softened but still al dente. Drain and set aside.
  • In a small bowl, mix together the soy, oyster sauce and curry powder.
  • In a large wok, add half the oil and fry the garlic, chilli and ginger until golden, about 2 mins. Add the remaining oil, onion, pepper, spring onions, prawns and noodles and stir-fry for a few mins. Push everything to one side, add the egg and scramble. Add the soy sauce mixture, toss again for a few more mins, then remove from the heat. Sprinkle over the coriander leaves before serving.
