1/4 cup chopped fresh mushrooms
1/4 cup chopped red bell pepper
1/4 cup chopped scallion
1/4 cup chopped bean sprouts
1/2 cup fat free chicken broth
6 large egg whites
1 teaspoon low sodium soy sauce
1/8 teaspoon white pepper
1/8 teaspoon garlic powder

Steps:

  • In large nonstick skillet over high heat, saute all vegetables in chicken broth for 5 minutes.
  • Stirring occasionally.
  • Pour excess broth off vegetables and set vegetables aside in skillet.
  • Meanwhile, in blender, mix egg whites, soy sauce and spices on high for 1 minute.
  • Pour egg mixture over vegetables and return to heat.
  • Cook on low heat until eggs have set to your liking.
  • Serve with whole wheat toast and jam.

5 eggs
2 tablespoons heavy whipping cream
1 teaspoon salt
½ teaspoon ground black pepper
1 cup shredded Swiss cheese
4 ounces Black Forest ham, chopped
¼ cup finely chopped green onions

Steps:

  • Spray or lightly grease a large skillet and heat over medium heat.
  • Beat eggs, heavy cream, salt, and pepper in a bowl. Pour eggs into the heated skillet, swirling the skillet to coat the bottom. Cover and let cook until eggs are firm, about 5 minutes.
  • Top with Swiss cheese, ham, and green onions. Fold omelet in half over fillings; cook for 2 minutes more.
