Low-Carb Spaghetti Squash Salad with Bok Choy image

This low-calorie, low-carb, vegan salad is made with spaghetti squash, bok choy, and an Asian-inspired soy sauce dressing. Either serve salad at room temperature or chill in the fridge for later use.

1 (3 pound) spaghetti squash
1 tablespoon vegetable oil
1 onion, chopped
2 cloves garlic, minced
1 bok choy, white stems diced and leaves cut into strips
salt
1 tablespoon soy sauce
2 teaspoons sesame oil
2 teaspoons red wine vinegar
1 pinch white sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Poke about 10 holes into spaghetti squash with a fork; place on a baking sheet.
  • Bake in the preheated oven until easily pierced with a knife, 45 to 60 minutes. Remove from oven; cool until easily handled.
  • Cut spaghetti squash in half and seed. Pull the squash flesh from the peel with a fork and place in a large bowl; let cool.
  • Heat oil in a skillet over medium heat and cook onion until soft and translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Add bok choy stems and cook until softened, stirring occasionally, 3 to 5 minutes. Add green leaves and sprinkle with salt. Cover and cook over low heat until vegetables are soft, about 10 minutes. Add bok choy and cooking liquid to spaghetti squash and combine.
  • Whisk soy sauce, sesame oil, red wine vinegar, and sugar together in a small bowl. Pour over salad and mix well.

3 tablespoons peanut butter
1 tablespoon chile-garlic sauce

1 tablespoon soy sauce
1 tablespoon rice vinegar
1 tablespoon oyster sauce
1 teaspoon minced fresh ginger
1 teaspoon sesame oil
¼ teaspoon ground black pepper
3 tablespoons cold water
1 tablespoon cornstarch
2 tablespoons olive oil
1 (12 ounce) package broccoli coleslaw mix
1 zucchini, diced
1 red bell pepper, diced
½ cup sliced green onions
¼ cup chopped fresh cilantro
2 cubed cooked chicken breasts

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Place spaghetti squash, cut-side up, on a baking sheet.
  • Bake in the preheated oven until squash is tender, 30 to 45 minutes. Shred squash meat using a fork and discard the peel.
  • Combine chicken broth, peanut butter, chile-garlic sauce, fish sauce, soy sauce, rice vinegar, oyster sauce, ginger, sesame oil, and black pepper together in a saucepan; bring to a boil. Whisk water and cornstarch together in a bowl until smooth; add to broth mixture and continue boiling until sauce thickens, 5 to 10 minutes. Reduce heat to low and simmer sauce.
  • Heat olive oil in a large skillet over medium-high heat; saute broccoli slaw, zucchini, red bell pepper, green onion, cilantro, and shredded spaghetti squash until tender, about 10 minutes. Add chicken and sauce to squash mixture; cook and stir until heated through, 3 to 5 minutes.

This recipe was inspired by my favourite pasta recipe that was posted by Beck D called Beef and Pasta Bake - the Best! Recipe #133624. Vegetarians can omit the beef. This is my low carb dream come true. Whenever I am craving a cheesy, ground beef pasta dish this is the one I turn to. This is a version that my husband actually prefers to pasta (yes, I am dumbfounded too)....hope you enjoy!

1 tablespoon olive oil
1 onion, chopped
2 garlic cloves, chopped
1 carrot, shredded
2 stalks celery, chopped
1 lb minced ground beef
1 (24 ounce) can prepared low-carb spaghetti sauce
1 teaspoon oregano
1 large spaghetti squash
1 cup grated cheddar cheese
1/4 cup freshly grated parmesan cheese
salt and pepper

Steps:

  • Preheat oven to 350 degrees.
  • Heat oil in large pan; cook onion, garlic, carrot and celery, stirring often until onion and celery are clear.
  • Add hamburger and cook until no pink remains.
  • Drain, then add sauce, and oregano and simmer, covered, about 15 mins or until mixture has thickened slightly.
  • While beef mixture is simmering, cut the squash in half and carefully remove the seeds.
  • Be sure to cut around the edge so you don't cut into the squash itself.
  • Place face down in microwaveable casserole dish, add 1 inch of water and cover.
  • Microwave on high for approx 10 minutes, or until it begins to soften.
  • (Alternately, you can cook the same way in the oven for 30 min).
  • Let cool and carefully remove inside of squash with fork or spoon.
  • It will look a lot like cooked spaghetti and come out in strands.
  • Let squash strands drain well.
  • Stir spaghetti squash into beef mixture, then spoon into an ovenproof dish and sprinkle with cheese.
  • Bake, uncovered, for 15 mins or until browned slightly.
  • Top with parmesan and season with salt and pepper to taste when serving.

1 (3 -4 lb) spaghetti squash
16 ounces Italian sausage
1/2 cup red bell pepper, chopped
1/2 cup green bell pepper, chopped
1 cup onion, chopped
4 garlic cloves, minced
2 cups spaghetti sauce
1 teaspoon oregano

Steps:

  • Cut squash in half lengthwise, remove seeds. Place squash, cut side up, in a microwave-safe dish with 1/4 cup water. Cover with vented microwave-safe plastic wrap; cook on high for 7-10 minutes, depending on size. Add more cooking, 1 minute at a time, if necessary. Let stand 5 minutes. With fork "comb" out strands. Do not discard shell. Saute sausage, bell peppers, onion, garlic in a large skillet over medium-high heat until sausage browns and vegetables are tender. Mix in spaghetti sauce and dried oregano or Italian spices. Mix squash strands with sausage mixture. Spoon filling into squash shells. Place filled squash shells on baking sheet. Sprinkle with grated cheese. Bake uncovered until heated through, about 20 minutes.
