SUPER DELICATE CHOCOLATE BUTTERCREAM
This is a very delicate and rich chocolate buttercream. It's good on Gateau Africaine, or any cake needing buttercream frosting.

Steps:
- In the top of a double boiler, heat chocolate, stirring occasionally, until chocolate is melted and smooth. Remove from heat and allow to cool to lukewarm.
- In a large bowl, beat butter and shortening until light and fluffy. Meanwhile, in a saucepan, cook sugar and water until sugar is dissolved.
- In a separate medium bowl, beat egg yolks on high speed until thick and lemon colored. Slowly pour in the hot sugar liquid, while beating at medium speed until soft and well mixed. Combine the yolk mixture with the butter mixture and continue to beat for 5 minutes.
- Beat in the rum and vanilla. Pour in the melted chocolate and beat until well mixed.

LOW FAT CHOCOLATE BUTTERCREAM
My love for frosting (and cakes) and my current quest to get fit just weren't getting along! I developed this frosting so that I could still have a treat - and not feel (too) guilty! :)

Steps:
- Combine coffee granuals with the milk, swish/stir to dissolve, set aside. (coffee optional).
- Cream butter and cream cheese at medium speed until light and fluffy.
- Add vanilla and salt, beat well.
- Gradually add cocoa powder, sugar and milk, beating at low speed. Increase to high and beat until well blended and easy to spread. You may need to add a bit more milk if the consistency is too think.
FLUFFY CHOCOLATE BUTTERCREAM FROSTING
Light and fluffy chocolate frosting, suggested by my friend Linda. Spread over any cake and smooth out bubbles.

Steps:
- Combine powdered sugar and butter in a stand mixer fitted with the paddle attachment. Beat on medium speed until light and fluffy, about 5 minutes. Add cocoa powder, vanilla, and salt; mix for 30 seconds. Add cream 1 tablespoon at a time, mixing after each addition. Scrape down the sides of the bowl. Mix on medium speed until frosting is shiny and seems to have large bubbles, 3 to 5 minutes more.

LOW SUGAR CHOCOLATE FROSTING
This frosting does not require lots of sugar but has the same fluffy texture as the on emade with lots of sugar. Enjoy eating yummy and healthy at the same time!

Steps:
- Cream softened butter on high speed until it turns pale, or a little over 1 minute
- Add in sugar and beat until smooth. Then gradually add cocoa and vanilla. Make sure all ingredients are well blended and there are no lumps.
- Spoon in the milk, one tablespoon at a time. Beat thoroughly before adding in the next spoon. Yield is a guess.
