A one-dish casserole with all of your Sunday morning favorites: sausage, gravy, eggs, cheese, and toast.

1 (16 ounce) package breakfast sausage
1 chopped green onion
2 cups shredded Cheddar cheese
6 eggs, lightly beaten
1 cup water
½ cup milk
1 (2.64 ounce) package country gravy mix
6 slices bread, cut into 1 inch cubes
2 tablespoons melted butter
½ teaspoon paprika to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease an 11x8 inch baking dish.
  • Brown sausage in a large skillet; drain fat.
  • Combine sausage with green onion and spread evenly across the bottom of the baking dish. Top with shredded cheese. Whisk together eggs, water, milk, and gravy mix; add mixture to baking dish. Arrange bread squares evenly on top. If desired, drizzle melted butter over bread, and sprinkle with paprika.
  • Bake 40 minutes in the preheated oven, or until a knife inserted into the center comes out clean. Set aside 10 minutes before serving.

1 teaspoon oil
1 large onion, diced
1 large green pepper, diced
4 ounces ham, diced
8 ounces lean turkey sausage
1 cup low-fat baking mix
2 cups fat free egg substitute
1 cup part-skim mozzarella cheese
1 cup skim milk
1 teaspoon dry mustard
2 teaspoons ground pepper
2 teaspoons salt

Steps:

  • Sute onion and pepper in oil until beginning to soften. Add sausage, and, when the sausage is beginning to brown, add the ham. Saute for several minutes more.
  • Spray a casserole with non-stick spray, and layer 1/2 of the pepper/onion/meat mix in the bottom of the casserole. Top with 1/2 cup of the baking mix (low-fat bisquik) and 1/2 cup of cheese.
  • Cover the cheese layer with the remaining pepper/onion/meat mix, and top with the remaining baking mix and cheese.
  • In a large bowl, mix the egg substitute, milk, and spices. Pour the egg mixture over the layers in the casserole, and, with a knife, mix the casserole layers slightly to let the egg mixture penetrate all. At this point, the casserole can be covered to sit in the fridge overnight, or it can be baked immediately. (I prefer to let it sit; the flavors meld and improve).
  • To bake: Preheat oven to 350 F and bake for 30-45 minutes, until set in the middle. Let cool before serving.

This is one of the greatest breakfast's that I fix. Everyone loves it and I've had more requests for this over the years! You will too! I always blame it on my sister, she's the one who sent it to me! You'll love it too, and it's great to see the looks on the faces od those you serve this to. You can, of course, use full-fat products if you aren't concerned with the fat content. I like to use bacon sometimes, and if you have both, try it with bacon and sausage.

vegetable oil cooking spray
8 ounces reduced-fat smoked link sausage
2 tablespoons maple syrup
2 lbs frozen country-style hash browns (no oil added)
2 cups nonfat milk
egg substitute equivalent to 6 egg
1/4 cup grated parmesan cheese, more if needed
1/2 teaspoon dry mustard
1/4 teaspoon pepper
2 tablespoons finely chopped green onions (green parts only) (optional)

Steps:

  • Preheat oven to 350°F Lightly spray a 13x9x2-inch baking pan with vegetable oil spray.
  • Heat a medium skillet over medium-high heat. Saute sausage for 3 to 4 minutes, or until browned, turning occasionally. Wipe skillet with a paper towel.
  • Add maple syrup and cook for one minute, stirring to coat sausage. Arrange in a single layer in baking pan, then top with hash browns.
  • In a medium bowl, whisk together remaining ingredients except green onions. Pour over hash browns.
  • Bake for one hour, or until center is set. Sprinkle with green onions and let cool for at least 10 minutes before cutting into squares.
